The other reason is a force of habit. I grew up with a large family of nine including my parents and six siblings. Everything is prepared in bulk. Therefore, I find it worthwhile and fun to prepare large quantities for a feast with friends or a large family gathering.

The dry version of Vietnamese noodle dishes are stir-fry. The noodles are often stir-fried with vegetables and/or your favorite meat. They can be cooked in a crunchy or soft form. Either way will taste great depending on your mood at eating time. Thinking of it makes my mouth water, yummy!

Vegetarian Diets and Recipes

Vegetarianism is not a modern phenomenon. Indeed, as a lifestyle vegetarianism began with the Greek aesthetes and was subsequently adopted by many Romans who thought a frugal lifestyle to be beneficial to themselves and to the state.

However, through much of human history people have relied on a mainly vegetarian diet to survive. The great civilizations of central and south America also had a predominantly vegetarian diet. This actually isn't as easy as it sounds, as the human body needs to source a number of proteins from the diet. Now, one way to ensure that these proteins are gained in adequate quantities is to combine grains and beans.

Vegetarian Dishes

This is why almost all cultures have their mix of the 'grain and bean' staple either as part of their current cuisines or as parts of their historical cuisines. In Africa, historically this was a millet pap or porridge served with a black eyed pea stew. Today it tends to be a maize-based porridge with the same beans. In Europe it was a grain-based gruel (oats, barley or wheat) with the broad (fava) beans or peas stirred into it. Asian diets had rice and dishes in which beans, if not a direct part of the meal were a condiment (soy sauce, black bean paste, yellow bean paste).

In Central and South America it was a mix of maize and beans. The interesting thing about this diet was the inclusion of chillies. Chillies both act to spice and flavour the food. However, the fresh chilli fruit are also a good source of vitamin C which is critical in a vegetarian diet as it aids in the uptake of non-haeme (ie non-blood) iron into the body. This may well explain why chillies spread worldwide so quickly and why they remain very important in countries and regions where meat remains, or historically was, a very small portion of the diet (Asia, the Caribbean, Africa and India).

However, you don't have to have a subsistence diet to be a vegetarian, far from it. But the rules of the subsistence diet remains in terms of eating a healthy vegetarian diet. Mix grains and beans or mushrooms to ensure you get all the necessary dietary proteins. Add nuts for proteins and essential oils and ensure you have plenty of vitamin C in the diet. Beyond these basic rules what you eat is very much limited only by your own imagination and the number of ingredients you have to hand.

Here, however, are some classic vegetarian dishes to get your started.

Chanterelle Risotto

Ingredients:
1 small red onion, finely chopped
1 garlic clove, finely chopped
1 tbsp finely-chopped basil leaves
250g chanterelle mushrooms
90g butter
60g freshly-grated Parmesan cheese
180g Arborio (or other risotto) rice
150ml white wine
450ml vegetable stock

Method:
Add half the butter to a frying pan and use this to gently fry the onion and garlic until soft and golden. Now add the basil and chanterelles and cook for a few minutes before adding the rice. Fry to coat the rice grains in the butter and continue cooking for 4 minutes before adding the wine and half the stock.

Bring to a boil, reduce to a simmer then cover and allow to continue cooking. Check every now and then, topping-up the liquid when the risotto becomes too dry. Continue cooking until the rice is creamy and just al dente (about 30 minutes). Add the remainder of the butter and the parmesan cheese at this point.

Cook for a few more minutes, stirring all the while then serve with crusty ciabatta and a green salad.

Chickpea and Lentil Stew

Ingredients:
4 tbsp olive oil
2 onions, chopped
4 garlic cloves, finely chopped
60g coriander (cilantro) leaves, finely chopped
140g lentils, soaked over night and drained
450g cooked chickpeas
4 tomatoes, chopped
1 tsp ground cumin
1/2 tsp dried thyme, chopped
1/8 tsp cayenne pepper
1/4 tsp harissa
750ml water
60g green olives, sliced
2 tbsp lemon juice
salt and black pepper, to taste

Method:
Heat the oil in a pan and use to fry the onions for 5 minutes. Add the garlic and coriander and fry for 3 more minutes. Now stir-in all the remaining ingredients (except the olives and lemon juice). Bring the mixture to a boil then reduce to a simmer, cover and cook for about 35 minutes, or until the lentils are tender (add more water, as necessary).

