Healthy Food Tastes Better!

How is it that we can't seem to think that something nutritious and healthy could in fact be tasty and enjoyable? Ever since I started to eat healthy food I have discovered new tastes, new flavours and new favourites. I do it almost daily. When I stopped looking at meat as the main ingredient of a meal I found a hundred new ways to prepare a good meal. I did not exclude meat completely, only the kinds that contain saturated fat. I continued to eat chicken, turkey and fish. (Chicken has its fat in the skin, so you can cut it off.) I eat vegetarian dishes at least three days a week, and the veg food has become my favourite food. Why? Because it tastes so good and the food is so easy to vary. I can't think of a life without it anymore. It would be a poor life. This food is a treasury and it has given me energy and strength that I did not have before.

The benefits are plenty. You will feel spry and lively again. You will lose weight. You will strengthen your immune system and stay well longer. You will lower your blood pressure. I could go on.

I am a notorious tea drinker, and I loved all kinds of black teas. The taste of green tea didn't appeal to me, I found it bitter. But I discovered several kinds of green tea that I have learned to enjoy and I now drink it every day. It's actually become "my cup of tea".

This is what I would suggest that you do if you want to improve your eating habits:

o Reduce the fat, especially the saturated fat, which is mostly found in meat and dairy products. Exchange the butter and margarine with extra-virgin olive oil. Avoid oils with high percentage of saturated and polyunsaturated fat. Use oils which contain mostly monounsaturated fat. Using the right kinds of fat (with moderation) is more important than reducing the fat in general. Instead of milk you may want to drink yogurt (containing live cultures) which is better for the stomach.

o Eat fish at least twice a week. If you don't like fish, make sure you get enough of the omega-3 fatty acids. One way to do this is by eating flax seed.

o Eat lots of fresh fruits, vegetables, beans, cereals and whole grain.

o Make the vegetables the main part of the meal. Rice, pasta, potatoes or couscous and beans are priority number two. Eat fish, chicken or a small slice of meat with it if you like, but it is not necessary. You will feel better if you exclude the meat and spare yourself the saturated fat.

o Eat soy products regularly (e.g. tofu, tempeh, and miso, or vegetarian beefs made of soy beans). There have been discussions about soy and its health risks, but the benefits seem to be greater than these supposed risks.

o Drink water with every meal and in between meals. You can't get enough of water.

o Use fresh ginger (the root) and garlic in your cooking. Goes well with nearly everything.

o Use fresh and dried herbs in all cooking.

o Reduce the coffee. Preferably switch to green tea. If you drink black tea, replace it partly or completely with green tea.

o Reduce the sugar. Don't use artificial sweeteners. They are not healthier. There is no evidence to suggest that using artificial sweeteners would help you lose weight. Pure sugar is OK (raw sugar is slightly better than white), just use it with moderation. Read package labels for information about sweeteners and other additives.

o Take some vitamin and mineral supplement every day.

o Sweets should be consumed with moderation. Only a few small sweets in the weekend. Dark chocolate is good (but still with moderation because of the sugar). Nuts can be an alternative to sweets (still with moderation).

o Alcohol should be used with moderation if at all. A glass of wine on Saturday evening does no harm if you are not oversensitive.

o Choose ecologically or organically grown products whenever possible.

o Try a day of fasting from time to time to rinse your system. Drink only fruit juices, water and green tea that day.

This plan will lead to a healthier and more fulfilling lifestyle. It will make you lose weight without having to be hungry. Take one step at a time. A small change can make a big difference. You will be rewarded if you are determined to really try.

When you follow the advice above you will not need much meat. Protein can be added through beans, soy and seeds for instance. If you exclude the dairy products or some of them, make sure you get enough calcium through for instance calcium fortified soy milk and orange juice, and through green vegetables. If you exclude meat completely, be sure to get enough vitamin B12 from fortified soy milks or cereals or by taking a supplement.

Of course, you can have that little special treat now and then. The idea is to enjoy and have fun! If you feel like a prisoner you will not enjoy your new habits. But remember, if special treats come too often, they are not special treats anymore.

