Great Vegetarian Recipes - For Meat That Tastes Like Meat But Isn't

Want to be vegetarian but just can't give up on meat dishes altogether? Try great vegetarian recipes to fool your taste buds into going vegan! These great vegetarian recipes make use of thoroughly of vegan ingredients. However, they taste nothing like vegetables whatsoever!

Don't believe me? If so, you've obviously never tried oven baked barbecue ribs, barbecue country style ribs, vegetarian meatloaf, and the vegetarian faux chicken patties. These dishes do not have a shred of meat in them and are made with ingredients guaranteed to offend any cheeseburger lover. But they're easy to whip up and taste so great even dyed-in-the-wool carnivores love them!

Vegetarian Dishes

Vegetarian Meatloaf. This is made using bread cubes, onions, herbs, spices, and eggs. Toss in some carrots and potatoes and bake to perfection and you'll have a vegetarian meatloaf that tastes like it's made of ground beef!

Vegetarian Shepperd's Pie. I first tasted this at a friend's potluck evening meal and was so bowled over by the taste I asked for the recipe. This is the excellent ease food for cold winter nights. It's made of russet potatoes, flour, toasted buckwheat groats, and other ingredients that do not walk on two or four feet.

Vegetarian Ribs. The name is misleading because ribs aren't used in this dish at all! But this tastes as good as - if not better than - ribs. The main ingredient of this dish? Believe it or not, gluten. My husband polished his plate in seconds. When I told him it was gluten he had eaten, his jaw dropped! I am not exaggerating when I tell you these three great vegetarian recipes will convert your life!

Of the three recipes above, the last one - vegetarian ribs - is what I advise to friends who can't cook to save their life. Vegetarian ribs is a very forgiving recipe. You can mess up many of the steps and end up with a mix that feels and looks like a huge mistake but once you've complete baking, you won't be able to stop smacking your lips in satisfaction.

Jamaican Jerk Recipes

The national dish of Jamaica is saltfish and ackee, which is salted cod, rehydrated and cooked with ackee (which is a type of fruit) as other vegetables, and flavored with herbs and spices. However, overseas, the best known Jamaican formula is practically assuredly "jerk". Jamaican emigrants have taken this formula with them to other countries along with the United States, Canada and the United Kingdom, and as a result, the formula has now come to be a popular worldwide.

Jerk dishes are meat, dry-rubbed with a aggregate of spices which is known as "Jamaican jerk spice". The jerk spices is principally a aggregate of two main spices - Jamaican pimento and Scotch bonnet peppers - but other spices are also used in the mix, along with cinnamon, cloves, nutmeg, and thyme, as well as garlic and scallions. The meat is then cooked, if inherent over a barbecue grill - some population would recommend placing pimento berries or wood on the hot coals of the grill, as they can add to the flavor. Of course, it may not be inherent to all the time prepare the dish on a barbecue, but fortunately roasting the food in a general kitchen oven can also furnish passable results.

Vegetarian Dishes

In Jamaica itself, the customary meats used for jerk are goat or pork. In West countries, the most commonly encounter jerk dish is practically assuredly jerk chicken, but it is also inherent to use other meats such as beef as well, jerk fish can be tasty too, and vegetarians have even been known to enjoy jerk tofu.

Salt and ground black pepper

Put the remaining oil in a large bowl with the vinegar, sun-dried tomatoes, sugar and a minuscule salt and pepper to taste. Stir well to mix. Drain the pasta, add it to the bowl of dressing and toss to combine.

Add the roasted tomatoes to the pasta and mix gently. Before serving, add the rocket, toss lightly and taste for seasoning, adding more if necessary. Serve either at room climatic characteristic or chilled.

Country Pasta Salad

This salad is packed with vegetables and is ideal for a summer picnic. Use fresh Parmesan from the delicatessen, which is less mature and sold as a table cheese, rather than the hard, mature Parmesan used for grating.

