The Disadvantages of Being a Vegetarian

If you've ever seen the movie "When Harry Met Sally," you'll remember how annoying Sally is to her fellow diners whenever she orders a meal:

Sally: "I'd like the chef salad please with the oil and vinegar on the side and the apple pie a la mode. But I'd like the pie heated and I don't want the ice cream on top I want it on the side and I'd like strawberry instead of vanilla if you have it if not then..."

It's a lot like that when you're a vegetarian.

Vegetarian: "I'd like the turkey Caesar salad please, but without the turkey, and a cup of mushroom soup. Does the dressing have anchovies? If so, skip that and just oil and vinegar on the side. And does the soup have a beef broth? If so, I'd like a side of spinach, but only if it doesn't have bacon bits on it."

By now everyone at your table is rolling their eyes and scanning their watches, anxious to just place their order..."I'll have the Number 5."

In a meat-eating world, the disadvantages of being a vegetarian are as numerous as the kernels on an ear of Silver Queen corn. They especially mount up when you eat out.

Dining Dilemmas
Few restaurants cater to your tastes, and so menu choices generally are limited to what can be taken OFF an entree rather than what inspired creation can be put on your plate. There are HUNDREDS of vegetables in the world and THOUSANDS of ways to prepare them, yet we vegetarians usually are relegated to a few salad and pasta options while we listen to the waiter present a dizzying number of specials to the carnivores. Making a final selection means bringing unwanted attention to yourself as you ask what's in, on, under or around the meal you're considering. You never can be sure where they'll hide the meat. And in a case of less really is more, many restaurants have a "no substitution" policy, which means you pay the same for a turkey-less turkey Caesar.

Questions, Questions
While restaurant ordering tops the list of disadvantages of being a vegetarian, there are others. When you don't eat meat, you're an oddball, a Ripley's curiosity that makes onlookers uncomfortable and inquisitive. "What do you EAT, then, if you don't eat meat?" (Um, everything else.) "Where do you get your PROTEIN, then?" (Beans, dairy, seeds, nuts, tofu, vegetables, fruits - many foods besides meat are protein-rich). Why, people want to know, don't you eat meat? When's the last time you ate meat? Don't you miss it?

Vegetarians Are People, Too
The main disadvantages of being a vegetarian are the misconceptions. When you invite us to dine in your home, you don't need to make nine vegetable dishes to make up for the one meat item we're not eating. It's okay that you thought about being a vegetarian and you aren't. We don't miss eating meat because not eating it is a choice, not a struggle. And finally, despite what you may think, we don't like talking about our food philosophy all the time because it really isn't all that interesting. We just don't eat meat.

Let there be peas on earth.

Applebees Nutrition Information - 5 Healthy Dishes

Applebees nutrition information is wide-ranging depending on what kind of food strikes your fancy. They have a wonderful menu full of tantalizing and tasty dishes to treat any palate. Maybe that's why Applebees is one of the countries most popular restaurants. Who doesn't like eating at Applebees, raise your hand? No takers, huh? Below are five low fat, low carbohydrate meals. If you like to cook, you can also prepare many of these great recipes at home.

Applebees Nutrition Information on the Cajun Lime Tilapia:

Tilapia is a great tasting fish and is also heart healthy. The Cajun drenched tilapia filet is flavored with generous amounts of limejuice and has 310 calories and six grams of fat. It is served with rice pilaf and vegetables in season. This tilapia meal has two grams of protein.

This sounds like an easy dish to prepare at home. Wash fish and pat dry. Dip each filet in a beaten egg and then in Cajun seasoning. Sprinkle each filet with limejuice and bake or broil in the oven for 15 minutes. Serve with a side of brown rice pilaf and a green salad. How easy is that?

Applebees Nutrition Information on the Grilled Citrus Chicken Salad:

Citrus flavored grilled chicken served on a bed of greens. This also seems like something you could easily create in your own kitchen if you wanted to. Use boneless chicken breast and marinate overnight in your favorite citrus juice such as lime, lemon or even orange juice.

Turn on the barbeque and grill each breast for ten or fifteen minutes on each side. Don't forget to salt and pepper while grilling. My mouth is watering thinking about this grilled chicken. Cut into bite sized pieces and add to your favorite greens. For the dressing be sure to use a citrus base to help bring out the chicken's wonderful flavor of marinade.

Applebees Nutrition on the Mesquite Chicken Salad:

Applebees has such a varied menu. You can choose a quesadilla burger at 518 calories or you can choose mesquite chicken salad, which only has 200 calories. Which works best for you? This salad has the least amount of calories than any other item on the menu. You can buy mesquite flavoring in the seasoning section of most grocery markets, or mesquite chips for the barbeque and make this chicken dish at home.

Applebees Nutrition on the Southwest Cobb Salad:

The southwest cobb salad has a bit more calories than some of the other dishes but sounds so good I had to tell you about it. This is grilled chipolte chicken, shredded cheese, and corn served on a bed of mixed greens. To give this dish fewer calories you could easily substitute the cheese for a vegetable. This is a healthy dish with about 440 calories and no carbohydrates, which is a friend to those on the Atkins diet.

Applebees Nutrition Information on the Grilled Shrimp Skewer Salad:

If you like shrimp, this dish is for you. As you can see, Applebees does offer quite a selection of flavors. But if you want to stay light and healthy you will want to stick to the fish and chicken dishes. The shrimp skewer salad only has 210 calories, 8 grams of carbohydrates and 2 grams of protein. Very healthy and very light dish.