Different Ways to Cook Eggplant

As a vegetable, eggplant does not necessarily have the best reputation. But this is not due to the eggplant itself, this is because of the way it is frequently prepared. Breaded and fried, then layered with greasy cheese, eggplant suddenly becomes a caloric nightmare. Eggplant itself is not high in calories, however. It is actually made up of 92% water and therefore contains only about 14 calories per half cup on its own. It is also a good source of fiber, calcium, and potassium. So eggplant is a great choice to include on your dinner plate, and there are many healthy and delicious ways to prepare it.

First, before preparing your eggplant dish, take care to select your desired type of eggplant. At your local grocery store or farmers' market, you may find Japanese White Eggs, which are small and white; Thai eggplants, which are a small green variety of Kermit eggplant; and Black Beauty eggplants, which are the large, glossy and dark purple variety that we most commonly see today. As with all vegetables, I highly recommend growing your own, since this is the best way to insure that they are healthy, fresh, and free of chemical pesticides and herbicides. The variety that I have grown successfully and enjoy most is an Italian heirloom variety called the Rosa Bianca eggplant. Whereas Black Beauty eggplants sometimes tend to have bitter flesh, the Rosa Bianca has a mild flavor that is not bitter, and a very nice meaty flesh. It works well as a meat substitute in vegetarian dishes, and is excellent in the following recipes.

Vegetarian Dishes

Eggplant Parmesan
In traditional eggplant parmesan, the eggplant is fried, which fills it with grease and negates its traditional value. Instead of frying the eggplant, try broiling it. Cut the eggplant into ½ inch slices, coat them with breadcrumbs, spray the slices with cooking spray, then broil them in the oven for 5minutes on each side. Serve the eggplant slices with marinara sauce and a slice of low-fat mozzarella cheese on top.

"Poor Man's Caviar"
An entire eggplant can be baked inside your oven, then split open and served with toast points or crackers, a dish known as Poor Man's Caviar. Simply wash the eggplant, cut off the stem and ends, and slice the whole thing in half length-wise. Brush the cut sides of the eggplant with olive oil, then sprinkle them with garlic, cilantro, lemon juice and/or basil. Bake the eggplant halves for 30-40 minutes (or until the flesh is nice and tender) at 400 degrees F.

Indian Style Eggplant
This dish is seasoned with coriander, a fragrant spice frequently used in Indian cooking. To make it, you will need 2 and ½ pounds of eggplant, 2/3 of a cup of clarified butter, 1 cup of chopped white onions, 4 large tomatoes, chopped, and 4 teaspoons of crushed coriander seeds. To begin, preheat your oven to 325 degrees F. Cut the eggplants in half, brush the cut sides with olive oil, and bake them for about 30 minutes, or until the flesh becomes soft. Remove them from the oven, and use a spoon to scoop the flesh from the peel and into a bowl. (Or, if you prefer, you can leave the peel on.) Mash the eggplant flesh with a potato masher. Set the bowl of mashed eggplant aside. Next, heat the clarified butter in a skillet over medium heat. Saute the onions for about 5 minutes, until the are translucent. Stir in the chopped tomatoes and the eggplant. Cook, stirring frequently, until most of the liquid has evaporated. Remove the skillet from the heat, and sprinkle the dish with coriander.

Grilled Eggplant
Eggplant makes a great addition to shish kebabs when cut into chunks. You can also place ½ inch slices directly on the grill rack. Brush on a little bit of olive oil to keep them from sticking, season them with salt and pepper, and grill them over direct heat until they are tender. It should only take about 3 minutes or so per side. These eggplant slices are excellent on top of couscous, or on a sandwich with Focaccia bread, goat cheese, and some fresh tomato and spinach.

Eggplant Lasagna
Thinly slice an eggplant lengthwise. Then use these slices as a substitute for noodles in your favorite lasagna recipe.