150 g / 5 oz green beans, topped and tailed and cut into 5 cm / 2 in lengths
1 potato, about 150 g / 5 oz, diced

2 spring onions (scallions), finely chopped
90 g / 3½ oz Parmesan cheese, diced or coarsely shaved
6-8 stoned (pitted) black olives, cut into rings
15-30 ml / 1-2 tbsp capers, to taste

For The Dressing
90 ml / 6 tbsp extra virgin olive oil
15 ml / 1 tbsp balsamic vinegar
15 ml / 1 tbsp chopped fresh flat leaf parsley
Salt and ground black pepper

Cook the pasta agreeing to the instructions on the packet. Drain and rinse under cold running water, then shake to take off as much water as possible. Leave to drain, shaking occasionally.

Cook the beans and diced potato in a pan of salted boiling water for about 5 minutes, or until tender. Drain and leave to cool. To make the dressing, put all the ingredients in a large bowl, season and whisk well to mix.

Add the tomatoes, spring onions, Parmesan, olives and capers to the dressing. Place the pasta, beans and potato in a large bowl and pour over the dressing. Toss well, cover and leave to stand for 30 minutes. Taste for seasoning and serve.

wholesome Cookie Recipes - Vegan and Gluten Free

Vegan cookies, gluten-free cookies, wheat-free cookies...healthy cookie recipes are easy to make if you are willing to experiment with a few alternative capability ingredients. Agave nectar is the exquisite sweetener for such baked treats. Not only because of its superiority to refined sugars, but also for its moisture-retaining qualities.

Healthy Cookie Recipes Can Be Made Without Sugar, Butter, Eggs, Or Milk!

Vegetarian Dishes

Let's start with a solid base of ground nuts. We can use whatever fits best our personal preferences and budget. Pecans tend to be a bit more costly than almonds and hazelnuts (filberts), walnuts are often on sale or ready at a less costly regular price. All the time buy bulk, and halves and pieces are just fine. No need to get whole nuts since we ground them up anyway.

A good cookie formula should contain some fat. As we want to keep this healthy, nutritious, and appropriate for vegans, let's forget about the butter and select instead almond, cashew, or peanut butter, or a blend thereof. If you don't like the flavor or price of nut butters, substitute with organic canola oil.

Great, but what about the flour if we want to make gluten-free cookies? The reply is: organic brown rice flour! Works like a charm and is much healthier than white flour.

Next up: which sweetener? As stated above, agave nectar is a great sweetener for baked goods. Similar to honey, it helps withhold the moisture in cookies and cakes. It also blends speedily and no ifs ands or buts with all other ingredients for a well-mixed batter.

To add flavor to this basic salutary cookie mix, use some vanilla or almond extract, ground cinnamon, crushed anise seeds, and a pinch of salt, of course.

And to add even more nutritional value, consider lightly toasted rolled oats, raisins, sesame seeds, flax seeds, pumpkin and sunflower seeds. My goodness...what to do with all that energy?

Why This Is An Easy salutary Cookie formula For Vegan Cookies And Gluten-Free Cookies

We don't no ifs ands or buts need a formula for these unbelievable power morsels of nutrition. It all depends on what we have on hand, or what we like to eat, or what we want to buy. Here is a uncomplicated formula template utilizing the ingredients discussed above:
4 cups ground nuts 1 cup nut butter or 1/2 cup organic canola oil 1 cup organic brown rice flour 3/4 cups agave nectar 1 Tablespoon vanilla or almond extract 1 teaspoon ground cinnamon 1 teaspoon crushed anise seeds, cardamom, or other spices 1 teaspoon salt Optional: 1/2 cup each raisins or toasted oats or seeds The private ingredient quantities don't no ifs ands or buts matter that much. The template is just a normal guide line. Our goal is to mix a batter that holds its shape when divided into cookie-size balls. We might have to add a diminutive water if the mix is too dry and crumbly. Or, we might have to add more brown rice flour to a wet and sloppy batter.

This is the best part: As we are not using raw eggs, we can taste our cookie batter before we bake it off! Add more agave nectar if you like it sweeter, more spices or seeds, until you are happy!