Keep in mind that the nutrition information listed for these meals only include the fish and chicken of that meal and not the side dishes such as rice or vegetables. If you like eating out you can find healthy eating at Applebees.

How to pick the Right Wine to Pair With Your Food

Here's how to start:

Step 1: determine what you are going to eat.

Vegetarian Dishes

This includes main dishes, appetizers and desserts. Will the taste and color be light or dark? Seafood, chicken breast, white sauces and vegetables are ordinarily light. Beef, pork, duck and red sauces are ordinarily dark.

Step 2: determine how the food will be prepared.

What marinades and spices will be used? What types of oils or sauces will it be cooked with? How will it be cooked; baked, grilled, roasted or fried? Will the dish be bold and zesty, heavy or light?

Step 3: White or Red wine?

Write down or mentally note the contents and characteristics of your meal and determine what class it falls in, dark in color and heavy in body, or light in color and light in body. A straightforward guide is the color of the dish can be paired with the color of the wine. The heaviness or body of the dish can be paired with the body of the wine. Try to make the wine at least as heavy as the dish. As a basic rule of thumb, you can unquestionably use a heavier wine than the dish but try not to use a lighter wine than the dish.

Step 4: Get to know the typical white wines.

Sparkling wines, champagne: Pair with seafood, or serve after oysters, lobster, crab or fish to cleanse the palate. Sparkling wine is also great for brunch or with refreshments such as almonds (raw & unsalted) or light fresh fruits such as pears, strawberries, raspberries, oranges or kiwi Sauvignon Blanc: Pair with chicken and white fish, light preparations of pork, salads. Also works well with nuts like almonds, cashews and walnuts. Pinot Grigio, Riesling: Pair with spicy foods (excluding black pepper), salads, light chicken or pasta with light white sauce (such as linguine with clams). Chardonnay: Pair with heavy white sauce pasta, salad with medium bodied cheese accents (such as Feta or Gorgonzola), or sauteed white meat dishes.

Step 5: Get to know the typical red wines:

Pinot Noir: Pair with light pork dishes, dark meat chicken or hearty chicken dishes, or vegetarian or white meat red sauce pastas. Merlot: Pair with beef, pork, heavy red pastas, salmon or appetizers. Cabernet Sauvignon: Pair with dark red meats, strong cheese such as bleu cheese or sharp cheddar, or milk chocolate.

Bonus: If you want to play it safe you can try the following cheeses that pair with any wine: Brie, Fondue Cheese, Parmigiano-Reggiano, Gruyere, and Mitica.

Portuguese Recipes

Portugal is a relatively isolated country in Europe. It shares its only land border with Spain. It is also a nation that has a very rich and long maritime tradition, and many links to the wider world. As a result, Portuguese cuisine is surprisingly different from that of other European countries, and is influenced by contacts with the East Indies, the Far East, Africa and the New World. Portuguese food is particularly known for its extensive use of fish and seafood (including salted cod), as its use of spices to enhance the flavor of many dishes.

Some popular Portuguese foods include:

* Cozido á portuguesa - This is a traditional meat stew. It is usually made from beef or pork, but sometimes chicken may be used. Portuguese smoked sausages are also usually used in the recipe, as are cabbage, carrots, potatoes, turnips and rice.

* Bacalhau - Bacalhau is cod that is preserved by salting. It is actually used for many different dishes, and can be prepared in numerous different ways - according to some people, over a thousand different ways.

* Caldeira - This is a traditional Portuguese stew. It contains several types of fish, and sometimes shell fish as well. Vegetables such onions, potatoes and tomato and also used in the dish. Caldeira is generally flavored with herbs and spices, although the particular choice of spices does to some extent depend on the chef's preferences, and the region. Spices that may be used, include allspice, cloves, curry powder, ground ginger, nutmeg, piri-piri, and saffron.

Paella: A Traditional Spanish Dish

Paella is one of the best known of Spanish dishes. The dish originated in the Valencia region and spread throughout the country and around the world. The original dish was very simple, using any meat and vegetables that were available. As the popularity grew and the dish spread, many variations have been seen.

Basic Paella Recipe

A basic paella recipe is cooked in a paella pot. This is a large, flat, shallow pan. These pans can be found in kitchen stores or on the internet. The original recipes call for the dish to be cooked over an open flame. Most people now cook it on the stove top. In some areas, the open fire method is still used.

There are three main ingredients in a basic recipe. These are rice, olive oil and saffron. The dish is garnished with both fresh vegetables and rice. The original dish called for whatever meats and vegetables were available. There are many variations of the dish using different meats and vegetables.

The basic recipe calls for the meat and vegetable to be stir fried in olive oil. Once this is done, the rice is added to the pot. The boiling stock is added and the mixture is boiled. When the rice is cooked, the pan is removed from the heat. Once the dish is removed, you need to allow time for the rice to absorb the excess liquid.

Origins and Variations of Paella Recipes

This dish originated in Valencia. Traditionally, people used any meat they had available. In the coastal areas, seafood was often used. In other areas, rabbit or duck were commonly used in the dish. The one constant was that only Valencia rice was used. This dish was often eaten on Sundays with friends and family.

The recipe for paella spread from Valencia to other areas of Spain and then it spread through the Philippines, South America and North America as people travelled to and from Spain. As the popularity of the dish spread, more variations were seen. The preparation and serving became more elaborate.

