Just Before Halloween, Great Healthy Pumpkin Stews: 1 - With Chicken, 2 - Vegetarian

Pumpkin Chicken Stew

The Ingredients:

Vegetarian Dishes

2 chopped onions
2 tablespoons of olive oil
2 cups of water
4 potatoes cut into halves
2.2 pounds (1 kilo) of peeled diced pumpkin
1 tablespoon of sweet paprika
2 tablespoons of tomato paste
3-4 pieces of chicken (for those in diet you can remove the skin)
1 teaspoon of salt

Preparation:

Saute the onions in olive oil until they turn golden. Add the paprika and tomato paste with a quarter of a cup of water. Add the pumpkin and potato, stir and cook for a quarter of an hour. Add the chicken and bring to a boil. Season with a little salt and lower the temperature of the stove. Cook for 1 hour.

Pumpkin Stew - Vegetarian

The ingredients:

2 chopped onions
2 tablespoons of olive oil
Half a cup of water
4 potatoes cut into halves
2.2 pounds (1 kilo) of peeled diced pumpkin
1 tablespoon of sweet paprika
1 tablespoons of tomato paste
1 cup of chickpeas (It is possible to use dry chickpeas and soak them in water for the night. Then cook them until they soften. It is otherwise possible to use an assortment of frozen chickpeas).
1 teaspoon of salt

Preparation:

Saute the onions in olive oil until they turn golden. Add the paprika and tomato paste with a half of a cup of water. Add the pumpkin and potato, stir and cook for a quarter of an hour. Add the chickpeas and bring to a boil. Season with a little salt and lower the temperature of the stove. Cook for 40-60 minutes, until the pumpkin softens. It is recommended to serve these dishes with whole rice. Prepare for a happy gathering and a healthy and delicious meal.

Vegetarian Borscht

Not being a vegetarian myself, and having been indoctrinated for both East and West cooking in the art of a reduced stock, it is challenging for me to cook for my vegetarian friends. In fact, I admit to being a bit vexed especially when it comes to cooking for an herbivore and omnivore mixed crowd. Upon serving certain dishes, I intone the injunction to 'love thy neighbor' to myself and refrain from saying, "This dish would have been five times better had I used beef bone, but there are vegetarians here." I usually end up in a sort of compromise where a hearty vegetarian dish is served along with a meaty counterpart. For the most part I've found that it is indeed possible to please everyone.

One of my champion dishes for vegetarian and non-vegetarian friends alike is vegetarian borscht. Borscht undoubtedly is mainly a vegetarian dish anyway, is filling and thrilling, and almost all vegetarians (except for those ultra-orthodox 'vegans') will eat at least yoghurt and usually sour cream and cheese as well. And who can resist that dollop of fresh dill spiked sour cream floating and mingling in the blood red broth of a borscht, with a de rigueur hand torn crust of pumpernickel on the side. It is indeed a festive, inspiring sight that quite simply incites hunger.

Fortunately for us stock fanatics borscht is prepared with hearty and rich root vegetables, which really stand out on their own and add wallops of flavor to the liquor. A good borsch tastes like the good earth that it came from is my motto. Finally, although borscht is perceived as yucky to beet-hating kids and pretty much forgotten about as an adult, I'm always disappointed to find I've been left with an empty pot at the end of the night, meaning no leftovers for me the next morning.

Psst! That's Vegetarian Food!

An extended family was enjoying a potluck meal that included a variety of tasty dishes to choose from. One young husband and wife were sitting next to each other at the table, and the wife was enjoying a nice serving of vegetable lasagna. She was about half done with her portion, when her husband leaned over and whispered, "That's VEGETARIAN lasagna, you know!" The wife looked at him in surprise and didn't touch another bite of the lasagna that she had been eating with such relish only a moment before her husband's startling revelation.

There have been a lot of spoofs done about the subject of vegetarian food, including one involving a jiggling "turkey" made out of tofu, and another where a romantic dinner (with a beautifully prepared roast as the main course) is spoiled by a sobbing vegetarian girlfriend. While it's fun to laugh at ourselves, and probably even more fun to laugh at the vagaries of others, it seems that there is some real misunderstanding about what constitutes vegetarian food.