Important points for the baking process!
Place 2-inch balls on a parchment-lined cookie pan and flatten lightly with a fork (similar to manufacture peanut butter cookies, dip the fork in cold water before pressing it on the cookie portions) Use a fairly low oven temperature: 8-10 minutes at 300-325 degrees; agave nectar browns a diminutive faster than sugar, so keep an eye on your cookies and don't let them get too dark on the bottom! Remember, there are no raw eggs in our batter; we won't have to bake it fully through. A lightly "under-baked" interior is wonderful! So, be adventurous and experiment with a collection of nuts, seeds, dried fruits, spices, and whatever you love in your epicurean vegan cookie. As long as you don't burn them black, they will All the time be good eating. And because they are so salutary and nutritious, they'll be good for you, too!

Vegetarian Chili Recipes - 5 Tips to Making Great Vegetarian Chili!

Well, we all know that vegetarian chili has not meat in it! That is a give in. The old saying of "fat is where the flavor is" well, that does hold true does it not? So what do we do when we want to add flavor to vegetarian chili recipes? We add chilies for a bit of heat and some flavor, remember that there are many chili pepper varieties out there and being familiar with as many as you can and the properties of each will only aid in your chili cooking endeavors.. There are of course other things that can be added and we will cover them. In this article we will look at 5 simple tips to making great vegetarian chili recipes.

Tip 1. Know thy chili peppers! Getting to know the chili peppers that you will use will help you in figuring out just how much heat you can take in your chili dish. So the trick is to know which types of chili peppers are the hottest. We all know that a bell pepper is not going to impart heat at all in our recipes, but we do know that a jalapeno or habanero are some of the hottest chili peppers around. They make pepper spray for the police out of habanero chili, so you can imagine how hot it is! So if using this type of chili in your dish use it sparingly and work your way up to the heat level that you are satisfied with. In most cases, most people use the good old standby of the Jalapeno chili pepper and that is fine. They have a mild/medium heat and most people can handle that. It is my opinion that you should learn and experiment with other types of chilies in your various recipes.

Tip 2. When you are cooking your vegetarian chili recipes, it is a good idea to start adding your chilies toward the end of the dish around the last two hours of cooking. This lets the other flavors blend and then you add the chilies and you add another layer of texture as well as flavor. Add slowly and taste often with your spoon until the desired hear level is reached. The best part about chilies is that they are loaded with vitamin C and antioxidants that are good for your immune system. Chilies are also thermogenic and help in losing fat if you use them in your diet.

Tip 3. Chilies are rated by Scoville heat units. This means that some chili peppers can actually burn the skin, eyes or nasal passages. Do not handle chili peppers with your bare hands! If you have cooking gloves, use them! If you do not have cooking gloves, get some! If that it is not possible at the moment, then coat your hands in olive oil to add a layer of protection from the chili pepper juices. Of course if you do not want to chop your chili peppers then you can grind them in any number of ways and with any number of kitchen gadgets.

Tip 4. How much heat from chili do you think you can handle? If not much there are a couple of things that you can do. The first thing is to get the seeds out of the chilies you will use. Another tip is to cut out or remove the "ribs" inside the chili peppers. There is much debate as to what is the hotter part of the chili pepper, the ribs or the seeds? I personally do not care because in my humble opinion they are both real hot! Taking these steps will reduce the heat of many chilies to something a bit more mild in heat for your vegetarian chili recipes.

Tip 5. You know the old saying "Man, and Woman cannot live by bread alone." Well, Man, and Woman cannot live by chili alone, either! Chili is a synergistic food. They taste fine by themselves, but only enhance the tastes of other elements in a recipes and the other elements of the recipe enhance the flavor of the chili. Chili peppers that are added to things like onions, garlic, various beans, hard tofu or tofu products, and fire roasted tomatoes can really make your vegetarian chili recipes fly! You do not add all these ingredients together at the same time. In fine dining it is called building layers of flavor. So you need to start by mixing and sautee' of the items that are not hot and slowly adding in your chili peppers keep in mind always a little touch of salt and a little touch of either black or white pepper.