There are several variations of the recipe throughout the country. A variety of locally caught fish is used in the coastal areas. Shellfish paella is another common variation in the coastal areas of the country. There are some less common, but still somewhat popular variations in other areas using rabbit, lobster and mussels.

Large pans are used to cook the dish for crowds. The dish is often served at festivals, parties, political campaigns and reunions. At these events, a very large pan is used. The dish is cooked over a fire outside at these events.

People in Valencia continue to take this dish seriously. There are two types of rice that are used. The dish is served with either red or white wine, depending on the ingredients used in the particularly recipe. The pan is placed in the center of the table and guests serve themselves.

Paella is one of those dishes that are excellent when eaten the next day. As the dish sits, the flavours have a chance to mix together and get stronger. As you travel through the country, sample the local dishes. Collect recipes so you can try your favourites at home.

Vegan Chocolate Brownie

As a new vegan, I was apprehensive about baked goods. Every success seemed like a miracle, so it was only a matter of time before I was underwhelmed. I was heavily reliant on Colleen Patrick-Goudreau's The Joy of Vegan Baking, as I still am. She is surely the best beginning point for kind treats. However, her brownie recipe is not perfect. I was skeptical when I saw the applesauce and flaxseed in this recipe (I have all the time shuddered at healthifying my desserts), but I was new to this and Colleen was my guide, and I didn't know sufficient to ask questions.

Well, that was 7 months ago. This was not a bad brownie, but it wasn't a great brownie. I also comprehend that I have incredibly high standards for brownies, and am not satisfied with your midpoint offering. So, if you aren't as invested in a excellent brownie, then you may be happy with some of the recipes you'll see along the way. But, my journey is far from over. I have had some promising results, and some very disappointing ones, but it is all a step on the path to my dream brownie. So, result along with me on this decadent, dramatic, occasionally disappointing, but finally triumphant adventure!

Vegetarian Dishes

I've decided to furnish all the recipes, even for brownies that I deem unsuccessful, as it may aid you in adjusting the recipes to your own liking.

Chocolate Brownies

from Colleen Patrick Goudreau's The Joy of Vegan Baking

1 1/2 cups sugar
3/4 cup unsweetened applesauce
2 tablespoons water
2 teaspoons ground flaxseed (grind in a coffee grinder or spice mill; measure after it's ground))
1/2 cup water
2 teaspoons vanilla extract
1 1/3 cups all-purpose flour
3/4 cup unsweetened cocoa powder
3/4 teaspoon baking powder
1/4 teaspoon salt
Optional:
1 cup semisweet chocolate chips
1 cup chopped nuts

Heat the oven to 350º. Grease an 8" x 8" baking pan. Couple applesauce, sugar, and 2 tablespoons water in a medium bowl. In a food processor or blender, blend the ground flaxseed and 1/2 cup water. Add this and the vanilla to the applesauce mixture. In a large bowl, mix the flour, cocoa, baking powder, salt, and chocolate chips and nuts, if desired. Add the applesauce combination to the flour combination and stir. Pour into the pan and bake for 40 minutes, or until a toothpick inserted comes out clean. Bake longer if a cakier stock is desired. Cool before cutting and serving.

The health Benefits Of Tofu Food

Vegetarians have long reported the benefits of tofu food - a soy stock that is often used as a meat alternative in a range of dishes. But the benefits of tofu food have reached beyond the vegetarian community as more and more health-conscious eaters have turned their attentiveness to this versatile product. Tofu food lends itself to a range of yummy uses and, as such, continues to be a staple in many household kitchens.

Made from soybean curd that is pressed into blocks, tofu food has a range of uses depending on its different moisture content. Derived directly from soy milk, soft tofu contains the top moisture article of all varieties of tofu. Its texture is likened to custard and as such it lends itself to a multitude of dessert recipes. Firm tofu contains less moisture than its soft counterpart and because it can hold its shape great is often used as a staple in most tofu food recipes. Dried tofu is very low in moisture likening it to cooked meat. Most cooks use this tofu food crumbled, sliced, or formed into noodles. Tofu food also has the potential to be frosty - or made into a puree - so that it can be used anytime throughout the week in anyone capacity it is needed.

Vegetarian Dishes

But the versatility of tofu food finally lies in its flavor - or lack thereof. Tofu precisely has very little of its own natural flavor. Instead, it absorbs the flavor from the other ingredients in the dish. Served in soups, as a filling or stuffing, raw, stewed, fried, or grilled, tofu food can be used in a multitude of cuisines.

But most importantly, the health benefits of tofu food are difficult to ignore. Low in calories and high in protein, tofu contains no cholesterol and in some cases has been shown to cut the risk of heart disease. It's no wonder that more and more citizen have begun to comprise tofu food as a part of their salutary lifestyle.

This is something that all chefs learn to do very early on in their careers and it is what allows them to make fancy dishes out of just about anything.

The key to delicious meals that take little to no time to prepare is understand the most important ingredients in any meal. It does not matter if you only eat meat or if you are a vegetarian. It does not matter if you have certain dietary restrictions or are trying to lose weight. Every dish has a crux and that is typically a meat like chicken or beef or a vegetable like eggplant or mushrooms. If you have these ingredients, then you can whip up just about any meal in less than 20 minutes. If you don't have those ingredients, that is not really a problem because they are inexpensive to buy and every store has them.