Ratatouille
Ratatouille is a classic hearty and filling eggplant dish. To make it, you will need 2 tablespoons of olive oil, 3 cloves of minced garlic, 2 teaspoons of dried parsley, 1 eggplant that has been cut into cubes, 1 cup of grated parmesan cheese, 2 sliced zucchini, 1 sliced onion, 2 cups of sliced mushrooms, 1 sliced green bell pepper, and 2 large tomatoes, chopped. Begin by greasing a casserole dish with 1 tablespoon of the olive oil and preheating your oven to 350 degrees F. Place the remaining 1 tablespoon of oil in a skillet and heat in over medium heat. Saute the garlic for 2 minutes, then add in the eggplant and parsley. Allow these to cook, stirring frequently, for 10 minutes. Remove the sautéed eggplant from the stovetop, and season it to taste with salt. Then spoon the seasoned eggplant evenly into the casserole dish. Sprinkle parmesan cheese over the eggplant. Arrange the zucchini slices on top of the eggplant, and add another layer of parmesan. Follow with the onion, mushrooms, bell pepper, and tomatoes. Top it all off with the remaining parmesan cheese. Bake for 45 minutes, and enjoy.

Full-Flavor Vegetarian Dishes

Finding tasty new vegetarian recipes is certainly no easy task. Whether you adhere to a strict vegetarian diet, are testing the waters, or simply fancy a meal without meat, it can be quite a challenge to find a vegetarian-friendly dish that is bursting with flavor. Yet, I have four recipes here for you that are heavy in the taste department and are sure to leave your tummy happy!

Vegetarian Spaghetti

Vegetarian Dishes

1 lb spaghetti noodles
2 (8 oz) cans tomato puree sauce
1 cup broccoli florets
1 can corn (drained)
1 cup sliced carrots
1 cup sliced mushrooms

1. Cook the noodles as usual by boiling a large pot of lightly salted water. Add the noodles and let them cook until translucent and soft. Drain well.

2. In a saucepan, mix together the broccoli, mushrooms, corn, carrots, and tomato puree sauce. Set to a medium heat and cook for about 15 - 20 minutes, stirring occasionally.

3. To serve, scoop noodles onto a plate and top with a generous serving of sauce.

Mediterranean Salad with Chickpeas

chickpeas drained and rinsed
1 (15 oz) can garbanzo beans
1 roma (plum) tomato, seeded and diced
2 tbsp olive oil
1 lemon, juiced
1 small clove garlic, minced
1/2 medium green bell pepper, diced
1 small onion, finely chopped
1 tbsp chopped fresh parsley

1. Mix together all ingredients in a bowl. Cover with lid or plastic wrap and chill until time to serve.

Spinach Omelet

2 eggs
1/8 tsp ground nutmeg
1/4 tsp onion powder
1 cup chopped spinach leaves
1 1/2 tbsp grated parmesan cheese
Salt and pepper (to taste)

1. In a small bowl, whisk the eggs, then add the spinach and parmesan. Add nutmeg, onion powder, salt, and pepper. Mix well.

2. Coat a small frying pan with cooking spray or olive oil and bring to medium heat. Pour the egg mixture in and allow it to cook for about 3 minutes. By this time, it should have started to set up. Turn over and allow the other side to cook for another 3 minutes. Reduce to a low heat and cook until done.

Black Beans and Rice

1 cup instant rice (white, preferably)
1 tbsp vegetable oil
1 can stewed tomatoes
1 can black beans (do not drain)
1/2 tsp garlic powder
1/2 tsp oregano

1. Sauté onion with oil in a large sauce pan. Don't let the onion brown. Throw in the beans, tomatoes, garlic powder, and oregano. Bring to a boil. Stir in the rice and allow to boil again. Reduce heat to a low setting, cover, and allow to simmer.

2. After about 5 minutes, remove the pan from the heat and let it sit for about 5 minutes. Serve and enjoy!

Common Hindi Phrases While Visiting an Indian Restaurant

If you are planning on going to India anytime soon, you are probably going to want to eat. Learning how to order food at a restaurant is prerequisite to this. The phrases on this page will get you started with great phrases and sentences to use in an Indian restaurant.

Asking Questions
You might be befuddled by the menu, so never hesitate in asking some basic questions from the waiter.

