Refried Beans and Authentic Mexican Food Recipes

An Authentic Mexican method for Refried Beans

You can make them dry or soupy, depending on your personal taste. Make them wetter by adding more bean juice to the mixture as it cooks and keep them drier by using a slotted spoon to exchange the bean mixture to the oil. The longer you cook them, the softer, and sweeter they get.

To give the refried beans a dissimilar flavor, you can fry some onion, salt pork, garlic, or Mexican sausage in the oil before you add the beans. This amount of refried beans will feel in the middle of four and ten people, depending whether you are serving it as a side dish or a main course.

You can omit the chilies from this method if you are not keen on a spicy flavor, or you can use chili powder or chili paste instead of the fresh chilies if that is easier.

You will need:

2 1/4 lbs pinto beans or black beans, cooked Wax chilies or guero chilies 10 tablespoons oil
How to make it:

Toast the chilies over a low flame or on a griddle until the skin starts to blister, then chop them finely. Heat a skillet over a high heat until it is very hot, then add the oil and beans. Let the beans simmer in the oil for about five minutes, stirring often, then mash them with a potato masher. Add the chilies and serve immediately.

I remember learning "Beans, Beans, The Musical Fruit," while driving in our old red and white van. When my mom complained about my sister and I learning songs with people "tooting," my father promised we wouldn't remember. Now, thirty years later, I remember.

In my parent's home, I grew up on steak and noodles; it was a favorite and eaten regularly. As an adult, I result a vegetarian diet and avoid refined carbohydrates. It's likely I'll never eat my favorite childhood supper again, and I'm perfectly okay with that.

Vegetarian Dishes

Instead of both of those previous favorites I now enjoy: Beans.

I love beans and lentils, and I'll share how to make one of easiest and best tasting bean dishes I've ever had. This dish is incredibly tasty and full of protein. In addition, once you know that it takes one thousand gallons of water to produce just one pound of beef, or worse, that many animals used for consumption these days have cancer and tumors, you'll understand that why using this dish often will advantage both your body and the environment.

One of the best things about bean dishes is that there are so many separate kinds of beans, and they all taste different. The recipe I'll share will work with just about any type of bean or lentil, but my favorites are red lentils and black-eyed-peas. Red lentils are tasty and because they only take about fifteen minutes to prepare, they are a marvelous fast meal and a perfect pasta replacement. Black-eyed-peas take a bit longer, about forty minutes, but when you're eating them, you'll know exactly why you waited.

Because I'm big on easy food preparation, you'll just need a merge of things to make this straightforward dish.

The first is coconut oil, which if you're not cooking with coconut oil regularly, you should be. Coconut oil is full of medium chain fatty acids, which offer marvelous condition benefits. Coconut oil is known to kill cancer cells, be anti-bacteria, and contrary to favorite belief, coconut oil categorically works to prevent heart troubles. On top of that short overview of the benefits of coconut oil, coconut oil is the only oil that can stand the heat of cooking without creating free radicals. Plus, it's delicious.

The second item needed is sea salt, which is very separate than traditional table salt. Unprocessed sea salt is full of minerals - which most people are deplete in - and is structurally separate than approved table salt, which the body sees as toxic. So, if you haven't made the switch yet at your table, now's a perfectly good time to do so.

The third is fresh sage. Like many herbs, sage protects against cancer, has anti-bacterial properties, and is categorically delicious. Now, you'll need your beans or lentils and purified water and that's it.

So, this is what you'll do with all of it...

Add a teaspoon or two of coconut oil to your pot. Heat it up, and tear up and add 5-7 large fresh sage leaves per large serving of ready beans or lentils you plan to make. Let the sage sauté on low heat for a minute, then add your purified water and beans or lentils. You'll need about three times as much water as dried beans or lentils. Just it bring to a boil, and when boiling turn the heat down to medium low, cover, and let cook until they've finished. If you're not sure how long to cook the beans or lentils you're using, a Google hunt will categorically yield the answer.