So now that you know what the heart of all delicious meals is, you need to learn how to spice them up. With beef, you really don't need to do much, which is why it is the favorite of most chefs. It is flavorful enough that simply adding a pinch of salt and some vegetables can either make a delicious burrito or a tasty salad. Chicken and the vegetables like eggplant and mushrooms require a little extra love, but that is not a problem. It won't take much time to add in a little olive oil, some rosemary or basil, and some salt.

With chicken, eggplants, and mushrooms you can either make a sandwich out of them or you can add rice or pasta for a full on meal that will satisfy even the hungriest children. You cannot lose with rosemary and basil, because they are strong enough to add a great deal of flavor and just about everyone likes the way they taste.

Southern Style Potato Salad

Sweet iced tea, honey glazed ham, and potato salad are items that make up a typical lunch or supper served in the south during the spring and summer months. Potato salad has a long and historic past with roots that reach back to Germany. Throughout the centuries this warm salad traveled with immigrants all over before it settled in America. Upon its coming it became hugely popular, however not by all. Like the French, the Americans chose to serve potato salad cold and with a French creamy dressing of whipped eggs, oil, and herbs.

Although there is no recorded history as to when this method took on its new southern look and taste, many suppose that it occurred during the early 1900s. during this time the dressing mentioned above became advanced and widely known as mayonnaise. Among mayonnaise, there were many other additions that helped to moderately change this Germanic method into a charming dish that is now thought about the cornerstone of all things southern.

Vegetarian Dishes

This style of potato salad is unique because for it to be truly southern, there can only be six ingredients. Those ingredients are potatoes, hard-boiled eggs, onions, sweet pickles, mayonnaise, and yellow mustard. There are many variations to this recipe, however this method is thought about to be what many call "the way Grandmother use to make". Cold, creamy, and nothing else but delicious, southern style potato salad is typically found palatable by those living in southern United States.

When preparation this potato salad, choose the potatoes carefully. Small varieties are best, and they should be drained well. The guess for this is so that upon adding the mayonnaise it does not come to be soupy. Also, remember that less is all the time better. Once ingredients are added they cannot be removed. As for the onions, eggs, and sweet pickles, these should be approximately chopped.

As for herbs and spices, this is commonly done by personal taste. Dill and parsley can be added sparingly, where as salt and pepper are a must to improve the flavor of the potatoes. For a finishing touch, paprika is sometimes sprinkled atop the dish before it is served to give it a pop of color and spice. Southern style potato salad is a astonishing method that tastes old-fashioned and is packed full of memories, especially for those who played under weeping willow trees when they were little. After you have mastered a few straightforward recipes you can experiment and create your own variations of this appetizing dish.

Real Southern Fried Chicken Recipe

Real Southern Fried Chicken is a dish often imitated, but seldom duplicated except in the kitchen of a good Southern cook. You will see many restaurants advertise Southern Fried Chicken but if you have ever had the real deal, you will be disappointed in what they offer.

Here is the secret. Simplicity and cooking technique. Real Southern Fried Chicken is very
simple with few ingredients. It's when you start adding enhancements that you begin to turn it
into something that does not even resemble Southern Fried Chicken. So, keep it simple.

Ingredients

Fresh, cut-up chicken
2 cups flour
1 tablespoon salt
1/2 tablespoon black pepper
1 whole egg
3/4 cup milk (I prefer buttermilk but you can use regular milk)
Cooking oil as required (see following)- (I like Corn Oil or peanut oil)Directions
Using a large frying pan (cast iron works best), fill with enough cooking oil to provide about
3-4 inches oil depth in the pan.
Place frying pan on stove top burner on medium-high heat
In a medium size mixing bowl, combine egg and milk, mix well
On a large plate, combine flour, salt, pepper, mix well
Wash chicken parts
Dip each chicken part in the egg-milk wash, then roll in flour mix to coat on all sides
Check oil temperature (place handle of wooden spoon in oil. You should get bubbles rising around the handle)
Place chicken parts in frying pan (should not be touching each other)
Fry chicken on first side 1 minute then turn to other side for 1 minute
REDUCE HEAT TO MEDIUM
Continue to fry on each side until golden brown
Should take about 5-7 minutes first side and 4-5 minutes other side

Tip: Even though you have a golden brown crust on the outside, the inside may not be fully cooked,
especially if you are using frozen chicken which you defrosted. When you have a golden crust, cut
deep into one of the thickest pieces with a sharp knife and observe for any pink coloring.
If pink (or red) continue cooking (reduce heat slightly). There should be no pink!

Refrigerate left overs for up to 2 days. Although it will lose it's crunchiness, cold fried
chicken is very tasty the next day. I would not re-heat it. I like it served cold the next day.

Fried chicken goes with nearly any vegetable but I like to serve with turnip greens, black eyed peas and cornbread. You can find authentic Southern recipes for all these dishes at olsouthrecipes.com (see below). In the summer, when fresh vegetables are available, I like to also include baby green onions and radishes served on the side. And do not forget a tall glass of iced tea to wash it down.

Give the Southern fried chicken recipe a try and enjoy.

Chinese Fried Rice - How to Make Fried Rice

Chinese fried rice is one of the most popular dishes ordered from Chinese takeout restaurants and a lot of population wonder how to get the great flavor and texture of this phenomenal dish. If you enjoy making fried recipes like a southern fried chicken recipe or chicken fried steak, you will enjoy making this tasty Chinese dish. Fried rice is so simple to make and it is the excellent accompaniment to any Chinese meat, fish, or chicken dish.