Yeh kya hai? - What is this?
....... kitna hai? - How much is......?
Kitna kharch aayega? - How much does it cost?

Ordering
Once seated, waiter will wait for your order. You can use these simple phrases for ordering.
Main chahonga.... - I would like
Kya aapke paas.. - Do you have...?
Main loonga...... - I will take.....

When you are done ordering, waiter can ask anything else: "kuch aur chahiye?" You can just end it by saying no, "nahi".

The Food
Ask for "samosas", "pakodras", "bhel puri", "kababs (any kind)" if you want light lunch items or appetizers.

Recipe Ideas For Clay Baker Cookware

Autumn Vegetable Tian

Vegetarian Dishes

5 medium fresh tomatoes, cored, sliced about ¼ inch thick 2 large sweet peppers, can be green, red, yellow or any combination 1 teaspoon crushed red pepper (or less if you prefer) 4 cloves garlic, thinly sliced ¼ cup fresh basil leaves, chopped 1 teaspoon salt 1 large eggplant or 3-4 small ones, sliced about 1/4 inch thick 3-4 small zucchini or summer squash, sliced about 1/4 inch thick 3 medium onions, peeled, sliced about 1/4 inch thick

Cut the peppers in half and remove core, stem, ribs, and seeds. Now cut these into julienne strips.

Begin by soaking your clay baker. Use a baker which is approximately the size of a 9 x 13 pan. Lay one layer of sliced onions to cover the bottom of the pan. On top of the onions, lay out the julienned peppers, sprinkle the sliced garlic and the red pepper.

Now begin layering the remaining vegetables on top of the above in this fashion: Down the long side of the pan, place one row of sliced tomatoes, taking care to overlap each slice by about two-thirds which each successive slice.

Next to the row of tomatoes, place a layer of eggplant, again overlapping the slices by about two-thirds, and also overlapping the tomato slices in the same way. Repeat this overlapping row arrangement, row by colorful row, using up the zucchini and /or summer squash.

Sprinkle chopped basil on top and drizzle with a little extra virgin olive oil, if desired.

Cover the tian and bake at 450 degrees for about 45 minutes. The time will vary, and may take longer depending upon the amount and thickness of the vegetable slices.

Your vegetable tian will be bursting with flavor and will be an exotic presentation of colors at the table. Use your creativity to experiment with mushrooms or other vegetables to develop your own personal favorite medley. You will be certain that this is a dish your family and friends will yearn for!

Pineapple For Coronary Heart Disease

Pineapple is not a single fruit but a bunch of seedless fruits fused together under a common stem. The world relishes pineapple as a fresh fruit and the best flavor is achieved by allowing the fruit to mature on the plant before harvesting. Once a pineapple is picked it will not ripen further nor will it increase its sweetness but kept at room temperature it will decrease its acidity. The starch in the fruit's sword like leaves converts to sugar and passes it on to the fruits. On removing the fruit from plant this sweetness link is severed.

A good deal of pineapple is marketed as packed slices, chunks, and finally the juice. Canned pineapples loses about a third of its vitamin C content and the brome lain is completely lost while processing. However, Brome lain tablets / capsules are available as dietary supplement. Discovered in 1957 brome lain is a group of proteolytic enzymes. It is extracted from the plant stem and believed to be a natural blood thinner and therefore ideal to combat heart disease, arthiritis and other illnesses. Brome lain is recommended in the treatment of sinusitis and wound healing. It is an anti-inflammatory agent and is equally helpful in burns and sports injuries. In fact it helps in muscle aches, joint pains and sprains by blocking the production of compounds that cause swelling and pin.

Pineapple is used in a variety of dishes and its global presence can be seen in Indian chutneys, Indonesian rice, Latin American flan, etc. Pineapple comes packed with vitamins A, C and bits of B. it is a good source of natural sugar and is 85 percent water. It is low in fact and cholesterol but high in fibre and minerals like potassium and sodium. However, the fruit is best known for its protein digesting enzyme, brome lain. Columbus was equally impressed by its medicinal practices in vogue - healing wounds sustained in battles, a digestive drink, especially after heavy feasts rich in non vegetarian dishes. Women used it as a cleansing agent. Caribbean youths were required to run barefoot on the pineapple plantings to demonstrate their daring machismo.

