Low Fat Pasta: Why and How to Make it.

Making your own pasta is not difficult. It's unmistakably very easy.

But you may wonder why would you make your own pasta, when you can buy it pre-packed, and ready to cook?

After that, you start mixing with your hands and knead it till all the flour is evenly incorporated into the dough.

Move the dough to a kitchen bench, and knead it for about 10 minutes, till it becomes flat and elastic.

Next, put the dough into a plastic (zip lock) bag and leave it there for about 30 minutes.

Then, take a quarter of the dough and roll it out by hand on a slightly floured surface. Roll it very thin. Leave it to rest and dry before using it.

Freeze whatever you don't use. It will remain good for up to 3 months.

You will be able to use this basic low fat pasta to make many of my tasty recipes.

If you are a pure non-vegetarian, you will probably raise a hue and cry at the thought of turning vegetarian! But the truth is that meat of any kind is tough on your smart cells. If Nature intended you to be a non-vegetarian, she would have adequate you with claws, and sharp pointed teeth to tear into any flesh; given you acidic saliva to suck in the animal protein; a round stomach with the capacity to furnish plentifulness of hydrochloric acid, fewer intestines to shorten the process of digesting the meat so that you could expel it before it putrefies inside; a liver that could dispel more uric acid than it does.

This way, at least you won't be overstraining your smart cells while satisfying your taste buds. Even a chicken cooked in an oil-less masata, however, has sufficient fat to knock your smart cells out and make you put on weight. So, cook your chicken curry the old day and refrigerate it overnight. The next afternoon skim the thick layer of fat that has coagulated on the surface and then heat it before serving. This way, at least, you are reducing your fat intake, Along with your non-vegetarian dish, pile your plate with plentifulness of vegetables so that you don't gorge on the meat alone. And eggs? They are not undoubtedly worth along with in your meals, for the yolk is high in fat and cholesterol. Which means that eating only the white albumen is best. In any case, they contain sufficient sulphur to strain your liver and kidneys. So, if you must. Have an egg only once in ten days so as not to 'eggsasperate' your taste buds!

My Wife Stopped Eating Dead Bodies

Some months ago my wife stopped eating dead bodies, She became a full time vegetarian and still is. This has had an affect on me. I'm like a vampire that has rationed its blood intake. I have reduced my meat consumption and now regard food in a different light than previously. Meat does not have to be the main course anymore. In fact, my food horizon has widened greatly. It didn't happen overnight. Frequently over the years my wife and I (married 35 years) discussed the rights and wrongs of eating other animals - basically eating dead flesh. As pet lovers we both agreed it was wrong for many reasons and could find nothing to really justify it. It was when we started getting more pets and even closer to understanding animal life that the message became clearer.  When you form strong friendships with other creatures you begin to realize they are the same as us in many ways.  It's especially apparent when you live close with them and they become part of the family, part of your life. You can reach a point where there is a spiritual link  between you. Killing is bad enough but to then eat the dead body? No, something's not quite right about that. I'm against the killing of all animals unless it's absolutely necessary and I think it won't be long now before I stop eating meat entirely. My lust for blood is gradually fading. Anyway, the meat nowadays is not so good. Not like the old days when it was natural and free range. Nowadays its caged, chemicalized, forced fed and doped-up with things to make it grow faster. We're probably better not eating it anyway. I've already started eating more vegetables and fruit. It's so easy to knock-up a veggie stir fry and some boiled rice or a pasta dish with a nice sauce. However I've found the dining out scene does not cater well for vegetarians. I think there's a lot more that could be done to create good and tasty meals for vegetarians. Chefs need to think outside the meat square. It would be good if they trained chefs to have a less meaty outlook. What do you think? Is eating dead bodies really right?

How to Make Vegetarian Shish Kabobs

It is always difficult to conclude what to give vegetarians when provocative them for a barbecue, as barbecues traditionally consist of meat. Vegetarian shish kabobs served on rice are the excellent and healthy answer to your vegetarian dilemma and makes for a lovely side dish to any barbecue.