When they're ended the beans or lentils will be soft. Now, add in a teaspoon of coconut oil per large serving and use sea salt to flavor. You'll be amazed at how easy and tasty this is. And six to seven cups of beans or lentils each week meet the protein requirements of humans - so they're an easy hearty change if you want to move away from eating meat. Indulge and enjoy!

Best Recipe For Vegetarian Lasagna

Vegetarian lasagna is always a favourite and this one is a real winner. The recipe could not be easier. A bit of chopping and a little bit of assembly and the oven does the rest.

The tasty vegetable base is made by slowly roasting Mediterranean style vegetables in the oven to bring out big, bold flavours that will appeal to vegetarians and meat eaters alike. For this recipe, you can roast the veggies the day before and put them in the fridge until you are ready to layer the lasagna. This is useful if you are having guests but the flavour is better too.

What About The White Sauce?

Skip the white sauce and use cottage cheese or ricotta instead. It's easy and it tastes fantastic. If you are unsure about using cottage cheese, try it once. You might be surprised. Not only is it much easier, it makes the vegetable lasagne very light and cuts the fat content right down.

What You Will Need


Extra virgin olive oil
lasagne sheets (no-precook)
1 eggplant
2 zucchini
500g/1 pound of fresh tomatoes (I like to use whole cherry tomatoes. They are sweet and look really pretty. If you use larger tomatoes, chop them roughly)
1 red pepper
1 white or red onion
2-4 cloves of crushed garlic
Small bunch of fresh basil
About 2 tablespoons of roughly chopped black olives
2/3 cup/ 75g/3oz grated mozzarella
1/3 cup/50g grated parmesan
3 cups/600g of cottage cheese or ricotta
Chop the eggplant, zucchini, pepper and onion into large chunks. Put them in a roasting tray with the tomatoes and garlic and add a couple of tablespoons of extra virgin olive oil and some salt and pepper. Stir well and roast in the oven at 200c/400F for 45 minutes to an hour until the vegetables are very soft and starting to brown.

When the vegetables are cooked, remove the roasting tray from the oven and stir in the olives and basil.

Now you are ready to start layering the vegetable lasagna. Put one third of the vegetable mixture at the base of a heatproof baking dish. Cover with one third of the mozzarella and follow with a layer of lasagne sheets. Add a a third of the cottage cheese or ricotta.

Repeat these layers, finishing with a layer of cottage cheese or ricotta and sprinkle with parmesan.

Bake the vegetarian lasagna for about 30-40 minutes until golden.

Serve with a green salad, some Italian bread and, of course some Italian red wine!

Vegan Pie Crust

Pie crust has not been an easy accomplishment for me. In the past I have inexpressive behind ready pie crusts, and frankly, if they were vegan, I'd still use them. Pie crust is a lot of work! Well, okay. It's not that much work. It just takes planning, and patience, and a light touch...only some of which I have.

My first attempt at pie crust was this past summer. You may remember it as peach cobbler. Yeah, a pie without a crust. That's how badly it went. But, this was primarily due to rancid shortening. So, pie crust tip #1: check the expiration date on all of your ingredients!

Vegetarian Dishes

My second attempt went much better, as you can see from my gorgeous pecan pie. But, it was still challenging. It tore and much of it was just pressed inelegantly into the pan, but it baked beautifully and was light and flaky alongside the creamy richness of the pecan filling. The wonderful thing is that pie crust is in effect made vegan. Where omnivores might use butter or lard, vegans can use Crisco, which is an already established ingredient in many pie crust recipes. Crisco is plainly vegetable shortening made from the oil of soybeans, canola, and other plants. So, if you're going to make your own pie crusts anyway, give thanks to the animals with a few vegan pies!

2 cups all purpose flour
1/2 teaspoon salt
3/4 cup Crisco vegetable shortening
4 to 8 tablespoons ice cold water

Measure flour and salt into the bowl of your food processor. Place in the refrigerator. Cut 3/4 cup Crisco into small cubes, and place in the refrigerator. Fill a measuring cup with ice water and place in the fridge. Allow all the ingredients to cool for 1 hour.