Today the proteolytic enzyme is extracted from the stem and put to various uses in the foot steps of ancient practices. It reduces risk of coronary heart disease as it inhibits clot formation and breaks down the plaque build up in the arteries. Brome lain reduces pain, swellings, rheumatoid artiritis, joint inflammations. It serves as a digestive enzyme, heals gastric ulcers and acts as an appetite suppressant; it aids the absorption of drugs and enhances the access of various antibiotics. Brome lain helps clear bronchial conditions and provides relief in sinusitis and headache. It is effective in swellings, pains, burns and wounds and this leads to cosmetic use of breaking down the dead layers of skin and promoting the softer inner layers. The juice is an ideal ingredient in various skin care products. Brome lain is ideal for removing warts and the natives of Guadeloupe used the juice concentrate to remove body hair. The enzyme is so powerful that plantation workers are required to wear gloves or else they risk their hands being eaten away.

Besides medicinal benefits, brome lain makes an excellent marinade, tenderizes meat, helps preserve bakery items, chill proofs beer, recovers silver from photographic and X-ray film. The outside peel and the central core of the pineapple is recycled and used for cattle feed and vinegar. Pineapple leaves yield a strong white silky fiber used in creating a semi transparent fabric in the Philippines. It is usually embroidered and used as a table cloth. The Chinese mix straw and bamboo to the pineapple leaf fibers to create paper suited for their paintings.

Prefer pineapples that are slightly soft with crisp green leaves and an appealing aroma. It should be heavy for its size. Usually yellow pineapples indicate that they were allowed to ripen longer. A really ripe fruit can also be ascertained by its leaves that can be easily pulled out from the top. However, colour is no indication in the long list of pineapple varieties. All About Thai Curry

When people hear the words "Thai Curry", the first thing that comes to their mind is some spicy coconut milk with curry paste. This is not totally true. Thais say "Kaeng" which means "Curry". However, Kaeng in Thailand does not only mean curry, but it means the cooking process of mixing various kinds of vegetables with liquid like water or coconut milk. It can be spicy or non-spicy or a vegetarian or non-vegetarian dish like soup, stew, curry or even dessert. I will use the word "Kaeng" throughout this article. In Thailand, there are 2 types of Kaeng: Kaeng Jued and Kaeng Ped. Ped literally means spicy and Jued means tasteless. Kaeng Jued usually refers to non-spicy soup
dishes.

Kaeng Jued

Kaeng Jued dishes are usually comprise of broth, vegetables and meat. Homemade broth is preferred over bouillon cubes. Broth is made from boiling pork ribs or chicken bones in water for a long period of time. You will often hear Thais say "nam soup" which means broth. To make broth, the bones should have a little bit of meat and fat left on them. On low heat, boil meat in water. Once the boil begins, reduce heat to its lowest point so that the broth just barely simmers. The longer the simmering, the more flavor you will get. One and a half to two hours usually is enough to extract flavors from meats. Before using broth, straining is a must. In Thai cooking, some recipes would add Chinese cellery or white radish during the simmering to add more sweetness to the broth.

The clear broth then will be used in a different kind of Kaeng Jued. A common way to make Kaeng Jued is to 1) bring broth to boil 2) add meat, 3) add vegetables and 4) add flavor. Example Kaeng Jued dishes are:


Kaeng Jued Fak: chicken/pork broth with winter melon
Kaeng Jued Mara: chicken/pork broth with bitter melon
Kaeng Jued Mara Yat Sai: chicken/pork broth with stuffed bitter melon
Kaeng Jued Pla Muek Yat Sai: chicken/pork broth with stuffed squid
Kaeng Jued Taeng Gwa: chicken/pork broth with cucumber
Kaeng Jued Taeng Gwa Yat Sai: chicken/pork broth with stuffed cucumber
Kaeng Jued Tao Hu: chicken/pork broth with bean curd
Kaeng Jued Wun Sen: chicken/pork broth with clear noodles

Kaeng Ped

Most Kaeng Ped dishes differ in degree of spiciness. Some are very spicy and some are mild. Some have coconut milk and some do not. Kaeng Ped can be categorized into 6 different types: Kaeng Ped, Kaeng Khua, Kaeng Liang, Kaeng Som, Tom Yum and Pad Ped.