Vegetarian Dishes

You Will Need:
* Zucchini
* Whole mushrooms
* Whole cherry tomatoes
* Eggplant
* Bell pepper
* Squash
* Whole pearl onions
* Pineapple (optional)
* Metal or bamboo shish kebob skewers
For a Mustard Basting Sauce for Your Vegetarian Shish Kabobs You Will Need:
* 1 1/2 Tablespoon mustard
* 1 1/2 Tablespoon white wine vinegar
* 10ml Olive oil
* Freshly ground black pepper
* Salt to taste

Step 1
Preheat your grill or oven. Wash all your vegetables and cut the bell pepper, eggplant, zucchini, squash and pineapple into more or less equal sized chunks. Be sure to leave the mushrooms, cherry tomatoes and pearl onions whole.

Step 2
Push your vegetable chunks onto the skewers alternating in the middle of the separate vegetables to make your vegetarian shish kabobs look attractive.

Step 3
In a small mixing bowl, whisk the ingredients for the mustard basting sauce together. Using a brush, brush half of the basting sauce over the kabobs.

Step 4
Place your vegetarian shish kabobs on the grill or in the oven and grill or bake for about 10 to 15 minutes. After 15 minutes turn the kabobs over, apply the rest of the basting and bake or grill for an extra 10 to 15 minutes.

Hints and Tips:

* Italian salad dressing makes for a yummy marinade for vegetables. Marinade the vegetables in the sauce overnight for the best results.
* It is always a good idea to parboil denser vegetables such as potatoes, zucchini, peppers and carrots before skewering them as you will run the risk of them not being fully cooked when grilling them on a gas grill.
* If you are going to use bamboo skewers for your kabobs be sure to soak them in water for about 1 hour before grilling to stop them from burning.
* When using metal skewers lightly oil or spray these with non-stick cooking spray before skewering the vegetables.
* If your vegetables keep on sliding around on our skewers use two skewers instead of one.
* Leave some space in the middle of the pieces to allow them to cook through.
* Do not put food with separate cooking times on the same skewer as this will cause some food to burn while the others will still be raw.
* If you are planning on not using a basting sauce when grilling your vegetarian shish kabobs, you will need to soak your vegetables in water for about 60 minutes to preclude them from becoming dry when you grill them.

Vegan Recipes for Thanksgiving

Thanksgiving is quite a tough time for vegetarians and vegans. The festival being all about a turkey and other symbols of satisfying indulgence, vegans certainly struggle for a comparable sign of convivial indulgence that could satisfy their senses in a plant-based way. First on our list of vegan recipes is a dish of vegan rolls. Take up a large bowl and pour in a half cup of warm water, two packets of active dry yeast, and a touch of sugar, and stir until everything's dissolved. In a few minutes, the yeast should make the whole composition a bit frothy, and that's what you're waiting for. Take out a saucepan, heat a cup of milk and 3 tablespoons of butter in it over low heat until everything is nice, melted and warm. Throw in the milk-yeast mixture, a teaspoon of salt, 4 cups of all-purpose flour and mix in and knead until everything is nicely blended.

Vegetarian Dishes

You'll need to knead that dough for about 10 minutes until it's nice, flat and can be worked with. As you knead, add in as much as quarter cup of flour if the dough keeps sticking to your hands. Leave the dough to rise for about 45 minutes. It'll probably kill you to do so once it's risen, but you'll need to flatten the dough a bit by hand to make it manageable. Roll it out into balls and place in a covered dish and leave to rise for an additional one 10 minutes. Roll each ball out on a greased sheet, apply a tiny melted butter all over, and with a pizza wheel, cut each in the shape of a triangle. Roll each triangle up, brush it with a bit of melted butter, sprinkle with sesame seeds, and lay out on a greased baking sheet to bake for 20 minutes at 400 degrees until everything is nice and golden brown.

Up next on our vegan recipes list is the vegetable letter. Take out five medium-sized bulbs fennel. Cut off the roots and the stalks, and quarter them. You'll need to do the same with eight medium-sized yellow onions too. Of course, you'll need to remember to peel the onions.Take out a large pan, throw in the fennel and the onions with 2 tablespoons of salad oil and three pinches of salt. Take out 3 pounds of medium-sized acorn squash, dice, and carve out the seeds. Borneo Highlands, Kuching, Sarawak Set Me on Cloud 9

The mist began rolling in, like soft cotton clouds, moderately enveloping the undulating greens of Borneo Highlands, 1,000 metres above sea level and within an hour's drive from Kuching City, Sarawak. Watching the rolling mists from the reception area, I felt like I was in other world, maybe floating on Cloud 9, at the Borneo Highlands Resort, which is nestled on a mountain plateau, surrounded by lush tropical rainforest and fresh highland air.

