Combine all ingredients, except tomato paste, in slow cooker. Pour the tomato paste on top and cover. Cooking time: 3-4 hours on high or 8-10 hours on low. You can serve it on brown rice or pasta rice.

Try Cooking a Greek Recipe: Moussaka With Tzatziki Side Dish

As man who enjoys conference my friends and house together for a good meal, I understand the food culture upon which Greece is built. The essence of Greek food culture is that the food is secondary to the atmosphere, conversation, and friendships industrialized while sharing a meal. Sharing and eating out are treasured traditions.

The basic ingredients of Greek food are few, and basic at that: olive oil, yoghurt, honey, cheese, fruits and vegetables, lamb and fish. Any way the manner is which they are prepared is what gives Greek food it's variety and character.

Vegetarian Dishes

Unique to Greece and it's culture of sharing food is the pleasure of being invited into the kitchen of your host (or restaurant) to view the offerings and make a selection.

The Greek diet also happens to one of the healthiest in the world, so I believe there's a lot we could learn. Let's try a primary Greek recipe today and continue our adventures in global food culture. We're going to make a Moussaka, which is a creamy baked dish. I've also included a recipe for Tzatziki, which is a primary yoghurt dip, good for a started or side dish. You may also wish to serve the main dish with a salad.

Main dish: Moussaka

- 2 eggplants
- 1lb of medium onions
- 9 oz of hamburger mince
- 2 medium tomatoes
- 2 eggs
- 100ml of white wine
- 2 tbsp of bechamel
- 3.5 oz of grated cheese
- 1 tbsp of butter
- 2 tbsp breadcrumbs
- Parsley
- Salt
- Pepper
- Olive oil

Preparation:

Cut the eggplants into thick slices and sprinkle with salt, then let the bitter juice drain. Wash, strain, and dry them off.

Mince the onion, then brown it in a frying pan along with the mince hamburger meat. Peel, mince and seed the tomatoes (or get from a can instead). Splash with wine, and add the tomatoes and parsley to the pan. Season it with salt and pepper and simmer for around 45 minutes over a low flame.

Lightly whisk some egg whites. Add this to the pan along with the breadcrumbs (once the 45 minutes simmering is up).

In a detach pan, fry the eggplants, drain them, then place half of them in a layer in an oiled baking dish. Pour the mince, tomato, and onion mix on top of this, then add other layer of eggplant. Add 2 yolks and 1 egg to the bechamel, and the grated cheese, as the final layer in the baking dish.

Gratin this in the oven until it browns.

Side dish: Tzatziki

Tzatziki is a basic but yummy cucumber dip.

Ingredients:

- 1 pack of greek yoghurt
- 2 cucumbers
- 1 red onion
- 1/2 lemon
- 1 tablespoon of olive oil
- Ground white pepper
- Salt
- 4 mint leaves

Preparation:

Peel the cucumbers, then grate the into a bowl. Add the yoghurt, juice of half a lemon, and oil.

Season it to taste and add a pinch of pepper. Mix the paste until you have an even texture.

Leave in the fridge for 2 hours at least, while you mince the onion. Serve garnished with onion and mint.

A Quick Vegan Lunch

One of the concerns population most often bring up, when I tell them about how I eat, is time. This seems to associate more specifically with lunch. So today, I am contribution two delicious, beautiful, sustaining meals that make an extraordinary lunch, and don't take very much time. I'm not going to lie; eating this well takes forethought and a petite planning, but it's nothing you can't handle.