Vegetarian Dishes

One of the reasons for this confusion is that there are several types of vegetarians. A number of popular movie stars have popularized the vegan lifestyle, which is a vegetarian who excludes all animal-based products from their diet, and may even avoid clothing and accessories made from animal products. Another type of vegetarian, the lacto-vegetarian, excludes meat and eggs, but includes dairy products in their diet. The most versatile of the vegetarians is the lacto-ovo vegetarians, who exclude meat, but include eggs and dairy products in their diet.

So what exactly is vegetarian food? Well, you could say that vegetarian food is all the foods that you eat that are not meat or animal based, depending on the type of vegetarian you are. If you consider the typical American Thanksgiving dinner, all of the dishes on the table, with the exception of the turkey, gravy and stuffing, are probably vegetarian foods. That means that the cranberries, sweet potatoes, mashed potatoes, dinner rolls, green bean casserole, Waldorf salad, etc. are all things that can be enjoyed by the vegetarian at the feast. Of course, a vegan will be more restricted in their choices, but even the strictest vegan can probably find enough good food to end up overfull as Thanksgiving tradition dictates.

Vegetarians tend to include a variety of foods in their diet that may be unfamiliar to the average American meat eater. These include things like tofu, Tempeh, soy-based meat analogs, and a variety of beans and lentils. They also may eat a broad range of vegetables and fruits, often including some of the more exotic varieties. Oddly enough, although vegetarians restrict their diet in terms of meat, on average, they tend to eat a much wider variety of foods from all of the other food groups than the average meat eater.

Having said that, it isn't necessary for a vegetarian to eat any of these more unusual foods. Many vegetarians don't like tofu or lentils and don't eat them. Conversely, a meat-eater may enjoy the taste and nutritional benefits of soybean curd or those tiny legumes, respectively, and include them regularly in their diet. The point is, while the vegetarian will skip the meat dishes, they can still decide which of all the other myriad of food choices they wish to consume. Likewise, meat eaters may feel free to enjoy foods, both meat-based and otherwise, with equal gustatory pleasure.

Every year on Thanksgiving Day, a concerned hostess somewhere will anxiously ask her one vegetarian guest, if he will have enough to eat. The vegetarian guest will let his eyes sweep the beautifully appointed dinner table, resplendent with a dozen or more fragrant and mouth-watering offerings, and reassure his hostess that he will indeed have plenty of vegetarian food to eat; in fact, he will have more than enough to satisfy tradition.

Vegetarian Recipes - Vital Insights to Be Aware Of

It's no secret that vegetables are packed with nutrients, vitamins and minerals that are good for the health. They are also full of fiber and low in saturated fat so they make you feel fuller for a longer period of time. Going meatless even for just two days a week positively impacts health as it promotes weight loss and reduces your risk for cardiovascular diseases and certain cancers. Vegetarian recipes are easy on the pocket, too, compared to meat recipes. For breakfast, try this oatmeal recipe: Bring 16 oz water to a boil. Put 3 ½ oz old fashioned rolled oats for five minutes. Cook it uncovered over medium heat, stirring occasionally. In a cereal bowl, combine 4 oz frozen blueberries, 4 oz frozen raspberries and 1 tbsp ground flax seed. Pour the cooked oats on top of the berries and enjoy!

A simple salad you might want to try is cucumber salad with peas. Simply combine 3 tablespoons extra-virgin olive oil, 2 tablespoons lemon juice, a teaspoon of dried oregano and ground pepper in a large bowl. Add about 4 cups of peeled and diced cucumbers, a can of black-eyed peas, 2/3 cup of red bell pepper, half a cup of feta cheese, ¼ cup red onion and about 2 tablespoons of olives. Toss ingredients to coat them well. They can be served at room temperature or chilled.

For a light mid-afternoon snack, you can try blending a banana, an apple and some strawberries together for a filling sugar-free beverage.

