How to Cook Beet Leaves - Italian Style Recipe

This quick, easy and healthy dish provides a great way to use up those big green beet leaves which are often thrown out.   The leaves, like many green leafy vegetables are loaded with lots of vitamins and iron.  For those who struggle with anemia (low iron in the blood) this can really help.   It also helps to eat more leafy greens during a woman's premenstrual cycle because it adds iron in the body which helps compensate for the loss of iron which occurs. 

To get started, all you need is 1 bunch of beet leaves, a few cloves of garlic, extra virgin olive oil and some water. 

Simply take 1 bunch of beet leaves and wash very well.  Do not use any discolored leaves which can appear yellow.  You want the deep green leaves.  You can keep the stems too.  
Chop the leaves and stems (the stems will be a little bitter so you do nott have to use them) and set aside.  
Crush a few cloves of garlic and saute the garlic in extra virgin olive oil for about 3 minutes over medium heat in a pan large enough to hold the leaves.  Do not let the garlic burn, this will ruin the whole dish.  
Next add the beet leaves along with some water.  The water will help create steam for cooking.   If you add too much water, just let it cook off.
Lower the heat to Low.  
Cover and stir frequently until leaves are wilted and soft.   If you remove the leaves too soon, the leaves will be tough and hard to chew.  
Add additional water as needed to prevent leaves from sticking to pan. 
Serve warm.
This Italian dish can be served as a snack or as a nice side dish to a nice bowl of pasta, or even breaded chicken breasts with Italian seasonings. Enjoy!

Italian Cuisine - The History

Italian cuisine is becoming increasingly popular in the UK. Although this is a recent change in the restaurant industry, Italian cuisine dates back to the 4th century BC where the roots are derived from potatoes, maize, bell pepper and tomato. Usually an Italian meal would be made up of three to four courses and are seen as a time to spend with family and friends which can be much longer than in other cultures, sometimes lasting for many hours. One very unique aspect of an Italian meal, is the primo or first course. This is usually the most filling dish which would consist of either risotto or pasta, both being rich in carbohydrates. However, modern Italian cuisine would include this as a single course.

It was at the beginning of the 18th century that the culinary books of Italy began to show the regionalism of Italian cuisine. So many of what we eat today comes from over two centuries of Italian history. Through various influences throughout the centuries, including neighbouring regions, conquerors, high-profile chefs, political upheavals as well as the discovery of the New World, a concrete cuisine has formed to what is known today as one of the premiere cuisines in the world. Popular Italian dishes include many pastas and risottos as well as espresso coffee that originally comes from Italy. Also, traditional pizzas are very popular, which many pizzeria restaurants becoming popular all over Britain.

The reasons for Italian cuisine being so popular are that it combines very simple ingredients with seasoning and herbs, creating tasty mouth watering meals to suit most taste buds. You are able to get many vegetarian dishes as well as meat dishes which allows Italian cuisine to be very versatile. Another reason why Italian restaurants are popular is that the food that is made is fresh and healthy.

Vegetarian Italian Food - Eggplant Marinara

If you are a fan of Italian cuisine and you love all types of pizza and pasta, why not try a vegetarian dish? The following recipe for eggplant marinara is guaranteed to please you because the flavors go so well together.

This recipe features garlic, tomatoes, basil and three kinds of Italian cheese for an authentic taste of Italy. The vegetables add flavor, nutrients, and you can serve this with a salad on the side. This recipe makes enough to serve eight people.

Vegetarian Dishes

Eggplant is a flavorful vegetable but it is not one of the most common ones. It gives flavor to a lot of famous dishes including Greek moussaka. It can have a bitter flavor, which some people dislike.

This is not so noticeable in stews or highly flavored dishes but if the eggplant is the main ingredient in the meal or if you are serving it alone, it can be a problem. To remove the bitterness, you should sprinkle salt over the vegetable and leave it to "sweat" for half an hour. Then you can brush the salt away. The way this works is that the salt sucks out the chemical responsible for the bitterness.

An alternative method would be to slice the vegetable and then chill the slices for four hours. Thaw the slices and press out the water using your hands. This process makes the flesh more delicate so for the following recipe use the salt because the slices do need to hold their shape when you roll them up.

