Christmas Side Dishes - A New contemporary classic

If you are looking for a method to make for your next holiday meal I have some delicious Christmas side dishes that will blow you away! I've decided to reveal my underground Superstar Broccoli-Cheese Casserole to the rest of the world.

It doesn't matter if you are having the traditional lamb meal or even a tasty country ham, this side dish will in effect be a real crowd favorite! Of procedure it doesn't hurt that your kids will love it as well. We all know how hard it is to get your children to eat their veggies. So without additional ado, let's start right away with your ingredient list. These amounts should feed 6-8 people depending on if they are normal or in effect big eaters.

Vegetarian Dishes

You'll want to get:

* 1 (10.75 ounce) can condensed cream of mushroom soup

* 1 cup mayonnaise

* 1 egg, beaten

* 1/4 cup finely chopped onion

* 3 (10 ounce) packages icy chopped broccoli

* 8 ounces shredded sharp Cheddar cheese

* salt to taste

* ground black pepper to taste

* 2 pinches paprika

That shouldn't break the bank and you can use fresh broccoli instead of the icy as well. And while I wouldn't, you could even use low fat mayo, as well, I suppose.

And now for the preparation:

1. Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.

2. In a medium bowl, whisk together condensed cream of mushroom soup, mayonnaise, egg and onion.

3. Place icy broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this method thoroughly.) Break up the icy broccoli. Using a rubber spatula, scrape soup-mayonnaise combination on top of broccoli, and mix well. Sprinkle on cheese and mix well. Spread combination into prepared baking dish, and smooth top of casserole. Season to taste with salt, pepper and paprika.

4. Bake for 45 minutes to 1 hour in the preheated oven.

This one will in effect wow every person at the table. You may want to print out this method as I warrant every person will want to try it for themselves. Next up, more Christmas side dishes so stay tuned.

Potatoes Tetrazzini - A Vegetarian Version of the Classic Tetrazzini Dishes

This recipe is for a classic Tetrazzini dish, but with the poultry or fish omitted.

This classic dish, which most think actually originated in the United States, was named for Luisa Tetrazzini, a world famous coloratura soprano, who from all accounts not only loved to sing but also loved to eat. This version is similar to my chicken Tetrazzini recipe published elsewhere. You could substitute a can of cream of mushroom soup for the white sauce (olive oil, flour, and milk) shown here. Since most of the commercial cream soups contain lots of additives, which you don't really need, I usually go the "scratch" way and make white sauce. Most of the flavoring for this dish come from the onion and lemon juices and the Parmesan cheese. This recipe has been "grandson tested" and they liked it.

Vegetarian Dishes

Ingredients

5 Medium Potatoes
1 tablespoon olive oil
1 tablespoon flour
1 cup milk
1 onion, juiced, then pulp chopped & added
1 teaspoon lemon juice
1 cup bread crumbs
1/4 cup Parmesan cheese, grated
1 tablespoon butter, melted
salt and pepper to taste

Instructions:

1 - Bake the potatoes in microwave (or conventional oven) then cool in running water and remove skins, then slice and set aside.
2 - In a large skillet heat olive oil, then add flour with constant stirring until smooth.
3 - Slowly add milk with constant stirring until smooth
4 - Add onion juice, onion pulp, then lemon juice, cheese and seasonings.
5 - Slice the previouly baked potatoes and place in even layer in a greased glass baking dish.
5 - Pour the white sauce with seasonings over the potatoes,
6 - Mix butter with bread crumbs and sprinkle on top the dish
7 - Bake for 15 minutes at 425 degrees F. in a preheated oven.

Comment - This is real comfort food!

Classic Vegetarian Dinner Recipes

If you're a new vegetarian or just want to get back to basics, you should learn how to cook several classic vegetarian dinner recipes. These recipes are classics for a reason, they taste great, they're easy to make, and they're full of the nutrition you need to be a healthy vegetarian.

One great dish when you're looking for classic vegetarian dinner recipes is a delicious lentil soup. Take some dry, uncooked lentils, and rinse and clean thoroughly so there is no dirt on them. Then, place the clean lentils in a stockpot or Dutch oven along with some water or vegetable broth. Bring to a boil, lower the heat, partially cover the pot, and cook, for about half an hour. Then, add some salt and cook until the lentils are tender. While you're waiting for the lentils to cook, in a second pan, heat some olive oil and sauté some chopped onions. Then, add some minced garlic cloves and soy sauce, and sauté a bit longer. After the lentils are cooked, stir in the onions, along with some cumin and paprika, and cook a little bit longer to allow the flavors to combine. Lentil soup can be pureed with an immersion blender or served as whole lentils in the broth.