This recipe is a great way to consolidate leftovers. Using leftovers means there are infinite possibilities if you want to make something easily flavorful and distinct countries have their own versions of this dish. Indonesian fried rice is distinct from the Thai style dish, for example.

Vegetarian Dishes

Cooking Tips for This yummy Dish

Use steamed or boiled white rice to make this dish. The key to a good dish is to use chilled rice. If you use it freshly cooked, it will not taste authentic or have a good texture. Chilling it overnight gets rid of excess moisture and makes the grains firm and therefore easier to separate. Cooking with fresh grains means you will get mushy results. If you do not have a whole day, make sure it can cool for a few hours somewhere cool before you use it.

The wok has to be very hot so the soy sauce gives flavor to the dish, rather than making it soggy. Also, a layer of oil in a hot wok will dance nearby and generate a nonstick coating. If the wok is not sufficiently hot, the contents will stick to it.

You can use any leftovers you want in this recipe. What about some leftover bacon or ham from breakfast, some chopped chicken from yesterday's dinner or some leftover carrots? Do not use anything too wet or in a sauce, else the dish will go mushy. Garlic, ginger, and salt are good seasonings and you can also add some chili powder to spice the dish up.

The recipe - Step by Step

This basic fried rice recipe can be modified, as you like. If you are going to add more ingredients to it, you should use three eggs instead of two. This recipe serves four to six population as a side dish. Feel free to add chili powder, ginger, garlic or anything else you fancy.

What you will need:

4 cups cold cooked rice 1 finely chopped green onion 4 tablespoons cooking oil 2 tablespoons oyster sauce or soy sauce Salt and pepper, to taste 2 eggs

How to make it:

Beat the eggs with some salt and pepper. Heat half the oil in a wok, and then add the eggs. Cook them, stirring all the time, until they are scrambled but still wet. Take out the eggs and wipe out the pan with paper towels.

Add the rest of the oil and stir fry the rice for a few minutes. Use a wooden spoon or a pair of chopsticks to stir the grains and isolate them. Stir in the oyster sauce or soy sauce, and then add the eggs back in the pan. Mix well and stir in the green onion. Adjust the seasonings and serve hot.

How to Cook Beet Leaves - Italian Style Recipe

This quick, easy and healthy dish provides a great way to use up those big green beet leaves which are often thrown out.   The leaves, like many green leafy vegetables are loaded with lots of vitamins and iron.  For those who struggle with anemia (low iron in the blood) this can really help.   It also helps to eat more leafy greens during a woman's premenstrual cycle because it adds iron in the body which helps compensate for the loss of iron which occurs.

To get started, all you need is 1 bunch of beet leaves, a few cloves of garlic, extra virgin olive oil and some water.

Simply take 1 bunch of beet leaves and wash very well.  Do not use any discolored leaves which can appear yellow.  You want the deep green leaves.  You can keep the stems too.
Chop the leaves and stems (the stems will be a little bitter so you do nott have to use them) and set aside.
Crush a few cloves of garlic and saute the garlic in extra virgin olive oil for about 3 minutes over medium heat in a pan large enough to hold the leaves.  Do not let the garlic burn, this will ruin the whole dish.
Next add the beet leaves along with some water.  The water will help create steam for cooking.   If you add too much water, just let it cook off.
Lower the heat to Low.
Cover and stir frequently until leaves are wilted and soft.   If you remove the leaves too soon, the leaves will be tough and hard to chew.
Add additional water as needed to prevent leaves from sticking to pan.
Serve warm.
This Italian dish can be served as a snack or as a nice side dish to a nice bowl of pasta, or even breaded chicken breasts with Italian seasonings. Enjoy!

Vegetarian Low Carb Diet

Most people do not realize it, but vegetables are a huge part of a wholesome low carb dieting plan. Most assume that those going low carb eat a lot of meat and that is about it. That is not the way it should go. That would be a very unhealthy diet indeed. Low carb is about eating protein and fats, and about selecting the wholesome carbs that your body needs and eliminating the ones that it does not. It can be hard, but there are some ways to go about a vegetarian diet. It is not as easy as the former way to doing Atkins, for example, but it can be done. Veggies play a major role in any wholesome low carb plan.

Most people join together vegetarian with health and well being. This is a good associating, but there are fullness of people out there that are vegetarians but are still overweight or obese. This is because they select to eat things that are high in sugar and other processed foods. They assume because they are not a meat product that they are okay. You can stop the insanity by adopting a vegetarian diet that puts the right foods in your mouth while helping you avoid the wrong ones. You'll feel and look best sooner than you may think.

Vegetarian Dishes

Because meats are a huge part of a low carb diet, many assume that a vegetarian low carb diet is out of the question. That is untrue, though it can be hard to do Atkins without eating meats early in the diet. There are other diets out there that can work though, so don't assume low carb is not for you. Instead, think of meat as protein, and then think about the foods that you can eat that have protein. These comprise tofu and beans, along with some other high protein foods suitable in the vegetarian lifestyle. Incorporate those instead of meats and you should be just fine.

You also have to have fats on a vegetarian diet. The protein is important, but the fats are foremost too. You should not eat all types of fat though, as you have to have the heart wholesome and non-animal based fats for your low carb diet. Find the oils that are suitable to you as a vegetarian, and then find the ones that are thought about to be heart wholesome oils. Use these liberally in your cooking and in your dishes. This can help you give the fat you need to your body. Don't be afraid of wholesome fats, your body needs them and will use them wisely on a low carb eating plan.