Cold Potato Salad Recipes

There are many cold potato salad recipes that can be used to make this family favorite dish. No potluck, picnic, or cookout is complete with out some form of this favorite dish. The usual ingredients include boiled potatoes, mustard and or mayonnaise, and may vary somewhat after that point.

There are several steps to making cold potato salad, and a shortcut for each step. The first step is to peel and boil the potatoes. A couple of good shortcuts for this process include scrubbing the potatoes instead of peeling them, and cooking them in the microwave to speed up the process. Running cold water over the cooked potatoes in a colander also helps speed things up, as does putting the dried potatoes in the fridge while chopping the other ingredients and mixing them. You can also use a microwave egg poacher to hard poach the eggs instead of boiling them, then cube the eggs and stick in the freezer for about 5 minutes to cool them off. If you use other ingredients fresh from the fridge, your dish will go together much more quickly, and chilling after making is the key to a great tasting dish.

My personal favorite involves potatoes, chopped celery, boiled eggs, chopped onions, mayonnaise, sour cream, mustard, salt, pepper, topped with fried bacon pieces, and small halved cherry tomatoes. Served up inside large leaves of lettuce or cabbage placed in the bowl, this makes an attractive and tasty side dish for any event. While the ingredients themselves are fairly simple and the process of making the dish is simple enough, not everyone has the time to make this dish.

Many cold potato salad recipes use mustard and or mayonnaise as one of the ingredients, however I have also seen recipes that include oil and vinegar as the dressing or Italian dressing. These recipes make for a unique and interesting side dish, as they are not what is expected from this type of dish. The basics are still the same, however slicing the potatoes in thin slices instead of cubing them as for traditional potato salad puts another spin on this dish. One such recipe includes the use of Italian dressing, green peppers, sliced green onions, and chopped celery. This is a much lighter version than the traditional cold potato salad. This version does however rank high on the taste factor. You simply boil the potatoes whole, allow them to cool thoroughly, and slice them in rounds, add the dressing, the peppers, onions and celery and mix well, then refrigerate before serving. This is a delicious light alternative to traditional fare.

Just remember when making these dishes, that they are sometimes better the second day when all the flavors have had time to blend together. Hopefully these hints will help you enjoy making and eating your cold potato salad recipes in the future.

Portuguese Recipes

Portugal is a relatively isolated country in Europe. It shares its only land border with Spain. It is also a nation that has a very rich and long maritime tradition, and many links to the wider world. As a result, Portuguese cuisine is surprisingly different from that of other European countries, and is influenced by contacts with the East Indies, the Far East, Africa and the New World. Portuguese food is particularly known for its extensive use of fish and seafood (including salted cod), as its use of spices to enhance the flavor of many dishes.

Some popular Portuguese foods include:

* Cozido á portuguesa - This is a traditional meat stew. It is usually made from beef or pork, but sometimes chicken may be used. Portuguese smoked sausages are also usually used in the recipe, as are cabbage, carrots, potatoes, turnips and rice.

* Bacalhau - Bacalhau is cod that is preserved by salting. It is actually used for many different dishes, and can be prepared in numerous different ways - according to some people, over a thousand different ways.

* Caldeira - This is a traditional Portuguese stew. It contains several types of fish, and sometimes shell fish as well. Vegetables such onions, potatoes and tomato and also used in the dish. Caldeira is generally flavored with herbs and spices, although the particular choice of spices does to some extent depend on the chef's preferences, and the region. Spices that may be used, include allspice, cloves, curry powder, ground ginger, nutmeg, piri-piri, and saffron.