When you start eating a diet based primarily on vegetables and whole grains, chances are you will always have leftovers of these two ingredients in your fridge. If you don't have passage to a Trader Joe's (my condolences), or you already ate your delicious lentils, you can open a can of beans, garbanzo, kidney, black beans, etc. Just rinse them and toss them on top; you can even heat them if you like. The charm of this meal is that it works with whatever you already have. Then, I like a dollop of pesto. I make pesto approximately weekly, so there is always something in the freezer. Pesto is an additional one great source of greens, and you can make it with approximately anything. I have experimented with spinach, arugula, parsley, basil, and cilantro. Spice Junction: Spicing Up The Food Scene

Hailing from a country steeped with history, diverse cultures and festivals where food plays an important role, it is no wonder that each state has developed its own specialty. In Singapore itself, the bracket term of North Indian or South Indian cuisine, while still popular, has now branched out to include specific cuisines reflecting the varied demographics of India. Manager Ricky Vickram Darma is being modest when he described Spice Junction as "casual" for its freshly-painted cream walls, polished deep mahogany furniture and carefully-set tables place it on par with some of Singapore's fine-dining restaurants. Moreover, several Keralite (natives of Kerala) top celebrities are known to dine at this "casual" restaurant from time to time.

Ricky explained that in Keralite cuisine, coconut is an often-used ingredient whereas Goan cuisine predominantly comprises seafood dishes. The experience is also notably different. Well, as the great Albert Camus once philosophized, " You cannot create experience. You must undergo it."
Start your Keralite dining experience with the Keralite briyani – especially Malabar Chicken Biriyani ($9.90) and the Beef Biriyani ($12.90) – and you will notice the exclusivity in the taste of Kerala right away. Yes, Spice Junction has just introduced beef dishes in its menu – a risky move for an Indian restaurant where the diners are largely Hindus. Interestingly, the decision is warmly-received. The Biriyanis sports lighter colour as well as "fluffier" consistency – a result of no added colouring and no excess oil. " Healthy" does not equate to bland, though. The Beef Biriyani is lightly-spiced with jeeralsa (a spice from Kerala) and flavoured with the curried taste of the tender beef that is served with it. A must-try is the Gobi Manchurian ($7.90), a cauliflower dish that was originally a Chinese dish but has since been spiced up and served Indian-style in sweet, sour and spicy gravy. Yet another noteworthy vegetable dish is the Avial ($7.90), a favourite and popular dish amongst the Keralites that is made of carrots and potatoes served in semi-thick, semi-dry, highly-seasoned gravy. For a more filling meal, pair these sides with the Kerala Parota ($3.90 for two pieces), the fluffier, lighter and less oilier version of the local prata kosong.
For seafood fans, Spice Junction has a treat for you: Meen Pollichathu ($11.90), identical to the all-time favourite barbequed stingray. The Keralite rendition is red snapper that is well-marinated with spices and sambal, wrapped in banana leaves and cooked over an iron girdle. Another delicacy is the Prawn Balchao ($12.90 for medium) which has the initial taste of tomato puree that gradually intensifies to a sharp, spicy piquancy.

Just like the food, the service too deserves 5-stars for its professionalism. During its busy lunchtime, the waiters are prompt and efficient. They continue to be so even during quieter periods.

1 jar of Grapeleaves in brine

Filling:
2 cup basmati rice cooked
1/2 cup currants
1/2 cup of pine nuts ground
1/2 cup quorn grounds thawed
2 tbsp. Dried mint (or 1/4 cup fresh mint chopped fine)
1 tbsp. Dried parsely (or 1/4 cup fresh parsely chopped fine)
1 tsp dried oregano (or 1/8 cup fresh oregano chopped fine)
1 tsp. Sea salt
2 tsp pepper
1 small can tomato paste

Juice of 2 lemons

Remove the grape leaves from the jar, rinse and unfold determined and rinse again. Lay paper towels and pat dry. gently take off any stems that are still on the leaves.

Bring contents to a boil then cut and simmer for about 1/2 hour till tender. Drain water by keeping on to stone to keep plate in place and gently pour out cooking water. Leave plate on till approximately cool.

Remove plate and serve with plain yogurt, yummy.

These can be freezing in 1-2 serving sizes for later. I like to do it this way then microwave them for a microscopic and a half for a quickie meal.