Season to taste with salt and black pepper then add the olives and lemon juice. Simmer for 5 minutes more then serve on a bed of couscous.

So You Think You Want to Become a Vegetarian

So, you think you want to become a vegetarian. Why? That is probably the first question you should ask yourself. The reason for that question, of course, is that in order to make a significant change in your life - and it will be significant - you need to have a reason to commit. Otherwise you may find yourself frustrated and unwilling to continue toward achieving your goal.

There are any number of articles, books and other publications that will provide you with a list of methods to follow to achieve a transition to a vegetarian lifestyle. I use the term lifestylerather than diet because, as I said, it is a significant change. It is a lifestyle that you will follow because you will be faced with challenges at every turn. Family and friends may scoff ortry to talk you out of your decision. Restaurants that serve a variety of vegetarian dishes are still difficult to find in many parts of the country. And, if you like meat to begin with, youwill be tempted by the aroma of that steak on your neighbor's grill or the scent that wafts through your car window as you drive past the fast food joint in town, or simply going out for dinner with friends.

Vegetarian Dishes

So, think about it. Do you want to become a vegetarian for health reasons? Is it because you are concerned about the environment and the impact that raising livestock has on it? Are you finding a sense of compassion that has come to make you realize that the suffering of animals matters? Whatever your reason(s), learn as much as you can before or as you begin. Google it - use keywords like "animal welfare", "animal rights", "vegetarian nutrition", "plant-based diet" and so on. As I said, there is a wealth of information out there so study a little and you will makeyour commitment stronger. Also consider talking with your physician and/or a registered dietician, particularly if you may have health issues which may be impacted by your decision to become vegetarian. Get several opinions. Not all physicians are attuned to the benefits of a vegetarian lifestyle either. So if yours isn't, perhaps you can find one who is and get a second opinion.

All of that said, here are 6 simple ways you can begin to make the transition.

1. Start gradually

Give up red meat first. It is probably the worst from the standpoint of what it does to your body. Even then, phase it out gradually. If you eat red meat once a week now, try to cut back to every other week for a couple of months. Then, after you have pretty much cut the red out of your diet altogether you can begin to work on other meats.

2. Experiment

Get yourself a good, simple vegetarian cookbook. You don't need to worry about becoming a gourmet vegetarian cook just yet! Some of the best vegetarian cookbooks are those that offer simple recipes that have a limited number of ingredients or a short prep time. You know what I mean. The book states "50 vegetarian dishes that you can make in 30 minutes or less" or "Great vegetarian recipes with only five ingredients". Get the idea? Try a few recipes so that you have some variation as you begin the transition. Bookmark the ones you like best. Mix up your weekly menu, again for variety. Also, check out the abundance of good websites which have wonderful vegetarian and vegan recipes. Again, Google the keywords and you'll find some gems!

3. Slowly work in things of which you are unsure

You don't want to get turned off right away! I can remember thinking I could never eat tofu. I didn't like the looks of it or the texture, both important nuances for enjoying what you eat. I found that by finding dishes which could utilize tofu as an optional or added ingredient and adding a little at a time each time I had that dish, I gradually became accustomed to tofu. I found that it does take on the flavor of what it is cooked with a lot of the time so dishes with a lot of onion or garlic helped! Sometimes crumbling it or cutting smaller "chunks" made it more palatable, rather than having a large "slab" with which to deal. Marinating it overnight or for at least several hours also works well.

4. Continue to educate yourself

Read whatever you can find about plant-based diets and vegetarian nutrition. Find out how to insure that you are planning meals and eating enough variety to provide the nutrients your body needs, particularly protein and vitamin B12. Visit a natural foods store and ask questions. They will be glad to help. Seek out other vegetarians or vegans for support, encouragement and ideas. Or, join a vegetarian "club" or organization. If you don't have any in your area, why not start one?