Vegetarian Recipes - How to Make Raw Cashew Cheese

Raw Cashew Cheese

As discussed in an earlier article, soaking and re-hydrating nuts makes them easier on your digestive process. When you are making a raw food goods like cashew cheese, pre-soaking the nuts also makes them softer, allowing for easier blending in the food processor or Cuisinart. There is a bit of planning complex with this recipe, as the cheese must set up for a duration of colse to 24 hours before it is ready for eating. Prior to that, the nuts themselves must be allowed to soak for a duration of time in purified or distilled water. Make this cheese as a excellent snack or hors d'oeuvre for a party, just make sure to plan a integrate of days in advance. This shouldn't be carefully the "make it an hour before the guests arrive" kind of dish.

Vegetarian Dishes

For a method yield of about 1 ¼ cups of Raw Cashew Cheese, succeed these instructions. Reconsider doubling the method for a small party of ten or less guests; for a snack item for the week, make this whole and keep the cheese stored in the refrigerator.

Ingredients for making Raw Cashew Cheese

1 ½ cups raw cashews

1/3 cup water

2 teaspoons freshly squeezed lemon juice

2 cloves garlic

½ teaspoon sea salt

Put the cashews in a bowl and add sufficient cold, distilled water to cover the nuts by about two inches. Soak the cashews for colse to 2 hours, and then drain them.

Combine the cashews, 1/3 cup water, lemon juice, garlic cloves and sea salt in a food processor and blend them together. Be true to scrape down the sides of the blender. Continue to blend the combination for about 5 minutes, or until all of it is very smooth.

Place the cheese in a small bowl or Tupperware, and cover it, allowing it to stand at room climatic characteristic for in the middle of 24 and 48 hours, but not longer. After the 24 hours, refrigerate the cashew cheese until you are ready to eat it. The cheese will keep for not more than 5 days, if kept covered and refrigerated.

Vegetarian Slow Cooker Recipes - Crock Pot Ratatouille

The slow cooker is a very useful appliance, easy and convenient to use. Most meals cooked in the slow cooker are healthy and easy to prepare. You can prepare the meal early in the morning. You could also prepare it the night before and leave the dish in the refrigerator. In the morning just take the dish out of the refrigerator and place it in the main unit. Choose your temperature setting between low and high, and forget about it. Your supper will be ready by supper time. You do not need to check it continuously Every time you open the cooker lid, you prolong the cooking time by 25 minutes.

Once you finish supper, then the cleaning is very easy, specially if you have a unit with a removable dish. Do not ever submerge the heating unit. As you can see cooking in the crock pot is so easy that even your husband could do it.

I have found an easy and delicious vegetarian recipe here:

- 2 medium eggplants, peeled and chopped
- 2 green peppers, seeded and chopped
- 6 plum size tomatoes chopped
- 2 large zucchini sliced
- 2 small onion chopped
- 3 cloves pressed garlic
- 1/4 tsp red pepper flake
- 1 tsp basil
- 1 tsp oregano
- 1 6-oz can tomato paste
- salt and pepper to taste

Combine all ingredients, except tomato paste, in slow cooker. Pour the tomato paste on top and cover. Cooking time: 3-4 hours on high or 8-10 hours on low. You can serve it on brown rice or pasta rice.

Enjoy it!

When I did not have any children, cooking was not my priority, so I just got home from work and decided on what to eat for supper. Since having children, my days got shorter, and I am always looking for ways to simplify the cooking duties. I now enjoy cooking. My cooking time has been reduced and I can use my time more productively.

Vegetarian Mexican Recipes - Vegetables With Cheese

Vegetables are a large part of traditional Mexican foods and most authentic Mexican food recipes comprise at least one fresh vegetable. You can make a for real yummy Mexican food recipe, which is convenient for carnivores as a side dish or vegetarians as an entree, just by cooking some vegetables and adding some herbs or spices and cheese.

This might sound like a easy dish but sometimes the easy Mexican recipes turn out to be the tastiest ones and combining vegetables with a tasty cheese from Mexico is sure to succeed in a mouthwatering meal.

