The things needed to prepare mushroom barley soup are: 2 cups chopped onion, 4 tsp oil, 2 garlic cloves, 2 carrots, 2 tsp coriander, 600 gm mushrooms, 1 cup barley along with 4 cups vegetable broth.
Take a deep pot and heat oil into that. Put the onion, garlic, coriander, carrots plus mushrooms in the pot and cook on medium heat. You can add dried herbs, barley and vegetable broth. Bring them to the boil and simmer for 20 minutes until barley becomes soft.
Your vegan mushroom barley soup is ready to be served.
