Vegetarian Baked Pinto Beans

I love baked beans and I know a lot of people feel the same way about them. They are a comfort food that reminds us of spending time with family and friends. They can warm you on a cold day and they go great with just about any other food.

I am a vegetarian so I have a slight variation of the regular baked beans recipe. Even my meat eater dad who thinks that everything tastes better with a tinge of meat flavor will have seconds of these beans and he often asks for me to cook them for him when he comes over for supper. Finally a food we can agree on!

Vegetarian Dishes

Baked Pinto Beans

* 2 cups pinto beans
* 1 tsp salt
* 2 cups boiling water
* 1 onion
* 2 tbsp. Brown sugar
* 1 tbsp. Molasses
* 1 can tomato soup (We have also used canned tomatoes pureed)
* 1 tbsp. Mustard
* 1/2 cup ketchup
* Salt and pepper to taste

Soak the beans overnight. Slow boil for about 20-30 minutes. Drain and rinse. In baking dish slice the onion. Add beans to dish. Add salt and water. Mix the rest of ingredients to make the sauce to pour over beans. Bake several hours in an oven at 250 degrees, until beans are soft but still firm. You can add hot water during baking if they get too dry.

I bake this for about 3-4 hours. It really just depends on how long you boil the beans after soaking them and how firm you want them to be.

Add some garlic toast to go with them and they will stand as a meal on their own.