Add Crisco to the flour and salt in the food processor and blend until the shortening is distributed in pea sized crumbs. Add 4 tablespoons of the cold water and process until the dough begins to form a ball. Add more water as necessary, but do not allow the dough to become wet. Transfer the dough to a floured surface. Cut the dough in half and wrap each half in plastic wrap, flattening the dough into a disc 1/2" thick. Return to the refrigerator and allow to sit for 30 minutes.

Remove the dough from the refrigerator and place on the floured surface. Cover the top and lowest of the dough with plastic wrap to preclude sticking. Take care to use large sufficient sheets as the dough will improve when you roll it. Roll your dough from the town to the edge, pressing gently. Turn the dough 1/4 turn every time you roll it so that it stays circular. When the dough is 2" larger than your pan, fold the dough into fourths, generously flouring the touching surfaces to preclude sticking, and Transfer to your pie pan. Unfold gently. Follow the baking instructions for your single pie. Enjoy!

Quick Easy Recipes - 2 Tasty and salutary Side Dishes That want Only puny Time and attempt

So, you got this packet of meat in your fridge but you don't know what to make with it. And you can't find a method that includes right this type of meat, makes your mouth water and is easy enough to make it in that half or three quarter of an hour you got. Sometimes we are not searching for the method of a whole meal, sometimes we also need something we can verily consolidate with what we have.

Side dishes allow you to be very creative and flexible with your meals. Vegetable side dishes can go with rice, potatoes or pasta, with or without meat. They are a great asset when you plan your meals according to the simple formula: veggies + starchy foods + protein rich foods. In other words: veggies, rice and meat. Or veggies, potatoes and fish. Or veggies, pasta and mince. Using this simple formula, and sticking with easy ingredients that want diminutive making ready can make you put in order a tasty and healthy meal in about half an hour.

Vegetarian Dishes

Here are two simple side dishes: The first one is a healthier alternative to boiling potatoes so that you can also enjoy potatoes with your quick meal. The second method is a vegetable side dish that won't even take you 10 minutes to make.

Quick Oven-baked Potatoes

The quickest way to cook potatoes is to boil them in lots of salt water. But unfortunately, this is not the healthiest way. In fact, many water soluble nutrients are drawn out of the potatoes and into the water, especially if you boil them too long.

A better way which can do without water and requires only a diminutive bit of (healthy) fat is to bake them in the oven:

Preheat your oven on 230°C. Wash your potatoes thoroughly. Don't peel them. Cut them into very thin slices. You can use a grater for this. Place baking paper on a baking tray and slightly grease it with olive oil. Spread the potato slices on the baking tray, sprinkle them with a bit of olive oil and your favorite spices (for example thyme, cayenne pepper, rosemary). Bake them for about 20-25 minutes until they are tender. Turn them once after 10 minutes so that they can get crispy from both sides. Serve immediately.

 
Super Quick Chili Veggies

Like it spicy? Here's a hot side dish made of canned corn, peas and chili that you will love. It's super quick, so it's a excellent method for days when you only got a few moments to cook. It's also great if your meat requires a bit more preparation. At least you don't have to worry much about the veggies.

Ingredients:

1 can corn 1 can peas 2 garlic cloves, crushed 1 tsp. Crushed chili 1 tsp. Ground cumin

Steps:

Heat 2 tbsp. Oil in a pan. Add garlic, chili and cumin and fry them for about half a minute, stirring well. Then add the corn, mix well and fry it for a few minutes until it is hot.

 
Serves 4.

There are many other recipes that you can generate with these two in mind. Instead of potatoes, you can bake sweet potatoes, carrots or butternut. Marrows and pepper would go even quicker. The nice thing about baking your veggies in the oven is that you will need less fat. As for the chili veggies, you can replace the corn and peas with any other canned veggies. Try dissimilar spices, leave the garlic and add a chopped onion instead. Be creative! Just make sure you don't use processed vegetables as they contain lots of unhealthy additives and also are not so nice for stir-frying.

