Noodles are the secondary Vietnamese staple next to rice of course. There are many varieties of noodles. Some are made of rice flour while others are made of egg and all-purpose flour. The noodles come in distinct sizes, shapes, and textures. In general, Vietnamese use rice noodles such as bun, pho, and mien. Bun noodles are thin and round strands like threads and are known as rice sticks or vermicelli. Pho noodles are flat and wide. Mien noodles are thin and round similar to bun but are clear or transparent instead of milky in color. Mien noodles are known as glass noodles. Egg noodles are yellow and known as mi. Each noodle has its own flavor and texture. Noodles are a great substitute for rice when one needs a change of pace. One great perk with rice noodles is that they are gluten free.
Vegetarian Dishes
Vietnamese noodle dishes are prepared in two distinct ways: wet or dry. I prefer my Vietnamese noodle dishes prepared in soups. Soups are ordinarily prepared in large quantities.
