As a vegetarian, foods that you need to consume to make sure you have a salutary vegetarian diet, may become boring and bland if you don't know what to do with them. Take beans for example. Beans beyond doubt are a good source of protein and are a low-fat food, but if you don't have very good recipes to spruce up your bean meals, you may stop eating them all together. If you do that, then you will be missing out on a lot of nutritional value that you can get from beans all because you may "fresh out" of cooking ideas. I just recently started cooking more often with beans. I went to the store one day and just grabbed a 2 lb bag of every dried bean that they had on the shelf. Right now, I don't have the slightest idea as to what I am going to do with all those beans but one thing is for sure; I have fullness of beans to cook with to try out any new recipes that I may create. Here is a appetizing and easy Cajun Red Beans and Rice vegetarian formula that is packed with flavor. All you'll need are a handful of ingredients and a big pot or crock-pot and you will have a hearty vegetarian meal that you'll beyond doubt enjoy.

Vegetarian Cajun Red Beans and Rice Recipe

Vegetarian Dishes

Ingredients:
2 quarts of water 1 large chopped onion 6 mashed garlic cloves 4-5 vegetable bouillon cubes (this all depends on your sensitivity to salt and taste preference) 1 tablespoon of Tamari (optional) 1 tablespoon of Liquid Smoke 3 tablespoons of chili powder 1 tablespoon of ground cumin 1 tablespoon of ground coriander ½ teaspoon of cayenne pepper 2 cups of Tvp 1 cup of brown rice 2 cups of dried red beans, rinsed

Directions:

1. Turn crock pot on and set to "low." Add the water, chopped onion, garlic cloves, bouillon cubes, tamari, liquid smoke, chili powder, cumin, coriander, and cayenne pepper. Stir until the bouillon cubes are dissolved.

2. Next, add the Tvp, brown rice, and dried beans, stir and cook on "low" for 6 ½ hours.

Enjoy this Vegetarian Cajun Red Beans and Rice formula any time of the year and with a nice side salad. And if you have extra left over, just frost the remaining red beans and rice and warm up in the microwave or on the stove when you are ready for other heaping bowl. It can last up to 30 days frozen so enjoy!