A Vegan Thanksgiving: Maple Cranberry Sauce

Sorry for the onslaught of Thanksgiving recipes, but it's officially November, and I shape any home chef worth their salt (no pun intended...oh, who am I kidding) is already planning what to make this year. I had a very busy weekend formula testing, adjusting, and ordinarily inventing. So many of the foods that I envision on my vegan Thanksgiving table just don't exist, so I have to get creative. However, this is not one of those recipes. This is a quintessential part of Thanksgiving, that happens to already be vegan: Cranberry Sauce! And this single one is amazing. Growing up, I never paid much attention to the cranberry sauce. I was never one for sour candies or sweets, so ultra tart cranberry sauce felt more like a punishment than a treat. Then, 10 years ago, my dad changed all for me. The 2000 Bon Appétit Thanksgiving issue featured a maple cranberry sauce. My dad and I are big fans of maple syrup, so I figured this could only improve on the dish. Small did I know, this was the missing ingredient all along. Just when the cranberry sauce starts to get a Small sour for me, the maple syrup mellows all out, finishing the flavor smoothly. I haven't eaten other cranberry sauce since. When we started spending Thanksgiving in Minnesota, it was my one culinary contribution to the table. While I have since been granted greater responsibility in the kitchen, I still have a soft spot for this, my first Thanksgiving dish.

1 12 oz. Bag fresh cranberries
3/4 cup pure maple syrup
1/2 packed brown sugar
1/4 cup water

Place all the ingredients in a large pot and mix thoroughly. Bring to a boil and simmer until the cranberries pop, and the sauce starts to thicken, about 10 minutes. Place in a bowl and cover tightly. Refrigerate until cooled completely. This is a great dish to make 1 or even 2 days ahead.

2 yummy Low Calorie and Vegetarian Recipes For An Awesome Lunch!

Vegetarian Pastitsio

vegetable cooking spray 12oz Morningstar Farms recipe Crumbles or similar stock 1cup chopped onion 8oztomato paste 1/3cupwater up to 1/2 cup Salt and pepper to taste 1cup elbow macaroni 6tbl grated Parmesan cheese divided 1/2tsp cinnamon or more to taste 1/4tsp nutmeg optional 12oz evaporated skim milk 1 can 4tsp light butter or margarine 2x eggs lightly beaten

Vegetarian Dishes

Preheat oven to 350F. Spray a 9" x 7" or similar deep 11 cup casserole dish with vegetable cooking spray. Put a pot of water up to boil.

Spray a 9" or 10" nonstick skillet with vegetable cooking spray. Saute onion for 1 or 2 minutes; add the vegetable protein crumbles and saute for another 5 minutes or so. Add the tomato paste, water, salt, pepper and some nutmeg and cinnamon. Cook for another tiny or two. Remove from heat and set aside.

Meanwhile cook the elbow macaroni according to box directions for the minimum amount of time to come to be just *barely* al dente. Drain under cold running water to stop cooking, then drain again. Return to pasta cooking pot and toss with 1 teaspoon of butter and 1 or 2 tablespoons of Parmesan cheese.

Spray casserole dish with cooking spray. Layer 1/2 of the macaroni evenly in the lowest of the casserole. Spread the vegetable protein crumbles over the macaroni layer. Sprinkle with just a touch more cinnamon and 1 or 2 tablespoons of grated parmesan. Cover with the remaining macaroni.

In a bowl, beat the eggs lightly. In a small saucepan, heat the evaporated skim milk with the remaining tablespoon of butter. Whisk half of the warm milk/butter blend into the eggs, then return the eggs blend to the saucepan and whisk with the rest of the milk.

Pour the milk/butter/egg blend evenly over the whole casserole; it will not lay on top but will sink down - this is just fine. Dust the top of the casserole evenly with the remaining 1 - 2 tablespoons of grated parmesan.

Bake the casserole for 1 hour, or until egg blend is set and top is crusty and golden. Remove from the oven and let stand for 10 - 15 minutes before serving.

