Oh, Crap! A Vegetarian is Coming For the Holiday Dinner

This time of year always makes me uneasy. You know that feeling in your stomach that is a mix of excitement and nervousness? The holiday season is filled with family laughing, children playing, rejoicing, offering thanks, singing, opening gifts, tasty morsels of vegetarian delicacies, seeing childhood friends, scents of peppermint and spice and... meat! UGH.

Each year, I so look forward to getting together with family and spending time with those that I love; yet, at the same time, I anxiously dread the celebratory dinner meal. Being vegetarian during this time is very difficult. And, it isn't just me; my lifestyle seems to make others a bit uneasy too. The big bird or round roast on the table makes me so uncomfortable along with the distinct odor it sends soaring into the air.

Then there is the questioning, and the looks that make you feel like such an outsider. "Why are you vegetarian?" "You won't even eat chicken?" "Do you know what you are missing?" Now, no one tries to make me feel bad, but it is just natural to feel uncomfortable when it is so clear that you are the odd (wo)man out. But the worst part is that you know that the host is nervous b/c he or she doesn't' know what to serve to accommodate your vegetarian needs. I never want to make anyone else feel badly because of my nutritional decisions. But, I can usually see it in someone's face during the holiday dinner...."oh, crap. a vegetarian is coming for dinner."

What is the solution to this vegetarian holiday dilemma? Well, I am not sure. But, for the first time, this year, I have declined on the family invitation to dinner and am going to stay home to make a smorgasbord of vegetarian dishes including a vegetable wellington, cranberry/apple stuffing, green beans, butternut squash casserole, cranberry sauce and lots of other dishes.

Then, I will go to the family celebration for dessert, where I will bring a vegan delicacy that will knock the socks off of everyone! This way, we can have all the fun of laughing together, opening gifts and being grateful for our life's' blessings without having to be uncomfortable because of culinary preferences. Now, I don't know if avoidance is the right solution, but I certainly am thankful this year that I can give it a try!

Vegetarian Starter Recipes For Dinner Parties

Baked Eggs with Tarragon

What about making tarragon baked eggs? Tarragon is often used in chicken recipes but its aniseed-like flavour is also good with egg dishes. You can serve this with crusty bread or garlic bread.

Grease four ramekins with melted butter and stir together a tablespoon of finely chopped tarragon, four tablespoons of cream and a little salt and black pepper. Break an egg into each ramekin and spoon the tarragon mixture over the top. Bake for seven minutes (or until the eggs are set) at 180 degrees C.

This is a great starter recipe idea for a dinner party. Cut eight leeks into five centimetre lengths and put them in a pan. Add 120ml olive oil, 300ml water, a teaspoon of white sugar and a tablespoon of tomato puree.

Season with salt and black pepper and cook covered for fifteen minutes or until the leeks are soft. Add some lemon juice and serve the leeks hot with some chopped fresh parsley and a handful of small black olives.

I'm Having A Dinner Party And One Of My Guests Is Vegetarian - What Should I Cook?

You are inviting guests to an upcoming dinner party and you do the courteous thing by asking the people if there's any food they don't like or can't tolerate. One person gets back to you and says they're completely vegetarian. Lucky you asked don't you think?

Many meat-eaters I have met find vegetarian food bland and boring but this is far from the truth. You can create a wonderful menu and the meat-eaters won't even realize that they have eaten entirely vegetarian food.

You do have a couple of choices though. Firstly, if you're really keen on a particular dish you could create a vegetarian option. For example, if you're cooking a meat lasagna, you could also prepare a smaller vegetarian lasagna dish and your guests won't even realize they are eating different dishes.

In this case, it's a good idea to reassure your vegetarian guest that you are doing this so they know you have catered to their needs so they can completely relax and enjoy their meal without trepidation.

An important point to remember when having a vegetarian guest to dinner is that you should not cook the vegetarian food in the same oil that you have just cooked a meat dish in first - do the reverse.

The other option of course is to cook an entirely vegetarian meal and my suggestion is to combine a theme with this idea. In this case I will use an Italian theme as an example.

As your guest arrive you can serve some hors devours - like crackers and eggplant dip or slices of tomato with mozzarella and basil layered on top.

For a starter you could serve an eggplant parmigiana antipasto dish - followed by a vegetarian lasagna or a pasta with a pesto or Napolitana sauce. The great thing about eggplants (the French name is aubergine) is that they are known to be a satisfying substitute for meat with their lovely chunky texture. For dessert you could serve some Tiramusu which is the most recognized Italian cake or something as simple as pre bought gelato

Vegan Christmas Dinner - Old World Cabbage

1 bag Morningstar veggie crumbles or 1 1 / 2 lbs. Mashed potatoes, tofu and 2 tbsp. Soy sauce
1 teaspoon of tea. Salt
1 cup cooked rice
Set aside.

Boil a large pot with water and drop in 3-4 cabbage leaves at a time. KitchenLeaves 1-2 minutes to soak. Drain and cut the leaves in the center core. Place 2-3 tablespoons of filling on each leaf, fold sides in and roll as clean as possible. Do not worry if your role or torn a bit 'chaotic, provided that the employment of reasonably contained. Carefully drop each role in hot sauce. Do not mix. Simmer rolls 2-3 hours, sometimes brings down with the flat side of a spatula.