It is that time of the year where the business is on its each year stepping back for its staff at Borneo Highlands Resort, staying at the clubhouse. Our journey up Borneo Highlands began at the bottom. Due to the steep and winding climb, it was not advisable for inexperienced drivers and their cars to drive up or down Borneo Highlands because of the heavy damage that could occur to the brakes and gears. We wisely took the Borneo Highland Resort vehicle aid and it was other 20 minutes ride from the foothill to the top.

What a spectacular, relaxing sensation and I wished I did not have to move, least of all having to get up off the chair. Next was the outdoor scenery pool... Brrrr... The water was too cold for me. Fantasize being wet and in the cool wind... It was unthinkable.

Now, the hot tub was other matter entirely. The heat of the bubbling water and rising steam combined with a natural enclosed setting created a spectacular, feeling of luxury and indulgence. I would return to Borneo Highlands Resort for this alone, and the massage chairs.

That evening, at the Annah Rais Café, we tucked in to evening meal consisting of any deliciously prepared vegetarian dishes. In case you are wondering, Borneo Highlands Resort only served vegetarian and meatless cuisines, very healthy and healthy choices. After dinner, some of us took a unhurried wander around the resort, stopping by the Swan Lake to watch the black and white swans gracefully glide on the lake face among a backdrop of rich green foliage.

Borneo Highlands is also a unique golf resort featuring the Hornbill Golf Course, popular with avid golfers who would like to pit their skills against the unique golf procedure make of Borneo Highlands Resort, set on a mountain plateau with slopping hills and surrounded by tropical rainforest. I was very keen to get a ride on the golf buggy though, but unfortunately no golfer was keen to let me have a joy ride.

The next day was not a fun-filled day because it was a day filled with discussions and workshops on our company's time to come plans, directions and goals. The meeting rooms and facilities were favorably located within the Borneo Highlands Resort, and the quiet and peaceful environment did help to facilitate our dialogue sessions and enhance our gift of ideas, but personally, it was still not much fun. By the end of the day, we were mentally exhausted, but a shower and a round of the massage chairs helped to invigorate my body and spirit.

On our third and last day, I visited the flower nursery. It was fascinating to see the rows and rows of flowers, from seedlings to full grown plants, with blooms of every colours, nodding their heads, saying enjoy your stay at Borneo Highlands! There were dissimilar species of roses, chrysanthemum, daisy, amaryllis and azaleas, some of which were planted in pots for sale, but I did not get any. Ordinarily flowers or plants that thrive in cooler atmosphere would not appreciate being transplanted to a warmer climate, and their sass would be to probably whither and die. I decided to be kind to them and let them live longer.

We left Borneo Highlands in the late morning, heading back to Kuching City and taking with us spectacular, memories of our stepping back in the highlands. Next time, I am going to try the spectacular, jungle spa at the Borneo Highlands Resort.

This book does not in any manner avow to be Hindu religious sacred epistle. No, in fact it is quite a scientific revelation into life and human beings in totality. It is a slim book of 122 pages and the ones I am referring to are from page 77 to page 87.

Page 77 has these two headings - "What is natural living?" and "What is natural food for man?" As you read on you learn the most easy and realistic basics about human beings. All things is laid bare in its truest form about our natural cravings, our indispensable formation, our constitution and physique and the various parts of our body and their primary function.

The facts is real and yet so easy that it hits you with a jolt. You may wonder - 'why did I not understand this before?' Take for instance the first heading - "What is natural living?" has the following as talk - "Living depends upon the option of (1) food, (2) dwelling, and (3) company." Unfortunately as I dug in, my fork seemed to get stuck in this thick "goo" that was similar to mending putty. The vegetables were slightly cooked, if not raw, and the sauce was assuredly right out of a jar. Soon after, I realized that this was nothing more then a "frozen entree", that was probably purchased at a local store. Who said vegetarian dishes had to be fresh.

Well anyway I left quite discouraged, but carefully to do more investigate on vegan dining, and cooking. This time I view I might go the "library" route, and see if I could find some great vegetarian formula books. After all, they say a photograph is worth a thousand words.