And of course, there are the vegetables. Most don't realize how foremost vegetables are on a low carb eating plan. The trick is eating the right vegetables. You can find the right ones by checking out which are bottom on the glycemic scale. These are the ones you want to have the most of each day. Others are higher and may play with your blood sugar more, so eat them less often and with fat. Otherwise, avoid white foods like sugar, flour, and potatoes, as those are bad for anything on a vegetarian low carb diet, or any diet for that matter.

Qabili Palau formula - A famous Afghan Dish

Qabili Palau is widely regarded as Afghanistan's national dish. It is best described as rice cooked in a broth-like sauce, then baked in an oven and topped with julienne carrots, raisins and chopped nuts. If meat is added, it's usually lamb, chicken or beef; the meat will be covered by the rice.

The most important step towards any good palau is the rice; use the best Basmati rice you can find, and don't be cheap about it. The rice should be cooked so that is neither dry nor wet: sticky rice is a big no-no. If you've spoiled the rice, it's good to make someone else batch than to continue; all the Afghan population will thank you for it.

Vegetarian Dishes

The Ingredients:

3 cups Basmati Rice
10 chicken pieces (drumsticks and top quantum of wings are great! Alternatively - used lamb)
2 yellow or brown onions, peeled and chopped
1/2 cup vegetable oil
1 cup chicken broth
2 small carrots
1 cup of raisins
2 tablespoons ground cumin
1.5 table spoons ground cardamom
1/2 teaspoon of black pepper
12 cups of water (estimate - use your judgment!)
Salt (according to your tastes)
Browning Sauce (this is optional - it's purely to make your sauce look more brown)

The Instructions:

Preheat the oven to 500 degrees.

Chop and saute some onions in a pan over high heat until the onion is a nice brown; this should take about 5-6 minutes. Don't burn the onions!

If the chicken pieces are too big, cut them into tiny pieces. However, if using drumsticks and wings, it's best to leave them as is there is nothing nicer than biting into a nice, juicy drumstick.
Add the chicken into the pan and sprinkle with kosher or sea salt (both of which supply a much good taste than quarterly table salt. Cook the chicken over medium-to-high heat for about 6 minutes, turning occasionally to get an even golden brown on all sides. At this point in time, the onions will start to caramelize nicely, and there will be a nice, thick sauce. Add about a quarter cup of chicken broth, then continue stirring until the liquid dries up, at which point put someone else quarter cup in again, and repeat until you've used all the chicken broth. This truly gives the chicken that extra flavor! Once the thick sauce is truly good and going, bring to a boil, cover with a lid, and let the whole thing simmer for around 10 minutes. Then, take off the chicken from the brown broth, and set aside (keep warm). Stir in the ground cumin (2 teaspoons), ground cardamom (1.5 teaspoons) and the crushed black pepper (0.5 teaspoon) into the broth and continue to cook on low heat for someone else 5 minutes. This allows the spices to get their flavor into the broth.

Immerse the rice wholly in a bowl of water, and drain in a colander. Repeat this step a few times, until the water that you're draining becomes clear.

Meanwhile, cook the rice in a dutch oven, or truly any sort of pot that has a fitted lid. This is where the 12 cups of water come in. Put some salt into the water before cooking the rice, so that your rice will just have that hint of saltiness to it when cooked. Cook the rice until it is just ever so slightly crunchy (nearly cooked), then strain any remaining water. Put the rice into a cooking pot, add the ready broth. Make sure the broth and the rice mix well and add the chicken pieces on top. Cover the pot with foil, and then with the lid.

Bake the rice for 20 minutes at 400 degrees.

Once you've put the rice into the oven, julienne the carrots, and do a quick stir-fry with them, along with raisins. You'll be putting them into the pot, but you want to be stir-frying them just enough so that they're slightly cooked, but do not overdo it, as you will be putting them into the pot, and let the cooking process unblemished in the oven. Set aside.

Once the 20 minutes have passed, take it out, and put the julienne carrots and raisins into the pot.

Reduce the oven's temperature down to 250 degrees, and let it cook for someone else 20 minutes.

Once that's done, take the pot out from the oven.

Arrange the chicken pieces on a large platter. Then cover it with the rice. Make sure that the carrots and raisins are evenly spread in the rice; you don't want them to be just piled all up in one spot (it's all about aesthetics!).

If you've spoiled the rice, it's better to make another batch than to continue; all the Afghan people will thank you for it.

The Ingredients:

3 cups Basmati Rice
10 chicken pieces (drumsticks and top portion of wings are great! Alternatively - used lamb)
2 yellow or brown onions, peeled and chopped
1/2 cup vegetable oil
1 cup chicken broth
2 small carrots
1 cup of raisins
2 tablespoons ground cumin
1.5 table spoons ground cardamom
1/2 teaspoon of black pepper
12 cups of water (estimate - use your judgment!)
Salt (according to your tastes)
Browning Sauce (this is optional - it's purely to make your sauce look more brown)

The Instructions:

Preheat the oven to 500 degrees.

Chop and saute some onions in a pan over high heat until the onion is a nice brown; this should take about 5-6 minutes. Don't burn the onions!

If the chicken pieces are too big, cut them into tiny pieces. However, if using drumsticks and wings, it's best to leave them as is there is nothing nicer than biting into a nice, juicy drumstick.