1) Kaeng Ped

It can be confusing that Kaeng Ped is a subcategory of Kaeng Ped. There are 2 distinct types of Kaeng Ped: Kaeng Ped with coconut milk and Keang Ped without coconut milk. The key to a delicious Kaeng Ped is curry paste. Either homemade or commercial curry paste must be finely ground. Fish sauce and sugar are the two main ingredients to flavor Kaeng Ped dishes.

Examples of water-based curry dishes are:


Kaeng Hang Le: Northern style curry with meat, curry powder, lemongrass, ginger, shallots, shrimp paste, chilies and peanuts
Kaeng Pa: jungle curry, Northen curry. This curry is hot and full of flavor from fingerroot, kaffir lime zest, lemon grass, garlic, shallots, shrimp paste and chilies
Kaeng Leung: hot yellow curry, most common meat used is fish. Other ingredients are winter melon, chilies, garlic, turmeric, lemon grass, shallots and shrimp paste.

Examples of coconut-based curry dishes are:


Kaeng Daeng: red curry with meat, bamboo shoots, Thai sweet basil, kaffir lime leaves and coconut milk
Kaeng Kari: Indian style curry with meat, potatoes and coconut milk
Kaeng Kiaw Waan: a slightly sweet green curry with meat, Thai eggplants, pea eggplants, winter melon, Thai sweet basil (Bai Horapa), kaffir lime leaves and coconut milk
Kaeng Matsaman: curry with meat, potatoes, peanuts and coconut milk (a mild curry from the Muslim Southern part of Thailand)

2) Kaeng Khua

Kaeng Khua curry paste makes this curry dish distinct and different from Kaeng Ped dishes. Kaeng Khua curry paste has either deep-fried fish, grilled fish or dried small shrimp as part of its ingredients. Most Kaeng Khua will not have added spices because of its strong aroma. The typical flavors of this curry are sweet, sour and salty. The most common meat is fish, shrimp or clam. Main added ingredients typically used in this curry can be pineapple, mushrooms or winter melon. Other ingredients are galangal, kaffir lime zest, dried chilies, lemon grass and shrimp paste.

Some people might confuse Kaeng Khua and Kaeng Pa because they look similar and both are coconut-based curry. However, both use different curry paste and Kaeng Pa mostly has only a salty taste.

3) Kaeng Liang

Many say Kaeng Liang is Thai vegetarian curry. The main ingredients of this curry are vegetables, usually there is no meat. Some recipes may add chicken or shrimp. However, if we look at Kaeng Liang curry paste, this dish is not vegetarian. Part of Kaeng Liang curry paste is dried shrimp paste (ka pi), dried shrimp and deep-fried fish or grilled fish. This curry is a water-based curry that is quite thick. The most common vegetables are sponge gourd (buab liam), gourd leaves (bai tam leung), "hairy" basil (bai Maeng Luk) and baby corn.

4) Kaeng Som

Kaeng Som is a water-based curry that in flavor combines sour, saltiness and a little sweetness. The common meat used in this curry is fish or shrimp. Some recipes use clams. Common vegetables are morning glory (phak bueng), bottle gourd (phak nam tao), water mimosa (phak kra ched), Vegetable Humming Bird (dok kae), cabbage (kra lum plee) and juice-based tamarind. Other ingredients are shrimp paste, dried shrimp and shallots. The famous Kaeng Som is Kaeng Som Pla Chon Phak Kra Ched which has striped snakehead (pla chon) and water mimosa (phak kra ched) as main ingredients.