Cover the dried shrimp with hot water for 30 minutes. Drain. Chop into the consistency of coarse bread crumbs.





Rinse the Sichuan preserved vegetables with cold water to wash off the brine and salt; chop into the same texture as the shrimp. In a hot wok add the oil and heat to 375F. Deep fry the beans in two or three batches for 2 to 3 minutes or until they look wrinkled, blistered and khaki color.





Remove all but 1 tablespoon of the oil from the wok. Reheat the wok over high heat. Add the ginger and garlic; stir-fry for 15 seconds. Add the pork, preserved mustard, dried shrimp; stir-fry for 1 minute longer. Poke and break up the clumps of pork so that it looks crumbled. Add the green onion, sugar, white pepper and soy sauce; toss together to blend.





Return the reserved green beans, chicken stock and sesame oil; toss vigorously over high heat until all liquids are reduced and absorbed, about 2 to 3 minutes. Serve hot or at room temperature.





It's one of those fairly ubiquitous dishes that you can almost always order in a North American Chinese restaurant, though as usual, the quality varies from place to place. Below is my own attempt at doing this from scratch after trying a so-so ready mix (Maggi brand, no less). The recipe is modified from stuff I found using google, with the chilli thrown in "for effect" (I'm Singaporean after all). Works fairly well, but I'm still open to further modifications. Take a deep pot and heat oil into that. Put the onion, garlic, coriander, carrots plus mushrooms in the pot and cook on medium heat. You can add dried herbs, barley and vegetable broth. Bring them to the boil and simmer for 20 minutes until barley becomes soft.

Your vegan mushroom barley soup is ready to be served.

How to Make the Tasty Indian Vegetarian Dish - Aloo Palak

I love this Indian vegetarian dish! It's easy to make, cheap and good for you! So, get doing it!

You will need the following ingredients:

Vegetarian Dishes

300g spinach
2 Cloves of garlic
1 Tablespoon of grated, fresh ginger
2 chopped onions
200g potatoes, peeled and cubed
1 Teaspoon Turmeric
4 Tablespoon of ghee or butter
1 Teaspoon of Cumin seeds
1 Teaspoon of garam masala
½ Teaspoon of ground coriander
½ Teaspoon of ground cumin
2 green chillies (Deseeded if you prefer milder food.)

1. Cook the spinach in boiling water. Mash the spinach and place in pan with a slight oil and add garlic, ginger, chillies and onions, fry on a low heat.

2. At the same time, boil the potatoes with turmeric and a slight salt to taste.

3. Heat ghee or butter in pan, fry the cumin seeds and add the spinach/onion paste.

4. Add the above concoction to the potatoes and hock in the garam masala, coriander and cumin. Add a slight water if requisite and boil for five to ten minutes.

Serve with naan bread or rice for a excellent meal for two. On it's own it makes a nice side accompaniment for a party of four. But if you need it for more people, just growth the amounts of ingredients and away you go!

So, pretty easy for a tasty dish, oh by the way garam masala is a hot paste consisting of a blend of ground spices common in Indian cuisines. You will find it in many large supermarkets and of policy in speciality shops.

Chives for garnish

Preheat oven to 425 degrees F. In a heavy roasting pan, join asparagus, leeks, olive oil, slat and pepper. Mix to combine.

Roast, stirring occasionally, for 30 to 35 minutes or until leeks are golden brown & asparagus are tender.

Transfer the vegetables to a blender and add the broth. Process until thoroughly pureed, taste to adjust seasonings.

Pour soup into shot glasses & embellishment with chives if desired.

Waldorf Salad Recipe

3-4 Granny Smith Apples
2 Celery stalks, thinly sliced
4 oz. Walnut pieces or pecans chopped
Mixed greens if desired
French vinaigrette dressing

Cut a few slices of apple with the skin on for embellishment and then peel and core the rest of the apple and cut into thin strips. Toss the apple slices in lemon juice to preclude apples from turning brown.

Add the chopped celery, apple slices, nuts and mixed greens and toss with French vinaigrette.

French Vinaigrette Dressing Recipe

2 tbs. Dijon mustard
2 tbs champagne vinegar
6 tbs. Extra-virgin olive oil
Salt and fresh ground pepper to taste

Mix ingredients in a cruet and serve with salad.
