Vegetarian Chef Salad

This recipe provides you with loads of fresh veggies to boost your daily fresh fruit and vegetable intake. And that's not to mention being packed with protein, so it functions as a hearty meal that will give you lots of mileage.

Plus, the tangy flavor of organic produce, as compared to conventional produce, shines through. Just ask any gourmet chef whether he or she prefers conventional or organic produce--they say organic, for flavor, every time.

Ingredients:

Two hard-boiled organic or local eggs (optional if you're vegan or too impatient)

Organic bacon bits alternative

2 organic hearts of romaine

Organic shredded cheese or cheese alternative (your choice; either yellow or orange cheeses are great)

2 vegetarian breaded chicken patties

2 organic tomatoes

1 organic red pepper

Organic croutons

Bring a small saucepan of water to a boil. Meanwhile, thoroughly rinse romaine hearts, then pat them dry with a towel. Tear off any brown areas to compost them, then bunch the romaine with your hand and cut it into horizontal slices, working from the tip to the butt.

Repeat for second heart of romaine. Compost the butts. Dice tomatoes and red peppers. Compost the tomato core and red pepper cap and innards. While you're chopping, reflect upon a quote from Thich Nhat Hanh: "We have to eat happy eggs from happy chickens."

When the water boils, gently drop in eggs. Boil for three minutes or until they're hard-boiled. Meanwhile, spread the sliced romaine hearts evenly between two plates. (This serves two, in case you haven't already guessed.)

Cook the vegetarian chicken patties according to package directions, either in the microwave if you're super hungry and need to eat soon, or in the oven if you want them to be more crunchy. (Of course, if you cook them in the oven, make that the first step before boiling the eggs.)

Cut the patties into slices when they're done, then arrange the slices on each plate of romaine.

Rinse the eggs under cold water until they're cool enough to handle. Chop the eggs, or use an egg slicer and pretend it's your least favorite politician's head.

Sprinkle organic bacon bits alternative, cheese or cheese alternative, red peppers, tomatoes and croutons evenly onto each salad. Actually, don't do it evenly--sneak just a few more goodies onto your salad.

You can use pre-packaged organic croutons, or you may be able to find crunchy organic or local baguette chips that you can crumble onto the salad. And if you're in a pinch, you can simply crumble some organic crackers or tortilla chips that you may already have on hand.

The organic produce you use in this hearty salad is as limitless as your imagination. You can also try diced cucumber, shredded carrots, sugar snap peas--the list goes on and on.

Thai cuisine acquires it distinct aromas from a blend of herbs used in its cooking. Prime among them is the Kaffir lime leaves, whose typical flavor accompanies almost all thai soups and curries. Others are the Thai lime (Manao), Galangal (Kha), Turmeric (Kha min), garlic and lemon grass.

Among the vegetables are varieties of eggplant (some of them are eaten raw), broccoli, cabbage (Phak kat khao), yard long beans (thua fak yao), bean sprouts (Thua Ngok), bamboo shoots, tomatoes, cucumbers, sweet potatoes, and corn. Mushrooms are also used, the most common being straw mushrooms (het fang), angel mushroom (het nang fa).Shi take mushrooms (Het hom) are all the rage recently and are available in dried form or fresh.

Native Foods

Fruits are generally served after a meal. Integral to most meals are papaya, mango, jackfruit, langsat, longan, pineapples, or durian. These are usually added to a salad or dessert.

Pumpkin and coconut milk are often paired to make for excellent soups, curries and sweet desserts. Popular amongst the Thai meals are clears soups with tofu, noodles, cabbage and garlic like Gang jued tofu or a sour and spicey soup like Tom yum puck.

Rice culture

Rice is a foundational food of Thai cuisine. The fragrant jasmine rice, gives the dishes an otherworldly aroma just like that of roasted popcorn or nuts and has a soft texture when eaten alone. Curries, stir fry and other dishes are combined with rice creating a single dish called Khao rat kaeng. In dishes like fragrant curries and stir fried vegetables, rice is often a core element. Another variety commonly used is the sticky rice and that is used in rural northern and northeastern cuisine. Another major food stuff are the noodles made from rice flour (Kuai tiao), wheat flour, or mung bean flour (Wunsen) which is an extremely thin noodle.