Vegetarian Dishes

Delicious Cheeses from Mexico

Queso asadero is one of the nicest Mexican cheeses and this chewy, mild white cheese behaves like American processed cheese, which means that if you cannot find it you can use a processed Jack cheese instead. Pretty much anyone can be used in the following recipe, so you might want to try cheddar, mozzarella, feta, or a mixture, depending what you have already in your refrigerator. Muenster, teleme or Fontina would also work.

Queso asadero is used to make chile con queso and chiles rellenos, which are stuffed chili peppers. In the Mexican state of Qaxaca, wild berries are added to the queso asadero when it is made, giving it a dissimilar flavor to the American and Northern Mexican varieties.

You can also alter the other ingredients in this vegetable recipe if you like. Maybe you cannot find chayote, in which case you could use squash. Add some corn kernels and fresh cilantro if you fancy. This recipe also contains jicama, although this is something you can omit if you cannot get it where you are. So what is jicama exactly? It is a sweet, edible root, which looks like a turnip.

Jicama features in many recipes and its unique flavor suits salsas, vegetable dishes, and salad recipes. You can eat jicama raw and it is also nice in Chinese stir fries, as a substitute for water chestnuts. Since this ingredient is fat free and high in vitamin C, it also makes a great snack.

Mexican Vegetables with Queso Asadero

You can roast the vegetables for twenty minutes in a hot oven, rather than cooking them on the stove, if you prefer. If you want to do this, chop them into small pieces and coat them in olive oil. Cook them until tender.

What you will need:

1/2 cup chopped red onion 1 cup peeled, chopped jicama 2 thinly sliced zucchini 1 tablespoon vegetable oil 1 thinly sliced yellow squash 1 thinly sliced chayote 2 minced cloves garlic 1/8 teaspoon cayenne pepper 1/2 teaspoon ground cumin 2 chopped tomatoes 1 teaspoon chili powder 1 cup shredded queso asadero Salt and black pepper, as needed

How to make it:

Saute the garlic and onion in the oil in a skillet over a moderate heat for five minutes. Add the jicama, squash, chayote and zucchini and cover, stirring occasionally, cooking the combination for about eight minutes or until the vegetables are soft.

Stir in the cumin, cayenne, chili powder, tomatoes, salt and pepper and cook the combination for two minutes. Stir in the shredded cheese and serve immediately.

Perfectly Flavored Slow Cooker Recipes

Because the process of slow cooking enhances the flavor of any ingredients you use, adding other flavors to crockpot recipes is slightly separate than seasoning dishes on the stove or in the oven.

If you are using other cooking method, the method will often suggest you to use fresh herbs, or dried herbs if you are unable to get fresh ones. With slow cooker recipes, the opposite is true. Dried herbs suit the long cooking process good than dried ones.

Vegetarian Dishes

The moistness inside a slow cooker does not do much for fresh herbs except wilt them, so use dried herbs when you can, for the best flavor. If you have fresh herbs and you want to use them, add them just twenty or thirty minutes before the end of the cooking time. If you want to use bay leaves, you will find that one big one or two small ones is sufficient.

Extracts such as vanilla, rosewater, almond and orange flower can be added to crockpot recipes. These are delicately flavored and you will only need a drop or two, since the slow cooking will boost their flavor.

Adding ready Sauces to Crockpot Meals

Prepared sauces and pastes are handy to use in many recipes, including recipes for the slow cooker. It is leading to perceive that the long slow cooking process can make potent sauces stronger, so do not add too much if you are using something like a spicy curry paste or chili in adobo. The accomplished meal might turn out much hotter than you had planned on!

Ketchup and Worcestershire sauce are good to add to beef-based stew recipes. Anchovy, oyster and fish sauces are good for fish dishes and hoisin sauce or soy sauce are good with Asian crockpot recipes.

Take Care When Slow Cooking with Alcohol

Using alcohol in crockpot recipes is not the same as using it in non-slow cooker recipes. Because the liquid in a crockpot does not evaporate, neither will the alcohol, so you do not need to add very much.