5. Use substitutes

What do I mean, use substitutes? Well, since most of the food you will be eating is "lighter" than a meat based meal, you may not feel as full as you were accustomed to being after you finish a meal. In that respect you may be tempted to snack more. If you are, try to substitute the snacks you used to eat with fruit, berries, nuts and so on. These will be better for you and help to contribute to your daily intake of protein. Drink lots of water. It will not only help you stay properly hydrated but also fill your tummy a bit, taking away some of the cravings. If you have a sweet tooth try to avoid sugar and foods with a lot of sugar in them. If you feel the urge to eat something that you normally put sugar on (I eat a lot of cereal snacks) try using agave nectar instead.

6. Enjoy yourself

Make it fun! Experimenting with new recipes is always fun. When you think about the good you are doing for yourself, for the environment and for the animals, it will be even more fun. Vary your meal plans so you have a wide variety and you won't tire of it or get discouraged. Set goals like a month of total vegetarianism equals a reward of a new cookbook! If the whole friends and family thing becomes too much, turn the tables on them and challenge them to join you even if it's for just one meal! Keep a journal - it may become your best seller one day! As I said before, there are many ways to make the transition to a vegetarian lifestyle and just as many books, magazines, articles, blogs and websites to tell you "their way". The bottom line is this - do it because you want to and you know the reasons it's important to you. Find a website, a friend or a book that you trust and let that trust be your guide. Monitor your health and wellness and be sure to get proper nutrition and exercise. You will succeed! Be proud of that in advance! Bon appetite!

VEGETARIAN LASAGNA

INGREDIENTS:

1 Package lasagna noodles

1 Jar favorite meatless pasta sauce

1 Small package lite mozzarella cheese
1 Fresh medium eggplant

3 Tomatoes

Parsley Flakes

1 Package frozen spinach

Salt and pepper

1 Small package of cottage cheese

METHOD:

Thinly slice eggplant into rounds and lay on a paper towel, salt lightly. Lay another paper towel on top and layer with eggplant slices and salt lightly. Continue this layering method until all eggplant is used.

Place a heavy pan on a cookie sheet on top of stack and leave to sit for half an hour to two hours.
Defrost spinach and drain as much water out as possible. (Using a colander)

Cook lasagna noodles in oven at 180˚C until soft and tender

Mix cottage cheese and defrosted spinach together in a large bowl and add salt and pepper

Using a casserole pan, spread a layer of sauce and then place a tender lasagna noodle on top

Place a layer of spinach/cottage cheese mix, sauce, eggplant slices and then a noodle. Repeat this process until pan is full then place in the oven.

Place sauce and thinly sliced tomatoes on the last layer and then sprinkle mozzarella cheese heavily on top.

Bake in the oven for 45-60 minutes at 350 degrees. (Eggplant should be soft and a brown color)

3 Easy Microwave Vegetable Side Dishes For Busy Moms

As a busy mother and wife, I don't always have an hour to spend making our nightly dinners. At times, I will do my main dish and then do a microwave vegetable side dish to compliment it.

The following 3 recipes are made from common every day ingredients and take less than 15 minutes from prep time to finish.

Vegetarian Dishes

Buttered Peas

20 oz. bag frozen green peas, thawed

1 can cream of celery soup

1/2 cup dry bread crumbs

4 tablespoons butter, melted

salt and pepper to taste

In a microwave-safe casserole dish, combine the thawed green peas, can of celery soup, melted butter, salt and pepper to taste. Stir in the bread crumbs and microwave heat on high setting for 8 minutes or until ingredients are heated through.

Sweet Buttered Carrots

1 lb. carrots

1/4 cup tap water

1 tablespoon butter, softened

1 tablespoon brown sugar

1/2 teaspoon dried dill

Wash and peel your carrots; slice them down to 1/4" thick rounds. Place carrots in a 1 quart microwave-safe dish with 1/4 cup of water. Microwave on high setting for 7 minutes. Remove from microwave and stir in the butter, brown sugar and dill. Place back into the microwave and heat for an additional 3 minutes on high.

Cream Style Buttered Corn

2 standard-sized cans cream style corn

1 teaspoon granulated sugar

1 teaspoon salt

1 tablespoon cornstarch

3/4 cup milk

2 eggs, well beaten

6 pats of butter, softened

In a microwave-safe baking dish, mix together the cream corn, sugar, salt, cornstarch, milk and beaten eggs. Dot the pats of butter on top and place in the microwave on high power for 4 1/2 minutes, stirring halfway through the cooking time.

