tasty and Easy Mexican Food Dishes

Mexican food has long been a beloved of Americans due to its intense flavors and colorful ingredients. Beans, tomatoes, chilies and corn are a staple of easy Mexican food dishes, along with spices that for most, taste uniquely Mexican such as cumin, chile powder, and saffron. Sour cream is often used as a topping to ease the heat of chiles and jalapenos.

Vegetarian Dishes

Guacamole is Aztec in origin and made naturally by mashing an avocado with a mortar and pestle, then adding tomatoes and salt. Guacamole is savored for its high vitamin and fat content. Guacamole is often used as a dip for crackers, hard breads and chips.

Mexican Pizza does not have a dough base like the pizza the rest of the world is customary with, instead, tortillas are fried and topped with assorted ingredients such as meat, cheddar, onions and tomatoes. Topped with sour cream, of course!

Quick Quesadillas involve large flour tortillas, frying them just a petite by placing on a griddle over medium heat. Bell peppers, shredded jack cheese, onions, shredded beef or chicken plus the favored Mexican spices cumin and chile powder top it off.

Mexican Entrees

Carne Asada is one of the easy Mexican food dishes lively steak. The meat should be cut into half-inch strips, along with peppers and onions. Continue to cook the meat and peppers and onions until the vegetables are penetrative and limp. Place this mixture inside tacos, serve it as a side dish or use it for a quick and easy lunch.

Arroz Con Pollo enlists chicken as a main ingredient in this, an additional one easy Mexican food dishes. Other ingredients comprise a Spanish onion, olive oil, bell pepper, Spanish rice, chicken broth, peas, pimentos and saffron. It is primary to sauté the chicken first with olive oil and salt and pepper, then add saffron, rice and broth to cook gradually over low heat for 30 minutes or so. Peas and pimentos are added last.

Mexican Sides

Corn Tamales is one of the most easy Mexican food dishes and is exquisite for lunch or dinner. To make it the old fashioned way you'll need actual corn husks, corn flour, shortening, salt, broth and tropical white cheese. String is needed for tying the tamales at the end. The corn husks need to be soaked and then dried. All of the other ingredients are added into a food processor, then scooped onto the tamales and tied with a string. Steam for one hour in a dutch oven, and voila, beautiful and appetizing corn tamales.

Mexican Cornbread is a pleasure at any time. Made with cornmeal, cream style corn, sugar, a beaten egg, yellow onion, garlic, jalapenos, chiles, Monterey jack cheese and some other quick and easy basics, your guests or your house will be screaming for more! Cook the onion first then add the garlic. Jalapenos are cooked next for 8-10 minutes. The dry ingredients are mixed then, and jalapenos and chiles addes to the mixture. Toss in the cream style corn and bake in a 375 degree oven for a half an hour. For more heat, add more jalapenos.

Potatoes Tetrazzini - A Vegetarian Version of the Classic Tetrazzini Dishes

This recipe is for a classic Tetrazzini dish, but with the poultry or fish omitted.

This classic dish, which most think actually originated in the United States, was named for Luisa Tetrazzini, a world famous coloratura soprano, who from all accounts not only loved to sing but also loved to eat. This version is similar to my chicken Tetrazzini recipe published elsewhere. You could substitute a can of cream of mushroom soup for the white sauce (olive oil, flour, and milk) shown here. Since most of the commercial cream soups contain lots of additives, which you don't really need, I usually go the "scratch" way and make white sauce. Most of the flavoring for this dish come from the onion and lemon juices and the Parmesan cheese. This recipe has been "grandson tested" and they liked it.

Vegetarian Dishes

Ingredients

5 Medium Potatoes
1 tablespoon olive oil
1 tablespoon flour
1 cup milk
1 onion, juiced, then pulp chopped & added
1 teaspoon lemon juice
1 cup bread crumbs
1/4 cup Parmesan cheese, grated
1 tablespoon butter, melted
salt and pepper to taste

Instructions:

1 - Bake the potatoes in microwave (or conventional oven) then cool in running water and remove skins, then slice and set aside.
2 - In a large skillet heat olive oil, then add flour with constant stirring until smooth.
3 - Slowly add milk with constant stirring until smooth
4 - Add onion juice, onion pulp, then lemon juice, cheese and seasonings.
5 - Slice the previouly baked potatoes and place in even layer in a greased glass baking dish.
5 - Pour the white sauce with seasonings over the potatoes,
6 - Mix butter with bread crumbs and sprinkle on top the dish
7 - Bake for 15 minutes at 425 degrees F. in a preheated oven.

Comment - This is real comfort food!