Note: I used regular, not fat-free, parmesan; Land O'Lakes light butter; Morningstar Farms brand vegetable protein crumbles (which, by the way, I idea were *much much much* great than the Green Giant Harvest Burgers for Recipes kind).

This recipe was *great* and not too much of a hassle to make, not even on a weeknight. I will undoubtedly make it again; can see it becoming a family standard. It is also something I would make for company - vegetarians and meat-eaters alike.

I must say that with a big old mound of spinach and some French bread with roasted red peppers, this made quite a filling and satisfying feast. And it was a *lot* more food for not many more fat than a _Lean Cuisine_ or similar type frosty entree.

Notes : Serve with French bread and steamed spinach.

I found the original recipe in Sue Spitler's 1001 Low-Fat Vegetarian Recipes_. But I made a few changes, both in ingredients and in preparation. Mostly, I wanted to make the casserole in a smaller, deeper pan so make it thicker, and once I did that I figured I could get by with less of the custardy topping.

I was very pleased with the results, and the whole family enjoyed it. I am posting both the original recipe and my adaptation here.

Low Calorie French Fries

2 medium potatoes, unpeeled and scrubbed 3 sprays vegetable cooking spray paprika -- optional salt pepper celery salt -- optional

Cut potatoes in half lengthwise. Slice each half into lengthwise wedges with some peel on each piece. Soak in cold water for 20 minutes. Drain and dry potatoes. Spray cookie sheet with cooking spray. Place potatoes into plastic bag or large plastic bowl with tight fitting lid.

Add oil and shake to coat the potatoes. Dispose potatoes in singular layer on cooking sheet. Bake in preheated 450°F oven for about 20 minutes, stirring occasionally. To season, sprinkle with salt, pepper and your selection of paprika or celery salt.

Reduce salt if using celery salt. Also good sprinkled with chili powder just before end of cooking time.

Veggie Diet - Yummy Vegetarian Sandwiches

Need some inspiration for your veggie diet? Have your meals been rather boring lately, with not much flavor to tickle your tastebuds? Do you feel like you've been eating cardboard?

One of life's greatest pleasures is eating. Well, at least for me it is. Nothing beats having the time to savor the most delectable dishes - and establishment them too! However, as a full-time writer, I hardly have sufficient time to whip up meals for myself after my eight to nine hour job. So, I started researching online for gastronome veggie sandwiches I could de facto make after work.

Vegetarian Dishes

Vegetarian and sick of the usual salad, cucumber or tomato sandwich? No need to feel deprived of good, ability food. Here are some yummy vegetarian sandwich ideas I found (and tried!) that will de facto put the spark back into your veggie diet!

Tofu Pesto Sandwich

Ingredients:

Tofu

Basil (finely chopped)

Pine nuts

Garlic (chopped)

Pita wrap

Tomatoes (chopped)

Lettuce

Carrots (sliced thinly)Cheese (optional)

Preparation:

Steam the tofu until firm. Set aside. In a blender, merge the basil, pine nuts and chopped garlic. Blend. Salt to taste. Replacement to a bowl and refrigerate.

Warm the pita wrap in a pan. Arrange the lettuce on it. Place the steamed tofu on the middle measure of the wrap. You can opt to fry the tofu first, though, if you prefer. Add the chopped tomatoes and carrots. Pour a compassionate number of pesto on top. Sprinkle with cheese if desired. Fold the pita and you're ready to eat!

If you're bringing it to work, wrap it in foil to sustain the warmth. Also, feel free to modify the ingredients in this pita wrap. You can substitute some of the vegetables for others, depending on your taste.

2. Tofu Scramble

Have you ever tried tofu? Well, you certainly should. Tofu is used as a substitute for meat in many vegetarian dishes. And tofu scramble is a great alternative to scrambled eggs.