Garam masala- 1 tablespoon
Chopped capsicum-1

Process-

Ghee is heated in a saucepan and the onions are fried in it till it does not turn golden. The saucepan is kept over low heat. The whole spices are added and stirred well. Thereafter, ingredients from green peas to ginger are added. The mixture is stirred for about 5 to 7 minutes.

Then yogurt is added along with water and salt. The sauce pan is kept over low heat for about 16 minutes. The contents of the saucepan are transferred to a serving dish and to it the toppings are added in the order shown. The onion that was fried earlier is added to this mixture. The serving dish is heated in an oven for 5 minutes prior to serving.

Many people are mystified by traditional Indian cooking and cuisines and a little somewhat confused with the varieties of curries and spices used . Some may even think the traditional Indian cooking is mostly about vegetarian dishes and curries.

India has one of the finest and richest culinary histories. Contrary to popular belief, Indian cuisines are not complex or too confusing to cook. It can also be as elaborate as you want it to be. If you understand the diversity of the country, which is divided into four regions, north, south, east and west, you will appreciate the varieties of dishes, exotic spices, cooking methods, etc.

Vegetarian Dishes

Two distinctions in many Indian recipes is the absence of beef and pork due to religious factors, as cows are sacred to the Hindus and pork is prohibited in the Muslim diet.

Indian cuisines are however generally characterized by exact combination of spices and flavours and the cooking method generally is to saute and simmer the dishes or curries over low heat. Tandoori cooking has popularised the oven-clay oven method which has produced tandoori chicken or naan bread.

Regardless of region, spices are key ingredients in Indian cooking. The Indians are also mindful of the healing properties of spices in their cooking. Spices can be grouped into five basic categories: sweet, pungent, tangy, hot, and amalgamating. The way these are used and the amounts used in cooking are governed by these characteristics. Examples of the different types of spices are:

Sweet: Cinnamon, allspice, nutmeg, vanilla

Pungent: Cloves, star anise, cardamom

Tangy: Ginger, tamarind, sumach, kokam

Hot: pepper, chilli, mustard, horseradish

Most of the herbs such as thyme, sage, marjoram, oregano, bay leaves, mint and rosemary are considered as savoury. The herbs do have varying degrees of flavour intensity, however not as dramatic as with spices.

Northern Indian cooking is influenced by the weather which can range from extreme heat to freezing cold. The dishes are traditionally rich and heavy with cream and ghee, using breads, meats and tend to be less spicy. Yoghurt is widely used instead of coconut milk which is widely used in the south. They also tend to be drier as soupy sauces do not mix well as dippings for breads. Naan and chapati breads come from the north.

In the south where the weather is mostly hot, rice is widely grown and this makes the diet of south Indians rice-based that goes well with soupy curries. Spices are used heavily and the southern cusines tend to be spicier than the north. The roti-prata or dosai are typical southern breads.

Indian desserts are basically different forms of rice puddings, milk puddings, vegetables and fruits dipped in sweet syrup. Indian sweets or fudges are usually decorated or garnished with raisins, almonds, pistachios. Mostly made by boiling down milk to remove the moisture and then adding butter, flavour and sugar. The Indian sweets usually have high sugar content so use sugar in moderation when trying out Indian dessert recipes.

Oregano: Joy of the Mountain

The term "oregano" refers more to its pizza-like flavor than to a specific plant. Even expert botanists disagree about which herbs may be called oregano. The oregano bought commercially, whether at a nursery or a grocery store, is most likely wild marjoram. This herb usually has pink flowers - the flowers of true Greek or Turkish oregano are usually white - and marjoram's aroma is mild and musky compared with Greek oregano's spicy, balsamic smell.