The best way to cook vegetables is to steam them. By cooking veggies over boiling water, the nutrients are retained and are not dissolved away in the water- as what happens when you boil them. A steamer is simply a pot with a lid and some sort of "platform" that fits inside it where the vegetables are placed. The holes allow the steam to reach the vegetables. Before steaming the vegetables, make sure that you cut them in bite size pieces and divide them in groups, using cooking time as your grouping criteria. Potatoes, carrots and Brussels sprouts take a long time to steam while bell peppers and spinach cook only for a short time. Steam those which take a long time first. Use a fork to test if they're tender enough to eat. You can also steam whole potatoes or beets and bigger slices of vegetables although this can take a much longer (10-15 minutes).

Vegetarian Chickpea Recipe - Ingredients And Directions On How To Make The Perfect Chickpeas

This vegetarian chickpea recipe uses cinnamon and lime to liven up chickpeas, which are also called garbanzo beans. Iron and protein are found in good quantities in chickpeas, along with many other important nutrients. If you have the time, cooking dried beans rather than using canned gives a really nice texture. They also retain more of their nutrients, and you can be sure that they are cooked without salt.

Using cauliflower brings some additional vitamins to the dish, and also mellows out the concentrated protein and carbohydrates of the chickpeas. Spicing up the cauliflower and chickpeas makes them taste delicious so that even the pickiest eaters will enjoy their cauliflower.

Dry chickpeas: ½ cup  or Canned chickpeas: 14-19oz can 1 tsp olive oil 1 diced onion 2 cloves minced garlic half head of chopped cauliflower Sea salt to taste 2 tsp cinnamon 1 tsp allspice 1 tsp cumin 1 lime, zested and juiced

Vegetarian Chickpea Recipe Directions

The chickpeas must be fully cooked before you begin if you are using dried chickpeas. Start them the night before and leave them overnight to soak in plenty of water. The next day, boil them gently for 1 hour without any salt. To help the digestibility of the chickpeas, you can add a bit of kombu (seaweed) to the water while they cook. Otherwise, if you are using canned, try to find a can that does not list any salt in the ingredients. Before using them, be sure to rinse and drain the chickpeas. Using a large pan heated to medium, sauté the diced onion in olive oil until softened. Next add the garlic, and let it cook until soft. Add the cauliflower to the pan and stir it around to coat it in oil. Leave it to cook until it starts to look shiny and wet. Finally, add the chickpeas to the pan. Now you can pour the salt, spices and lime zest over the whole dish. Stir everything together to combine, then pour the lime juice into the pan. If you have a lid, cover the pan and leave the dish to cook for at least 10 minutes. The chickpeas need this time to absorb the flavors of the spices and the lime. Served the dish over greens, or over a cooked grain like rice or quinoa.

Food in Thailand

Thailand is a country that is best being explored with all your senses - specially your tastebuds though! Because Thai people love their food. And if you have an adventurous tongue, then you'll appreciate the diversity that Thai food has to offer too.

Some of the most favourite dishes among foreign visitors to Thailand are Pad Thai (fried noodles), Tom Yam Kung (a sour-spicy shrimp soup), Tom Ka Gai (a chicken curry with coconut milk) and the Massaman Curry (a speciality from southern Thailand).

The probably most noticable ingredient of Thai cooking is: chili. Even though it's not an original Thai ingredient - it has just been introduced to Thailand a couple of hundred years ago by Portugese traders who brought it from South America - it's hard to imagine Thai cooking without chillis nowadays.

Fortunately for you, most Thai people nowadays know that Westerners prefer a milder taste and often have a hard time dealing with original Thai spiciness and will prepare dishes "mai ped" (not spicy) if cooking for European or American visitors.

Coconut milk is another popular ingredient. It's being made by pressing with flesh of coconuts with water, and gives a meal a nice, mild, soft, round note that counterbalances the spiciness.