You will need:

* 1 block of tofu, drained and press

* 1/2 yellow onion

* 1/2 green pepper

* 1 teaspoon garlic powder

* 1 teaspoon onion powder

* 1/2 teaspoon dried parsley

* 1 tablespoon soy sauce

* 2 tablespoons nutritional yeast

* 2 teaspoons oil or margarine

Here are the steps for cooking:

a) Cut the tofu into one inch cubes, and then use a fork to slightly crumble it.

b) Dice your onion and bell pepper.

c) Add some oil or margarine to a skillet set to medium-high.

d). Add the onion, green pepper and tofu to the skillet and cook for 4 or 5 minutes.

e) Add garlic powder, onion powder, parsley, soy sauce, and nutritional yeast to the skillet.

f) Cook the tofu scramble for 6 or 7 minutes, stirring frequently. When it is done, pour onto a plate and enjoy.

You can treat a tofu scramble like what you would do with scramble eggs, adding vegetables of your choice, like tomatoes, mushrooms, spinach, and carrots.

gourmand Vegetarian - Small Plates at Green Zebra

Winter in Chicago is a fine time for trying new restaurants; we have a total of three separate "Restaurant Weeks" going on in January and February--Chicago Originals, North Shore restaurant and Chicago restaurant Week, which begins February 18. Frankly, with my suburban location and a five year old I can't all the time participate in these great deals, but that's what I have Groupon for. My most recent culinary adventure came courtesy of that Chicago-based company, because I had to use my allowance at Green Zebra last week-or lose it.

Green Zebra is an upscale vegetarian restaurant, decorated in a modern manner with bamboo and ferns that originate cool textured shadows on the ceiling. It's small, piquant and dimly lit (hard to get good photos in this place without a flash, which seems to disturb the ambiance!), and I had a bit of issue getting a reservation on an evening immediately after the Big Blizzard of 11'--fortunately, man had cancelled. A sign asks you to shut off your cell phones, and you can check your coat in at the front counter.

Vegetarian Dishes

I think of my desire to eat at Green Zebra as an exertion to drag my husband, kicking and screaming, into a more adventurous world of food. His diet is what he's dubbed "truck-driver vegetarian"-all the bread, cheese and grease you can eat, just without the meat. He's a big guy, over six feet tall, so I think the idea of small plates makes him a bit nervous, wondering if he'll get adequate to eat. He's also a creature of habit, and likes to visit the same restaurants over and over again. But, because he knows how much of a foodie I am, I can occasionally introduce him to something new, and he likes it. Or at least, he tells me he does. That's how I know he's a good husband.

I will say we categorically ate pretty lightly. Our waitress said that a good meal of small plates regularly consists of three or four plates per person, but in the middle of us we had five plates and a dessert selection.

We started out with two cold plates, Hen Of The Woods mushroom pâté with date mostarda and pumpkin seed brittle, and a Riesling poached seedling farm pear salad with feta, mint, almonds and citrus. I loved the pâté, which was very flavorful yet mild. Even after the bready bits were gone I just ate the stuff with a knife (see how sophisticated I am?). The pear salad was less prosperous for me, generally because the pear was so soft, but again the flavors were vibrant.

Next, we had a roasted pumpkin soup with whipped creme fraiche, Thai basil, pepitas and garlic, along with a small mound of fettucine, basil, pistachio, giardiniera, garlic and parmesan cheese. Both dishes were delicate and well-done. The pumpkin soup was sweet and creamy, and the fettucine, although you might think it a fairly uncomplicated pesto-style pasta, was accented with these marinated carrots (the giardiniera, I imagine) that helped to elevate the dish into something special.

We also had spiced hush puppies with seven-year cheddar. I was a exiguous hesitant to order this, because my contact with hush puppies to date has been in Long John Silvers' Fish & More meal, and they were eaten with ketchup. But the guy at the table next to ours, who was also using his Groupon, assured us it was an amazing dish, and he was right. Basically, hush puppies here are these exiguous balls of fried dough, with some cheese melted on top. I think I might come back just for those.