To complicate the issue, all marjorams are oreganos - the genus name for both is origanum - but all oreganos are not marjorams. In addition there are Italian oregano, which is sweet marjoram, and pot marjoram, which is Cretan oregano. Mexican oregano is not oregano at all, it is a verbena, but it smells like oregano because of the presence of one essential oil - carvacrol - that gives oregano its pungent, almost tar-like fragrance. All oreganos are members of the mint family.
If you want to ensure you're buying true Greek or Turkish oregano, buy the plant not the seed and let your nose be your guide.
In your garden, true oregano is a perennial, hardy to zone 5. It likes well-drained, slightly alkaline soil and full sun. Nutritionally, oregano contains vitamin A (beta-carotene), niacin, phosphorus, potassium, iron, calcium and traces of zinc.
The word "oregano" comes from the Greek words Oros, meaning mountain, and ganos, meaning joy. The Greeks used to crown newly weds with the herb, but they also used to adorn graves with it.
Pliny, the Roman administrator and encyclopedic writer who perished in the eruption of Vesuvius, advocated oregano for scorpion and spider bites. Herbalists champion its antibacterial, antiviral and perspiration provoking qualities to treat headaches and to clear lungs and bronchial passages clogged by bacterial or viral infection. It is used in bath preparations to relieve stiff and aching joints. Oregano has also been traditionally recommended to initiate menstruation and to relieve its symptoms.
In the realm of magic, oregano, burnt as incense or drunk as a tea, is supposed to help one forego and forget a former lover.
As with all essential oils, oregano oil should not be taken internally and should not be applied topically unless diluted with a carrier oil. Even then its direct application may cause skin irritation in sensitive people.

Oregano is famous for enhancing the flavor of tomato-based dishes such as pizza and pasta sauces. It is also superb with chicken. Here are two chicken recipes featuring the herb:

Mediterranean Chicken

· 2 skinless, boneless chicken breasts

· 2 cloves of garlic

· 1 tsp. of fresh oregano, or ½ tsp. of dried

· 1½ tsp. balsamic vinegar

· 1½ tsp. extra virgin olive oil

· ¼ cup pitted prunes

· 3 or 4 large, chopped, marinated, pitted green olives (optional)

· 2 tsp. capers

· 1bay leaf

· ½ cup white wine

· ½ cup fresh cilantro chopped

· Salt and pepper to taste.

Combine all ingredients in a covered bowl and marinate overnight. Preheat the oven to 350F. Arrange the chicken in a single layer in a shallow baking pan and cover with the marinade. Bake until the chicken is well cooked - about one hour, basting continually. Serve with rice, your choice of vegetable and some fresh cilantro as a garnish. Increase ingredients proportionately for a dinner of more than two.

Greek Chicken Soup

· 4 cups of chicken or vegetable stock

· 2 boneless, skinless chicken breasts

· ½ cup of cooked rice (I prefer organic long grain brown rice)

· 2 eggs

· Juice of 1 lemon

· ¼ tsp. dried oregano or half tsp. of fresh

· Sprinkling of fresh chopped parsley

Poach the chicken breasts in the stock for 15 minutes until just cooked through. Remove the chicken, shred it and place it back into the stock along with the cooked rice and the oregano. Bring the stock back to simmer. Beat the eggs with the lemon juice and then slowly whisk the egg mixture into the stock until the soup is nicely thickened, stirring continuously. Bring back to simmer before serving. Season with salt and pepper to taste and garnish with the parsley. This makes a hearty meal-sized serving for two or a first course for four.
Oregano also can notably enhance the flavor of vegetarian dishes. The following polenta recipe makes a nutritious and easy vegetarian meal, but it can also serve as an accompaniment to a meat or fish dish:

Polenta with Oregano

· 3 cups of spring or bottled water

· 1 cup of milk (or milk substitute such as nut or coconut milk)

· 1 Tbsp. of butter

· 1 tsp. of sea salt

· Pinch of cayenne pepper

· 1 clove of garlic, minced

· 1 cup of polenta

· ½ red pepper, very finely diced

· ½ orange pepper, very finely diced

· ¼ cup of finely chopped broccoli, lightly steamed

· ½ cup of freshly grated Romano or Parmesan cheese

· 1½ Tbsp. of fresh oregano, finely chopped

Bring the milk, water, butter, salt, cayenne & garlic to a boil in a pot and slowly add the polenta in a slow stream, stirring continually. Reduce the heat to a simmer and continue to stir until the moisture is absorbed and the mixture has a creamy consistency, about eight to 10 minutes. Add the vegetables and cheese and continue to cook and stir for another couple of minutes. Then thoroughly blend the oregano into the mix. When it is evenly distributed, pour the polenta into a glass pie plate and allow to cool. It may be served cool or re-heated. Cut into wedges prior to serving.