Add the chicken into the pan and sprinkle with kosher or sea salt (both of which provide a much better taste than regular table salt.
Cook the chicken over medium-to-high heat for about 6 minutes, turning occasionally to get an even golden brown on all sides.
At this point in time, the onions will start to caramelize nicely, and there will be a nice, thick sauce.
Add about a quarter cup of chicken broth, then continue stirring until the liquid dries up, at which point put another quarter cup in again, and repeat until you've used all the chicken broth.
This really gives the chicken that extra flavor! Once the thick sauce is truly good and going, bring to a boil, cover with a lid, and let the whole thing simmer for around 10 minutes. Then, remove the chicken from the brown broth, and set aside (keep warm).
Stir in the ground cumin (2 teaspoons), ground cardamom (1.5 teaspoons) and the crushed black pepper (0.5 teaspoon) into the broth and continue to cook on low heat for another 5 minutes.
This allows the spices to get their flavor into the broth.

Immerse the rice completely in a bowl of water, and drain in a colander. Repeat this step a few times, until the water that you're draining becomes clear.

Meanwhile, cook the rice in a dutch oven, or really any sort of pot that has a fitted lid. This is where the 12 cups of water come in. Put some salt into the water before cooking the rice, so that your rice will just have that hint of saltiness to it when cooked. Cook the rice until it is just ever so slightly crunchy (nearly cooked), then strain any remaining water. Put the rice into a cooking pot, add the prepared broth.

You'll be putting them into the pot, but you want to be stir-frying them just enough so that they're slightly cooked, but do not overdo it, as you will be putting them into the pot, and let the cooking process complete in the oven. Set aside.

Once the 20 minutes have passed, take it out, and put the julienne carrots and raisins into the pot.

Reduce the oven's temperature down to 250 degrees, and let it cook for another 20 minutes.

Once that's done, take the pot out from the oven.

Arrange the chicken pieces on a large platter. Then cover it with the rice. Make sure that the carrots and raisins are evenly spread in the rice; you don't want them to be just piled all up in one spot (it's all about aesthetics!).

Vegetarian Recipes - How to Make Raw Cashew Cheese

Raw Cashew Cheese

As discussed in an earlier article, soaking and re-hydrating nuts makes them easier on your digestive process. When you are making a raw food goods like cashew cheese, pre-soaking the nuts also makes them softer, allowing for easier blending in the food processor or Cuisinart. There is a bit of planning complex with this recipe, as the cheese must set up for a duration of colse to 24 hours before it is ready for eating. Prior to that, the nuts themselves must be allowed to soak for a duration of time in purified or distilled water. Make this cheese as a excellent snack or hors d'oeuvre for a party, just make sure to plan a integrate of days in advance. This shouldn't be carefully the "make it an hour before the guests arrive" kind of dish.

Vegetarian Dishes

For a method yield of about 1 ¼ cups of Raw Cashew Cheese, succeed these instructions. Reconsider doubling the method for a small party of ten or less guests; for a snack item for the week, make this whole and keep the cheese stored in the refrigerator.

Ingredients for making Raw Cashew Cheese

1 ½ cups raw cashews

1/3 cup water

2 teaspoons freshly squeezed lemon juice

2 cloves garlic

½ teaspoon sea salt

Put the cashews in a bowl and add sufficient cold, distilled water to cover the nuts by about two inches. Soak the cashews for colse to 2 hours, and then drain them.

Combine the cashews, 1/3 cup water, lemon juice, garlic cloves and sea salt in a food processor and blend them together. Be true to scrape down the sides of the blender. Continue to blend the combination for about 5 minutes, or until all of it is very smooth.

Place the cheese in a small bowl or Tupperware, and cover it, allowing it to stand at room climatic characteristic for in the middle of 24 and 48 hours, but not longer. After the 24 hours, refrigerate the cashew cheese until you are ready to eat it. The cheese will keep for not more than 5 days, if kept covered and refrigerated.

Using Eggplant & Zucchini

Eggplant and Zucchini on their own are healthy, nutritious vegetables, uncostly and versatile and can be used to put in order many mouth watering dishes, separately or together.

Eggplant and Zucchini make a lovely duo with their distinctive coloring of purple and green and to my knowledge, the best way to eat eggplant is by frying or grilling it; although zucchini can be eaten raw or in a salad. The estimate of dishes that can be made using Eggplant and zucchini are numerous. Eggplant is such a versatile vegetable that it can be cooked in many dissimilar ways. Whenever eggplant is in season, I make it a point to bring some home in order to make a very original formula which all my family loves.

Vegetarian Dishes

Zucchini is best when they are small unless you are planning to scoop and stuff it with a collection of fillings, after which it is baked or fried and cut into wheels. Otherwise, zucchini is generally boiled, grilled, baked or stuffed, but soft and squashy when cooked. Zucchini can also be used in many recipes,

There are so many ways in which you could use Eggplant & Zucchini in the same dish where it can be the main component of the dish or a part of it. Both vegetables are low in calories and fat and also not very costly. Vegetarians love them due to its inherent nourishment and low calorie levels

Eggplant when cooked in wedges becomes limp and soggy and that's the main presuppose why many cooks prefer to slice it thinly when using in their Eggplant and zucchini dishes. Another prominent fact to remember is that the Eggplant seeds tend to have a bitter taste and should be removed as much as inherent before being cooked.