The main dishes include Rice dishes, Curries; Stir fried vegetables, salads and desserts. Some of them are, vegetarian khao pat (fried rice, Thai style), Kuai tiao nam (rice noodle soup served spicy condiments and vegetables), Mikrap (deep fried rice vermicelli) and others. The curries from the south region are coconut milk based and with turmeric whereas northern dishes are tinged with lime like Chok (rice porridge) and kuai tiao rat na (fried rice noodles).

Finishing touch

A sweet snack or fresh fruit is a fine way of completing an excellent Thai vegan meal. Rice flour and tapioca flour are used for thickening agents in the desserts. Some odd sounding but delightfully tasty desserts are jasmine scented coconut pudding or Tako, grass jelly or Chao kuai ans finally Ruammit which has nuts, fruits and coconut milk added. Iced tea or Cha yen, iced black coffee or Oliang and rice wine or Sato are sometimes served after the meal as a means of easing the evening into conversation.

To the unenlightened, Thai cuisine may appear to be about meat, meat and more meat but the discerning will see that Thai cuisine has a strong vegetarian cooking tradition that goes far beyond western fast food variety of Thai restaurants.

Vegetarian Healthy Meals

There is a misconception that vegetarian healthy meals are expensive and difficult to prepare. I beg to differ. I say, it takes less effort, energy and cost. It takes less effort because a vegetarian meal is composed of fresh vegetables and high-protein beans and legumes. Vegetables need not be cooked for hours. In fact the quicker you can cook the more beneficial it is. Most vegetables can be blanched or steamed in minutes while animal flesh needs to be cooked very well especially when you're feeding them to your little kiddos.

Salmonella laden meat anyone? Bacteria fest? I'm not trying to scare you, I'm just saying these are worries you need not bother with when you're preparing vegetarian meals. I'm not saying that there is a zero possibility of parasite in vegetables but the probability is not as high as with meat. (Now now, don't bash me. Let's save this argument for later discussion. Get back to me and we'll wrestle with this topic some other time.) Beans and legumes take time to be cooked. True. But... you can always cook them in big batches and store them in the freezer for future use. Tofu burgers can be done over the weekends for the week's consumption. I make a batch enough for tofu burgers, tofu balls and tofu patties that can be grilled, baked or cooked in tiny weenie bit of olive oil on a non-stick pan. These are quick meals for hungry active kids whose hungry appetite must be attended to ASAP before the window of opportunity closes in on you. Whole wheat bread, tofu patties with some crispy lettuce and fresh succulent tomatoes, a slab of cheese and into the grill it goes. Once the cheese melts, the lettuce and tomatoes gets forgotten in the gooey cheese. Place it on a plate and slice them into small triangles or cut them with a cookie shaped cutter. If you're kids don't clamor over them, well at least there's you who can benefit from this scrumptious meal you've prepared. Seven to eight minutes tops and if you do this few days a week, you'll be making this in minutes just like the guys at the burger joint.

That's one of the perks of being a vegetarian. Instant frozen food in the supermarket is not always accessible to everybody so mothers like me make them (instant frozen food) without the killer preservatives and hidden GMOs. Filipino Recipes - Adobong Kangkong Recipe - Pinoy Food

Adobo is a method of cooking most commonly used in preparing many Filipino dishes. Its caramelized dark sauce is so addictive together with the different meats, seafood and even vegetables.

Adobong kangkong is definitely one of the best vegetable adobo recipes. It is very nutritious and delicious, too. Just be sure that you will use fresh kangkong to get the best results. Just by looking at the leaves and the stalks, you will know if the kangkong is newly harvested. Aside from the high nutritional value of this recipe, this is fairly inexpensive so you can be assured that your family is properly nourished even if you are on a tight budget.

Ingredients:


1/4 kilo of pork (cut into small pieces)
1 big bowl of kangkong (river spinach)
1 cup pork stock (broth)
2 laurel leaves (bay leaves)
1 onion (diced)
5 cloves of garlic (minced)
1/4 cup soy sauce
1/4 cup of vinegar
Salt and pepper to taste
1/2 teaspoon of monosodium glutamate (MSG)

Cooking Procedure:


Put oil in a big pan and sauté the garlic and onions.
Add the pork and cook for a few minutes until the color turns brown and oil starts to ooze from the meat.
Pour in the pork stock and add some salt, soy sauce and laurel leaves. Stir to mix and cook until it comes to a boil.
Simmer and pour in the vinegar. Cook for 5 minutes and do not stir.
Add the stalks of kangkong and cook for a minute. Then add the leaves of kangkong and go on cooking until the vegetable is thoroughly cooked.
Transfer to a serving dish and serve with plain white rice.