What You Need:

1 lb ricotta 1/2 lb thinly sliced mozzarella 5 minced cloves garlic 1 oz finely chopped parsley 10 finely shredded basil leaves 6 oz tomato paste 1/2 cup all purpose wheat flour Cooking spray 4 oz parmesan Cracker meal 2 peeled eggplants 2 beaten eggs 1/2 teaspoon black pepper 1 tablespoon olive oil 5 lbs peeled, blanched tomatoes

How To Make It:

Heat the olive oil in a skillet covered with cooking spray and saute the garlic. Stir in the tomatoes and tomato paste and cook for twenty to thirty minutes over a moderate heat, stirring a few times. Sprinkle the shredded basil over the top, and then add the grated cheese and pepper. Take the mixture off the heat.

Combine the ricotta and parsley. Preheat the oven to 350 degrees F. Slice the eggplants lengthwise into quarter inch slices, then sprinkle salt over them. Leave them to stand for thirty minutes, then dip them in egg and dredge them in cracker meal. Bake for ten to fifteen minutes or until they are tender.

Put a slice of mozzarella and a scoop of ricotta in the center of each slice of eggplant and roll them up. Arrange the eggplant rolls seam side-down in a cooking spray-coated baking pan. Pour the marinara sauce over the top and bake for twenty five or thirty minutes. Garnish with grated cheese and parsley and serve hot.

Italian Or Indian Food - The Choice Is Yours

There is absolutely no similarity between Italian and Indian cuisine, just that both are popular in almost every corner of the world. Westlands is the centre of Nairobi's Indian population, but there are a few budget options downtown as well.

Haandi

(The mall Shopping centre, Ring Rd, Westlands Mains Kshs 600-995)

An international award winner widely regarded as the best Indian restaurant in Kenya, Haandi has sister restaurants in Kampala, London and Middlesex and sells its own souvenir T-Shirts. The menu reads like a recipe book crossed with a guide to Indian cuisine, and includes a wonderful Mughlai (North Indian) and Tandoori dishes and plenty of vegetarian curries.

Chowpaty Pure Vegetarian Restaurant

(Shimmers Plaza, Westlands Rd, Westlands; mains Kshs 200-350)

A great Indian vegetarian restaurant. The menu is as much a manifesto as a food list, but the food is excellent and includes lots of South Indian dishes such as dhosa (lentil pancakes stuffed with vegetable curry)

Supreme restaurant

(River rd, meals Kshs 170-250)

Near the junction with Tom Mboya St, this place offers excellent Punjabi vegetarian thalis (plate meals) consisting of various curries, rice, dhal, bhajia (vegetables fried in lentil flour) and chapattis. It has also superb fruit juices.

Plaza café

(Barclay's plaza, Loita st. mains kshs300-6000

The minar chain used to have several branches in the city centre, but now there's just this one, set in the plaza's basement courtyard. It specializes in Mughlai dishes but also does standard breakfasts and African dishes, plus good buffet lunches and plenty of vegetarian options.

Taj

(Taveta Rd; dishes Kshs 20-100)

Basic, ultra cheap Indian soul food around the corner from the Iqbal Hotel.

Ethiopian Food & Restaurants in Nairobi Kenya

Blue Nile Ethiopian Restaurant

(Arwings Kodhek Rd, Hurlingham; mains Kshs 300-450)

One of those rare places with a character all its own, blue Nile's quirky lounge couldn't be mistaken for anything else, painted with stories from Ethiopian mythology-if you've ordered one of the many goat dishes, its best not to read the panels about poison until you've finished your meal! For the full communal African eating experience order the seven-person doro wat (spicy traditional chicken stew, Kshs 3500) with a few glasses of tej (honey wine, Kshs 125)

Addis Ababa Restaurant

(Wood vale grove, Westlands; mains Kshs 400-500)

Unlike the Ethiopian capital itself, this place is easily missed as it's tucked away up some stairs in an otherwise unremarkable block. Locate it and you'll also find good authentic food and occasional live music.

Italian Restaurants in Nairobi

With Kenya's huge Italian expats population, it's not surprising that there are some good Italian choices here.

Trattoria

(Cnr Wabera & Kaunda sts. Mains Kshs 400-1800)

A very popular downtown restaurant swathed in trellises and plants, offering excellent pizzas, pasta, varied mains and a whole page of desserts. The atmosphere and food are excellent and it's packed every night, especially the upstairs balcony section. Try the penne with vodka and smoked salmon (Kshs 550). A minimum spend of Kshs 500 per person applies for dinner, which is seldom a problem.

Taverna

(Woodvale grove, Westlands; mains Kshs 390-800)

A quiet sophisticated place tricked out in typical checked table cloth style; with lots of pasta choices and good seafood-tasty cognac prawns will set you back Kshs 1500