There are a collection of dishes that can be prepared using eggplant and zucchini and to name some of them are: a red pepper stew or a layered casserole using both eggplant and zucchini together with tomatoes and cheese or a grilled eggplant and zucchini dish which is even more healthier since it is not fried, and grilling also removes the excess water and also adds a unique smoky flavor to the dish. A few more yummy dishes using eggplant and zucchini are those made with spaghetti or eggplant and zucchini with lasagna, all favorites and easy to prepare. Eggplant and zucchini dishes can be made ahead of the desired time and drizzled with a dressing of lemon juice or sprinkled with cheese just before serving or garnished with wedges of tomato to generate a burst of color at the supper table.

The benefits of eating eggplant and zucchini are numerous. It has many vitamins and proteins, and helps in the digestion of food and acts against heart disease while zucchini is said to help cure asthma and other diseases such as scurvy and multiple sclerosis. Therefore, using both eggplant and zucchini in a dish can not only provide you with a yummy meal, but also a nutritious one full of vitamins and minerals.

Whichever way you put in order the dish using Eggplant and Zucchini; it would surely be a hit especially with those who love veggies and is sure to impress your supper guests.

Vegetarian Slow Cooker Recipes - Crock Pot Ratatouille

The slow cooker is a very useful appliance, easy and convenient to use. Most meals cooked in the slow cooker are healthy and easy to prepare. You can prepare the meal early in the morning. You could also prepare it the night before and leave the dish in the refrigerator. In the morning just take the dish out of the refrigerator and place it in the main unit. Choose your temperature setting between low and high, and forget about it. Your supper will be ready by supper time. You do not need to check it continuously Every time you open the cooker lid, you prolong the cooking time by 25 minutes.

Once you finish supper, then the cleaning is very easy, specially if you have a unit with a removable dish. Do not ever submerge the heating unit. As you can see cooking in the crock pot is so easy that even your husband could do it.

I have found an easy and delicious vegetarian recipe here:

- 2 medium eggplants, peeled and chopped
- 2 green peppers, seeded and chopped
- 6 plum size tomatoes chopped
- 2 large zucchini sliced
- 2 small onion chopped
- 3 cloves pressed garlic
- 1/4 tsp red pepper flake
- 1 tsp basil
- 1 tsp oregano
- 1 6-oz can tomato paste
- salt and pepper to taste

Combine all ingredients, except tomato paste, in slow cooker. Pour the tomato paste on top and cover. Cooking time: 3-4 hours on high or 8-10 hours on low. You can serve it on brown rice or pasta rice.

Enjoy it!

When I did not have any children, cooking was not my priority, so I just got home from work and decided on what to eat for supper. Since having children, my days got shorter, and I am always looking for ways to simplify the cooking duties. I now enjoy cooking. My cooking time has been reduced and I can use my time more productively.

Spicy Grilled Vegetables - The ultimate Vegetarian Feast

If you are cooking for vegetarians, you will want to find a tasty vegetarian recipe. Serving up flavorful meat and fish dishes to the non-vegetarians and giving the vegetarians a boring plate of vegetables is not something that will be appreciated! You do not have to use tofu or someone else protein replacement, as long as you make an entertaining vegetarian method rather than a dull one.

Begin by following recipes for spicy sauces or marinades and then, once you become more used to development tasty grilled vegetables recipes, you will be able to generate your own flavorful dishes.

Vegetarian Dishes

A spicy grilled vegetables method is a good idea if you want to make something easy yet delicious, and do remember that "spicy" can mean subtly aromatic rather than fiery hot! If you are cooking for somebody whose palate you are customary with, you will already know either he or she enjoys hot and spicy food or just something with flavor. It is a good idea to find out for sure, before throwing in lots of chili peppers, especially if that is going to be the only vegetarian dish ready for the non-meat eaters!

Ways to Spice Up Grilled Fresh Vegetables

Flavored peppers are a nice way to add a spicy element to your grilled vegetables method and lemon pepper is especially flavorful. Mash two tablespoons of lemon pepper into quarter of a cup of melted butter and brush this combination over your vegetables before grilling them.

The butter will keep them juicy and the lemon pepper will add a spiciness as well as a hint of citrus. Serve these delicious lemon pepper grilled vegetables with Italian dressing drizzled over the top for a gourmet meal. This is also a tasty side dish for any carnivores and fish-eaters.

For a Middle Eastern flavor, try combining the freshness of snipped mint with the spiciness of turmeric. For an Indian taste, curry powder, mustard seeds, and cumin seeds work well. What about giving your vegetarian guests a Mexican meal to remember, by using fresh chilies and lime juice? You can either stick to one kind of cuisine or integrate distinct spicy ingredients for an entertaining fusion dish.

Using a Marinade for Extra Flavor

Rather than adding spices to the vegetables before cooking them, what about marinating them in a spicy sauce? You can double the marinade method and marinate some chicken, pork or beef in one half and the vegetables in the other half, so your vegetarian guests and non-vegetarian guests can all enjoy the tasty marinade.

Combine hot chilies with lime juice, dried herbs, and soak the vegetables in it overnight. If you are grilling a tough cut of beef, you can marinate that overnight too but do not marinate fish or tender steak overnight because it will go mushy.

Marinades are fun to make because you can be creative with them. Throw in any herbs or spices you fancy, as well as salt, sugar, lemon pepper, soy sauce or chopped fresh chilies. With a wee know-how, your vegetarian recipes can be just as mouthwatering as your meat and fish ones.