Try wine, beer or cider with meat. Sweet liqueurs or rum can complement slow cooker sweetmeat recipes but again do not add too much, else you might overpower the other flavors in the dessert. If you ruin a dish on the stove you can throw it away and start again but ruining a slow cooker method which has been cooking for ten hours can be very frustrating!

Spicing Things Up

Most spices should be added at the beginning of the cooking time but some get bitter if you overcook them, such as chilies. You can add these about halfway straight through the cooking time.

Ground spices are best for non-crockpot recipes and whole spices are best for slow cooker recipes because the slow cooking process gives them time to cook and release their tasty flavors. You can use a pre-made spice mix to save time. Good spices for crockpot cooking include peppercorns, coriander, cumin and whole cinnamon sticks.

How to Create Vegetarian Gluten Free Recipes

Vegetarian gluten free recipes are necessary for people wishing to eliminate wheat products from their diets and sometimes this is out of pure choice. Most often the diet is chosen because of health concerns and symptoms. There are some people who do have celiac disease and for these people it is mostly impossible for their bodies to handle the digestion and processing of food products that contain gluten. Celiac disease can result in hair loss, dry skin, rashes, bloating, and malnutrition. You can not teach your body to accept glutens and you can not use smaller amounts of gluten containing products. You can only deal with this problem by staying away from all foods that have these gluten proteins included.

There may be as many as 2 in 500 persons who all have celiac disease and many more have intolerances or allergies to gluten products. There is also a large percentage of the population who state that they feel better when they remove wheat products from their diets for a little while.

People who have problems with digesting gluten containing products can change their diets to reflect how badly they react to gluten. If they have minor problems such as gas or bloating, then limiting the grain products may help. If they have true celiac disease, there is no choice in treatment except to remove any and all of the gluten products from your meals.

You will need to create vegetarian gluten free recipes that do not include any wheat products, rye, kamut, barley or oats. There are many replacements that can be used. You can use corn based tortillas instead of those made with flour and you can still use pasta that is made from rice or corn, you can even use quinoa pasta. Tamari sauce, wheat free, can be used for flavoring. You can use grits for a morning cereal item or even use it to thicken other dishes. Brown rice is nutritious and tasty and you can mix many other items with it. There are even thickener products that can be used such as arrowroot and potato and corn starches.

Vegetarian Recipes - How to Make Raw Cashew Cheese

Raw Cashew Cheese

As discussed in an earlier article, soaking and re-hydrating nuts makes them easier on your digestive process. When you are making a raw food product like cashew cheese, pre-soaking the nuts also makes them softer, allowing for easier blending in the food processor or Cuisinart. There is a bit of planning involved with this recipe, as the cheese must set up for a period of around 24 hours before it is ready for eating. Prior to that, the nuts themselves must be allowed to soak for a period of time in purified or distilled water. Make this cheese as a perfect snack or hors d'oeuvre for a party, just make sure to plan a couple of days in advance. This shouldn't be considered the "make it an hour before the guests arrive" kind of dish.

For a recipe yield of about 1 ¼ cups of Raw Cashew Cheese, follow these instructions. Consider doubling the recipe for a small party of ten or less guests; for a snack item for the week, make this amount and keep the cheese stored in the refrigerator.

Ingredients for Making Raw Cashew Cheese

1 ½ cups raw cashews

1/3 cup water

2 teaspoons freshly squeezed lemon juice

2 cloves garlic

½ teaspoon sea salt

Put the cashews in a bowl and add enough cold, distilled water to cover the nuts by about two inches. Soak the cashews for around 2 hours, and then drain them.

Combine the cashews, 1/3 cup water, lemon juice, garlic cloves and sea salt in a food processor and blend them together. Be careful to scrape down the sides of the blender. Continue to blend the mixture for about 5 minutes, or until all of it is very smooth.

Place the cheese in a small bowl or Tupperware, and cover it, allowing it to stand at room temperature for between 24 and 48 hours, but not longer. After the 24 hours, refrigerate the cashew cheese until you are ready to eat it. The cheese will keep for not more than 5 days, if kept covered and refrigerated.
