What you will need:


2 beaten eggs
3 cups cooked, drained yellow squash
1 cup coarse breadcrumbs
1/2 teaspoon basil
1 teaspoon thyme
3 finely chopped green onions
Vegetable oil, for deep frying
Salt and black pepper, to taste

How to make them:

Mash the squash in a bowl and then stir in the basil, breadcrumbs, onion, eggs, thyme, salt and pepper. If the mixture is not thick enough to form balls easily, add some more breadcrumbs. Heat the oil to 370 degrees F or until a droplet of batter floats to the top quickly.

Make two inch balls with the squash mixture and fry three at a time. Cook them until golden. This will take about five minutes. Drain the squash croquettes on paper towels. You can keep them warm in a 175 degrees F oven if you like, while you cook the rest.