Lemongrass is also a commonly used ingredient because it makes a dish taste pleasantly fresh. Different sorts of herbs like Thai basilicum, ginger, galangal, tumeric and cilantro are also commonly used. Note that in Thai cuisine, herbs are almost always used fresh, not dried. This is partly because fresh herbs tend to cool the body down in comparison to dried herbs, which often have "heating properties".

Eating in Thailand: A Shared Experience
There is a distinct difference between the eating habits of Thai people and people from European or American descent. Western people tend to order separate dishes, even when eating together. Thai people on the other hand order several dishes which will then be positioned in the middle of the table. Everybody gets his own plate of rice, and then everybody eats from these foodladen plates. It is not common to load your own food on your own table. Instead, you always take another spoonful from the shared plate, mix it with some rice, and eat it, and take another spoonful from the shared plates. Loading up food on your on plate is considered impolite for Thai people.

Vegetarian Food in Thailand?
Many people are under the impression that Thailand is a country where there are lots of vegetarians. However, this is not the case. Even most vegetarian dishes (like fried mixed vegetables) are prepared with either fish sauce or oyster sauce (both of which are made from either fermented fish or oyster essence). If you communicate that you are vegetarian however, they will prepare vegetarian food for you, but you should then learn to communicate that in Thai before arriving in Thailand.

Beancurd is most often also just another condiment in a dish, and seldom the main ingredient. Even though it is commonly used in Thailand, it most often is just added to a dish that contains meat for bigger variety.

2 Quick and Easy Vegetarian Recipes

Today I'd like to introduce you to two popular vegetarian dishes in my house, oft-requested favorites even though none of us are officially vegetarians.

Instead, we chose to incorporate some vegetarian meals into our diets purely because of the health and environmental benefits of not eating so much meat. At least, my wife decided - if it was up to me, we'd have steak everyday. Still, the benefits of eating vegetarian are obvious, but there's a heavy social stigma still attached to anything labeled 'vegetarian' and I'd like to dispel that today by showing you vegetarian food can actually be just as delicious as meat, too!

Vegetarian Dishes

Firstly, let me say I won't be using Quorn or Tofu as a meat substitute, because it isn't a meat substitute and never will be. Anyone who tells you they "honestly can't tell the difference" probably shouldn't be trusted. Instead, learn to appreciate Tofu in it's naturally form, not reconstituted and flavored to look like meat. It took me until I was 25 to learn that Tofu actually tastes nice just as it is, thanks to a devout meat-eating upbringing and vegetarianism ridiculed at the dinner table.

So what are we going to make?

Tofu BBQ Skewers:

I like this recipe because nothing can really taste bad once it's been BBQed and got a little sauce on it. It's easy to prepare, all fresh ingredients, and oh so healthy. Oh, and the kids will eat it too!

Ingredients:

- 1 pack of Tofu (may be labeled "hydrated soy" - how delicious sounding!)

- 1 punnet of button mushrooms

- 1 red and 1 yellow pepper

- Some garlic

- Olive oil

- BBQ Skewers

If you're having trouble finding real Tofu and not the imitation meat stuff, try the local Asian supermarket. They sell little packs that are the perfect size for 2 people. It comes in white squares, about an inch deep, and usually swimming in it's own juices. Lovely...

Prep is simple for this one, just chop it all up and stick it onto a skewer. Crush the garlic into the olive oil, then drizzle and coat the skewers all around (not too much). Salt and pepper to taste.

Parsnip and Parmesan Bruschetta:

An Italian snack favorite, this one is also super easy.

Ingredients:

- 1 mini ciabatta or panini roll, cut into 12 smaller sli

- 1 garlic clove

- 50g butter

- 3 large parsnips, cored and cut into 1cm cubed.

- 2 tbsp olive oil

- A handful of rocket leaves

- 50g parmesan cheese (or a vegaternative if you prefer)

Preparation:

Heat a griddle pan and toast the bread for about 2 minutes until golden and marked. Rub a clove of garlic over each piece.