After that we decided we were still hungry, so we decided on the dessert plate, which seemed big adequate to satisfy anything was left of the hunger pangs in each of our bellies. We were right. The plate was a chef's selection that included three homemade sandwich cookies (chocolate chip and peanut butter, chocolate and mint, and ginger and maybe vanilla, I think), a cupcake and a doughnut, unblemished with hole. These desserts were rich adequate to unblemished our meal with a flourish.

I almost forgot what was my beloved discovery of the night, something called a pink peppercorn thyme soda. This was a lovely exiguous concoction that was just adequate carbonated without being fizzy, with a clean and crisp and unusual flavor. I loved it. I would go back just for someone else taste.

We both enjoyed our meal immensely, although my husband admitted that he could have used a heartier meal after the long day he'd had. Personally, I found the amounts perfect, but I am about a foot smaller than my husband and he runs half-marathons regularly while I sit colse to and stare at my elliptical motor as though it was going to do something interesting.

I will tell you what I think is the greatest strength of Green Zebra: its chef, Shawn McClain, knows how to put flavors together, whether it's to complement someone else flavor or to accent it. Every dish we tried included some unexpected exiguous zing of something that just made it exciting. I love food, but I'm a newbie when it comes to food culture. I'm out of my element when I go to places like this. Nevertheless, the restaurant had me discussing flavor combinations as though I knew what I was talking about. It's the kind of place where you can't help but talk about the food, because it's the type of place that makes you think about the food. It makes you reconsider the ingredients separately, and together. That in itself makes Green Zebra special.

Honestly, this is a place that's a bit out of my price range for quarterly nights out. But I'm already trying to frame out which of my vegetarian friends-and which of my non-vegetarian friends, since I didn't miss the meat one bit-I should take back for a meal at Green Zebra.

Green Zebra also features a tasting menu and honors other dietary restrictions, so vegans will have no issue eating there as well. The guy who sat next to us also said the Sunday brunches there are fabulous, so that may be our next visit.

How to Cook Bok Choy

Bok choy is a leafy vegetable belonging to the cabbage family. Long customary to Chinese cooks, and to those who love Chinese food, it is showing up in a wide range of other types of dishes. In fact, in any recipe in which you would commonly use cabbage, you can probably use bok choy.

Nowadays bok choy can be found in most local supermarkets the year around. You might find it spelled as "bak choi" or even "paak choi," but "bok choy" seems to have become the preferred form in North America. Less commonly, it will go under a dissimilar name altogether; Chinese mustard cabbage, for example.

Vegetarian Dishes

Just as with other green leafy vegetables, you should look for plants that are free of brown spots and that have firm stalks. The stalks themselves will be white in color; the leaves a darkish green.

Bok choy is wonderfully nutritious. It is low in calories--about a dozen in the usual serving. It is also bursting with vitamins A and C. In fact, you could get nearly all of your recommended daily reduction of the latter in one serving of bok choy, and about a third of your Rda of the former.

Bok choy is an easy plant to prepare. Just give it a good rinsing first and you can munch it raw for a salutary afternoon snack, or chop it up and add it to a salad.

Need a quick side dish to a main meal? French-cut the stems into pieces and place them, with the leaves, in a casserole dish. Add a little water, cover the dish, and zap in the microwave for 2 minutes. remove just the leaves from the dish and zap the stems for 3 more minutes. Season both the leaves and the stems with butter, salt and pepper and serve it all together.

The most tasteless way to cook bok choy is to stir fry it, in a wok or a regular frying pan. Tear or cut the leaves and stems and place in the pan, add three tablespoons of water, and begin heating (use a medium setting) as you stir. Add some cooking oil into which you have strained some fresh garlic. remove the leaves at the two-minute mark and continue stir frying the stalks for three added minutes.

After cooking, but before serving, drizzle a little soy sauce or sesame oil over the bok choy.

You can also include bok choy in a more robust stir fry, one that contains shrimp or chicken perhaps, along with bean sprouts, snow peas and other Chinese-restaurant type ingredients.

My main advice for bok choy? Experiment! Really, it's hard to go wrong with this versatile vegetable in the kitchen.