Vegetarian Dishes

Another option when you are searching for classic vegetarian dinner recipes is to make a simple Portobello mushroom sandwich. Remove the stem from the mushroom, and cut the mushroom in half. Brush the mushroom with some olive oil and sprinkle generously with salt and pepper. Grill the mushrooms for a few minutes on each side, or until brown. Place the pieces of mushroom between two pieces of bread that you have brushed with some olive oil and minced garlic and toasted, and top with your choice of wonderful fillings, including lettuce, tomatoes, onions, and pickles. Also, if you want, you can also melt some cheese over the mushroom while it's still on the grill before transferring it to bread.

A third option for classic vegetarian dinner recipes is to make some wonderful stuffed shells. While this isn't the healthiest recipe, it's great as a special treat. Boil large pasta shells in water until done. While you're waiting for the shells to cook, mix together parmesan cheese, mozzarella cheese, and ricotta cheese, along with some parsley and nutmeg. Take a baking dish and spoon some tomato sauce into the pan and spread with a spoon or spatula so it covers the bottom of the dish. Then, carefully fill the cooked shells with the cheese mixture and place in one layer in the pan. Pour the remaining sauce over the stuffed shells, cover with foil, and bake until the cheese is oozing out of the shells and the sauce is bubbling. Serve this dish with a side salad so you at least have something that is healthy on your plate. Also, if you start your meal with a fresh garden salad, you'll eat less of the main dish, which means you'll have enough to serve as leftovers the next day, without having to cook a whole new meal.

Vegetarian Cooking - Classic Recipes Minus The Meat

A lot of people think about becoming vegetarian but do not want the bother of having to cook one meal for themselves and one for the rest of the family. Maybe you are considering a meat-free diet but you are worried about missing out on your favorite dishes. The answer is to adapt your family favorites, substituting delicious and healthy vegetables for the lamb, chicken, pork, or beef.

Take savory pies, for example. Hearty pies are something that many people adore but did you know that you can use whole chestnuts to give your savory pies a "meaty" feel instead? Make your usual pie filling recipe but switch the beef for a mixture of mushrooms and whole chestnuts. Use a tasty vegetarian stock instead of meat stock. If you usually use a suet-based crust as the topping, use a vegetarian suet instead.

Vegetarian Dishes

You can use bell peppers, carrots, broccoli and mushrooms instead of meat in your spaghetti Bolognese or spinach and gruyere cheese in your meat-free lasagna recipe.

Indian Food And Curries

A lot of Indians are vegetarians and this might be why there are so many meat-free Indian recipes. Lentils, potatoes, and chickpeas are often used to bulk up the dishes and the spices add an amazing taste.

If you usually have chicken curry, why not switch the poultry for soya fillets or soya chunks? The range of spices used to make Indian food mean that not only will be food have plenty of its own flavor but also that you will not be able to taste the meat as clearly as an unspiced dish, so you might as well use a veggie alternative.

Portabella mushrooms are a great alternative to patties and you can add lettuce, tomato, relish and onion rings, as well as a slice of vegetarian cheese, for a totally mouthwatering hamburger.

If you are a fan of goulash, you can use smoked tofu instead of the pork. The goulash will be just as good and you will not miss the pork at all. Use lentils in your shepherd's pie instead of lamb and you can save money but still have a delicious dish.

Vegetarian sausages can be good if you usually eat ones made with meat. Try switching the sausages in your favorite sausage recipes for vegetarian ones and you will not notice any loss of flavor. Remember to use vegetable oil to fry them in, rather than lard.

What About Mexican Food Recipes?

Do not worry about missing out on flavor if you are a fan of Mexican beef, pork and chicken dishes because there are plenty of vegetables to fall back on. You can use textured vegetable protein or quorn instead of ground beef in a chili con carne and most carnivores will not be able to tell the difference.

Mexican layered salads and other authentic Mexican food recipes are often meat-free or they might contain fish or seafood, which you might or might not want to use. When making salad recipes, you can usually adapt the ingredients however you like and leave out anything you do not want to use or substitute the protein for cheese, eggs, or vegetables.