Heat some butter in a large frying pan then fry the parsnips over a medium heat for about 20 minutes until they are softened. Add a little if you need. Remove and mash to a puree in a mixer. Should be served at a room temperature, so leave it to cool down if needed (or warm up if you already prepared it).

Spread the parsnip on the toast, and garnish with some rocket leaves and parmesan. Voila! A deliciously easy canapee for your party!

Delightful Vegetarian Dishes

If you are a vegetarian, then you know how difficult it is to come up delicious meals that your whole family can enjoy. The average American eats meat every single day, and it is hard to compete with that craving of heavy flesh that is inherent in people. However, you can wow your family and friends with a few of my favorite vegetarian dishes, which are not only delicious, but extremely healthy.

For today's meal, we will discuss making two main courses of vegetarian Pad Thai, with a side of stuffed peppers, finishing with carob chocolate chip cookies. This meal is designed for four to six people, with a variety of foods, tastes, and diets. It is always important to have something everyone will like, so no one will leave the table with an empty belly. 

Vegetarian Dishes

First let's talk about the Pad Thai. To create this meal you will need, rice noodles, garlic, a red bell pepper, 2 tomatoes, snow peas, tofu, soy sauce, lime juice, cilantro, cashews, scallions, and fresh bean sprouts.   To create this sumptuous meal, you may need to buy a large wok, or just use a maneuverable frying pan in which you can evenly cook all the ingredients.  Cook the noodles separately and stir consistently so that they do not stick together. Use the wok to stir-fry your ingredients and tofu for about 4 minutes, or until everything is well cooked. Put the two together, adding your soy sauce, lime juice, cashews, and the rest of the toppings, and voile, your vegetarian Pad Thai is finished. This meal only has about 300 calories per severing, and only one gram of saturated fat. 

Stuffed peppers are a particular favorite of mine, because it is a dish found all over the world in so many different cultures. To create this dish for your family you need "veggie ground round", 3 bell peppers, orange or yellow, olive tomato sauce, an onion, garlic, a cup of already cooked rice, olive oil, and dried oregano. Cook your rice, onions, and garlic for about 5 minutes, then add in the veggie ground round and the oregano. Prepare your peppers by slicing them in half. Stuff your cooking mixture into each pepper half, and place them into the oven. Cook for twenty to twenty-five minutes and then serve hot.

For dessert, cookies are always a good option. Pick your favorite chocolate cookie recipe, use no fat butter, or oil for substitute, and then use carob chips. These only have 50 calories per cookie, which mean they are an innocent dessert for your diet!

Oh, Crap! A Vegetarian is Coming For the Holiday Dinner

This time of year always makes me uneasy. You know that feeling in your stomach that is a mix of excitement and nervousness? The holiday season is filled with family laughing, children playing, rejoicing, offering thanks, singing, opening gifts, tasty morsels of vegetarian delicacies, seeing childhood friends, scents of peppermint and spice and... meat! UGH.

Each year, I so look forward to getting together with family and spending time with those that I love; yet, at the same time, I anxiously dread the celebratory dinner meal. Being vegetarian during this time is very difficult. And, it isn't just me; my lifestyle seems to make others a bit uneasy too. The big bird or round roast on the table makes me so uncomfortable along with the distinct odor it sends soaring into the air.

Then there is the questioning, and the looks that make you feel like such an outsider. "Why are you vegetarian?" "You won't even eat chicken?" "Do you know what you are missing?" Now, no one tries to make me feel bad, but it is just natural to feel uncomfortable when it is so clear that you are the odd (wo)man out. But the worst part is that you know that the host is nervous b/c he or she doesn't' know what to serve to accommodate your vegetarian needs. I never want to make anyone else feel badly because of my nutritional decisions. But, I can usually see it in someone's face during the holiday dinner...."oh, crap. a vegetarian is coming for dinner."

What is the solution to this vegetarian holiday dilemma? Well, I am not sure. But, for the first time, this year, I have declined on the family invitation to dinner and am going to stay home to make a smorgasbord of vegetarian dishes including a vegetable wellington, cranberry/apple stuffing, green beans, butternut squash casserole, cranberry sauce and lots of other dishes.

Then, I will go to the family celebration for dessert, where I will bring a vegan delicacy that will knock the socks off of everyone! This way, we can have all the fun of laughing together, opening gifts and being grateful for our life's' blessings without having to be uncomfortable because of culinary preferences. Now, I don't know if avoidance is the right solution, but I certainly am thankful this year that I can give it a try!

Vegetarians are now becoming increasingly popular due to the amount of new foods available to choose from and the acceptance that it is a choice and sometimes a belief of many people in today's society.

At home and in major supermarkets, contributors have excepted the need to supply vegetarian options such as quorn, new microwave meal, veggies pies etc but what about when out and about in concerts, pubs and dinning places.

Do people consider the correct way to handle and prepare vegetarian food and do they offer a wide range of choices and options.

Cafes:

Cafes that offer breakfast and many other assortments of food such as sandwiches, cakes, parties and many more now do seem to consider vegetarian options. A popular choice on the list for vegetarians' is the veggie breakfast that contains either just no meat, or a choice of a meat alternative such as, quorn sausages or quorn bacon.

At lunch time however the choices are a bit smaller as the need for vegetarian foods seems to be overrun with bacon butties and sausage sandwiches.

At concerts when out and about, this is the most limiting as the place in which to cook vegetarian food has already been contaminated with the meat. The grills cannot cook veggie products on it as the meat has its oil left on the grill; this also includes any onions and mushrooms too.

Usually pre-packed food such as a cake or crisps can be purchased.

Pubs and restaurants:

What Are the Different Types of Lentils?

Though there are a number of non-vegetarian dishes, nevertheless majority of Indian cuisine is predominantly vegetarian in nature. As a result, foods like lentils are a major source of proteins in this cuisine. They belong to the legume family and are a rich source of fiber and protein. Lentils also helps in preventing spikes in the blood sugar and are well endowed with B group vitamins.

Here is a brief summary of different types of lentils used in Indian cooking:

1. Black-eyed pea: These lentils are known by a variety of other names like Crowder pea, Cowpea, Black-eyed pea. In India, they are called Lombia or Lobhia. 4. Pigeon peas: No-eye pea, Angola pea, Congo pea are some of the well-known alternative names for pigeon peas. Also known as toor daal or arhar daal in India, these lentils are used across the length and breadth of India. Besides being an important part of the North Indian cuisine, they are particularly preferred in South Indian soups like Sambhar and Rasam. This has a nutty, sweet flavor and is ochre colored.

5. Moong beans: These small beans are greenish-yellowish in color. There is a significant amount of difference in the split beans and the whole beans. These are easy on the stomach and can be combined with a number of vegetables and spices for a variety of preparations. The split Moong daal is yellow in color and is known as dhuli Moong in India. They are hulled and used in a number of spicy curry preparations and dhals.

6. Red Kidney beans: Popularly known as rajma, these are a hot favorite in North India. The rajma curry is often combined with rice and is a complete source of protein.

7. Masoor daal or red lentils: Red lentils are known for their nutty taste and used in a variety of spicy dhals, soups and stew recipes.

8. Urad daal or black lentils: Apart from being used in curry preparations, these lentils are used to make poppadums and dosas, which are the well-known South Indian pancakes.

The Disadvantages of Being a Vegetarian

If you've ever seen the movie "When Harry Met Sally," you'll remember how annoying Sally is to her fellow diners whenever she orders a meal:

Sally: "I'd like the chef salad please with the oil and vinegar on the side and the apple pie a la mode. But I'd like the pie heated and I don't want the ice cream on top I want it on the side and I'd like strawberry instead of vanilla if you have it if not then..."

It's okay that you thought about being a vegetarian and you aren't. We don't miss eating meat because not eating it is a choice, not a struggle. And finally, despite what you may think, we don't like talking about our food philosophy all the time because it really isn't all that interesting. We just don't eat meat.

How to Prepare a Hearty Vegetarian Meal

Preparing a vegetarian meal is no different from preparing a non-vegetarian meal. All the basic cooking techniques still apply to vegetarian cooking; like baking, roasting, braising, stewing, steaming, grilling, boiling and frying.

The only difference is there is no meat involved in vegetarian food preparation. So, how do you prepare a vegetarian meal? How do you get that same satisfaction of a meaty meal from vegetarian cooking?

Vegetarian Dishes

When you make the transition to vegetarianism, you need to change your attitude to what constitute a meal. For a long time meat has been the pivotal anchor in our cooking tradition, and vegetables have always been relegated as side dishes or accompanying dishes.

But how do you change that outlook? In vegetarian cooking there is no one central vegetable around which a meal is based upon. A vegetarian meal is made up of many different vegetables, in addition to grains, lentils and pulses, which is not that dissimilar to non-vegetarian cooking. In fact most meat-based dishes can be easily adapted to a vegetarian version.

Tempeh, which is made from fermented soybeans, is very versatile. It holds it shape very well while being curried, grilled, stewed, baked, fried and even barbecued. It is also rich in beneficial enzymes, amino acids and protein. This makes it a perfect substitute for many meat-based dishes.

Tempeh can be crumbled to resemble minced meat and used in pasta sauce as a meat alternative. For a classic Tempeh au Vin, cut it into chunks and stewed in red wine along with carrots, celery and potatoes, It can also be thinly sliced marinated with soy and honey and grilled until golden and crispy. Grilled sliced tempeh makes great sandwich filling.

Crumbled tempeh also works well in other meat-based traditional dishes like lasagne, moussaka and shepherd's pie. Cut into bit-size cubes for a hearty vegetarian version of steak and kidney pie. Tempeh is also good in vegetable curries and stir-fries.

By substituting meat with tempeh it is possible to create that satisfying meaty feeling in vegetarian cooking. Over time, the meat craving will dissipate and by then tempeh will become a staple item in your vegetarian fridge.

South Indian tamil Brahmin cooking is purely vegetarian. A typical meal consists of more than a couple of vegetables and various Indian spices. Spices play an important role in the cooking -- and it has been like this for many hundreds of years. Best Vegetarian Dishes - My Experience With Vegetarian Dining

It seems the more I listen to the news and read the papers, the more I start hearing about tainted or spoiled meat getting into our food supplies. One has to wonder just how safe our meats are, especially with some of the hormones they are putting in them. I looked for an option, and decided to look into cooking some healthy vegetarian dishes for a change.

Now mind you, this wasn't an all out decision to become a vegetarian, as some of my prior experiences with vegetarian dining were quite distressing. But this time I decided it would be different, and I would do some research prior to running up the grocery tab.

Vegetarian Dishes

Initially I thought that going to my local library would provide all the resources I would need in regards to vegetarian recipes and cooking, but then I thought I would go one step further. Why not visit a vegetarian restaurant! Easier said then done, as it took hours of looking through the yellow pages along with surfing the web, before I was able to locate some sources in close proximity.

The first restaurant sounded right on target, "Best Vegetarian". I thought, "How could I go wrong with that?" Well unfortunately the name didn't live up to the food. It was a quiet Wednesday night when I visited, so waiting for a table was not an issue. The waiter was quite polite, and the menu was pages in length. As I browsed through some of the entrees, my eyes came to rest on "vegetable lasagna". Yes, just what I was in the mood for.

The meal arrived quite quickly, (I should have taken this as a clue), and it actually looked quite tempting. Unfortunately as I dug in, my fork seemed to get stuck in this thick "goo" that was similar to mending putty. The vegetables were slightly cooked, if not raw, and the sauce was definitely right out of a jar. Soon after, I realized that this was nothing more then a "frozen entree", that was probably purchased at a local store. Who said vegetarian dishes had to be fresh.

Well anyway I left quite discouraged, but determined to do more research on vegan dining, and cooking. This time I thought I might go the "library" route, and see if I could find some great vegetarian recipe books. After all, they say a picture is worth a thousand words.

West African Vegetarian Pepper Soup with Black-Eyed Bean Cakes

West African cuisine is unusual in that though meat is a rare and expensive commodity and, as a result most dishes are heavy on vegetable components it's still difficult finding a truly vegetarian dish. Part of the reason for this is that dried fish, fish heads and meat off-cuts as well as animal feet and tails are often used as flavorings for the basic stocks in just about every recipe. The same is true of that most classic of all West African dishes, the chili-laden 'Pepper Soup'.

Recently I was working on a West African themed meal for a number of friends an family. However, several of the guests were vegetarian and I found myself in the unusual position of needing to make a vegetarian version of Pepper Soup. The basis for this recipe is my wife's basic Pepper Soup stock (she is Liberian) and a West African recipe for for Moy-Moy (black-eyed bean cakes). The resultant recipe is given below:

Vegetarian Dishes

For the Moy-Moy

500g black-eyed peas (Akara)

salt and black pepper to taste

What you actually need is Akara powder (black-eyed bean flour) but this is difficult to find. Simply add the beans to a coffee grinder and render to a smooth paste. Tip this paste in a bowl and slowly add just enough water so that you have a smooth, thick paste. Cover with a cloth and leave for an hour. During this time the beans will absorb some of the water and swell. Just add a little more water to return the mixture to a smooth paste then season with salt and black pepper.

You can use the paste immediately, but it tastes much better if left in the fridge over night (the flavour will intensify). When you are ready to use the mixture, stir the batter vigorously to remove air bubbles then grease the bases of the wells in a muffin tin and scoop the mixture into the wells (filling no more than 3/4 full); the mixture should be enough to fill at least five wells. Place the muffin tin in a large baking dish partly-filled with water. Cover with foil and then bake in an oven pre-heated to 190°C for about 50 minutes or until cooked through and firm. (Test by inserting a skewer into the middle of one of the cakes. When the skewer emerges cleanly the cake is done.)

Allow to cool then set aside. Quarter the bean cakes and deep fry in oil before adding to the pepper soup.

For the Pepper Soup

20 Scotch Bonnet Chillies

Juice of 1 lime

vegetables for stock (any mix of carrots, onion, courgette, collard greens, broccoli stems, celery)

1 small tin tomato paste

2 onions, roughly chopped

1 tsp black pepper

1/2 tsp salt

vegetable oil

12 cloves garlic, finely chopped

First make a fish stock by gently frying 6 cloves of garlic, diced carrots, roughly chopped onion, courgette slices, broccoli stems and chopped celery in a little oil until the onion is soft and translucent. Add about 2l water and bring the mixture to a boil. Reduce to a simmer and allow to cook for 30 minutes. At the end of this time pass the stock through a strainer into a clean pan and push as much of the vegetables through the strainer mesh as you can.

Take 12 of the chillies and add to a large pestle and mortar. Pound to a rough paste then add the chopped onion and pound this in to form a paste, along with the black pepper and remaining garlic. Pour 60ml of oil in a pan and ad the chilli paste. Fry for a few minutes (about 5) then season with salt and transfer this mix to the pan with the vegetable stock. Add the remaining whole chillies and bring to a boil. Reduce to a simmer and cook for about 30 minutes.

At this time add the deep fried Moy-Moy and the tomato paste and cook for a further 10 minutes, or until the bean cakes have cooked through. Serve in a large bowl, accompanied by rice.

Traditionally the guests would spoon the soup into a bowl and mash the whole chillies with a fork before eating.

Admittedly this is a very hot dish, but it has one remarkable property in that it brings out the full flavour of the Scotch Bonnet chillies (and they are very tasty cooked this way). In West Africa this soup or its variants are used as a general pick-me-up and whenever someone is feeling under the weather then the soup is prepared as a general 'pick-me-up'.

This pepper soup truly offers the real taste of West Africa and a version of this is known from just about every country in West Africa. If you wish you can, of course use the basic pepper soup recipe but substitute deep-fried fish or chicken pieces instead of the deep-fried black-eyed bean cakes.