5) Tom Yum

Tom Yum is a hot and sour soup. Tom Yum soup dishes have lots of herbs and meat as the main ingredients. Few vegetables are used in Tom Yum soup, although usually included are oyster mushrooms or straw mushrooms. Common herbs used in Tom Yum soup are kaffir lime leaves, lemon grass, chilies and coriander roots. The common meats used in Tom Yum soup are chicken, shrimp and fish. The ingredients used in flavoring Tom Yum are lemon juice, tamarind juice, sugar and fish sauce.

Tom Yum soup can also be categorized into 2 different types: coconut-based Tom Yum soup and water/broth-based Tom Yum soup. Examples of Tom Yum soup dishes are:


Tom Kha Gai: coconut-based hot and sour soup with chicken
Tom Kha Pla Duk: coconut-based hot and sour soup with catfish
Tom Kha Ta Le: coconut-based hot and sour soup with seafood
Tom Yum Gai: water/broth-based hot and sour soup with chicken
Tom Yum Goong: water/broth-based hot and sour soup with prawn
Tom Yum Hua Pla: water/broth-based hot and sour soup with fish head
Tom Yam Moo Pa: water/broth-based hot and sour soup with boar

6) Pad Ped

Pad Ped is similar to Kaeng Ped; however, Pad Ped dishes use less coconut milk or water than Kaeng Ped. Thus Pad Ped is more like a stir-fried dried curry paste dish with meat and vegetables. Example vegetables are Thai eggplants, yard long beans, bamboo shoots and pea eggplants. Two main ingredients used in flavoring Pad Ped dishes are fish sauce and sugar. Example dishes are:


Pad Ped Moo Tao Fak Yao: stir-fried red curry paste with pork and yard long beans
Pad Ped Pla Duk: stir-fried catfish with chili paste
Phanaeng Gai: stir-fried phanaeng curry paste with chicken and kaffir lime leaves
Phanaeng Moo: stir-fried phanaeng curry paste with pork and kaffir lime leaves
Phanaeng Nuea: stir-fried phanaeng curry paste with beef and kaffir lime leaves

The example dishes listed above are famous dishes in Thailand. Of course, there are more dishes than I can name here. "Kaeng" has more than just the one meaning of spicy curry like many believe about Thai curry. Thais even use the word "Kaeng" in desserts like Kaeng Buat. Kaeng Buat is a dessert that has pumpkin, taro and/or potatoes in coconut milk. Most Thai restaurants in the U.S offer coconut-based Kaeng Ped, Pad Ped and Tom Yum soup. If not, you may not be as happy with your weight loss as a whole.

7. Bake for not more than 20 minutes.

8. Garnish with coriander leaves and serve hot.

Culture of Kerala

The first dish which i have included is a delicious cheese soup.. Personally I feel this is the best cheese soup in the world and that is the reason I wanted to share with you. In preparing cheese soup, you will need ½ cup carrots, ½ cup onion, ¼ cup celery, 5 tbsp butter, 2/3 cup flour, 3 cup milk, 1 can vegetable broth and 1 lb American cheese.

While cooking the cheese soup, you need to cook carrots, celery and onion in butter until they are softened. Mix the flour and vegetable broth. Cook them until thick. You need to add the cheese and milk and again cook on low-medium heat for few minutes. In just 10 minutes, your cheese soup will be ready.

The second vegetarian dish which you can prepare is baked potato with baked beans. In the preparation of the recipe, you will need 4 baked potatoes, ½ cup cheese, 1 cup baked beans, ½ cup mozzarella cheese plus ½ cup scallions.

Cut the baked potatoes into two equal halves. Spread beans along with cheese on each and every potato half. Spread scallions over the spreaded beans and cheese. Bake them for 5-10 minutes until the cheese melts. Serve the dish with a side salad.

Thirdly I am taking the traditional Italian main dish, Whole wheat vegetarian lasagne, where I have done some variations to make it little healthy.

For making the lasagne, the things you will need are 18 ounce package whole wheat lasagne noodles, 19 ounce package frozen raw spinach, ½ cup parmesan cheese, 3 cups low-fat cottage cheese, 3 cups pasta sauce, and 3 cups skimmed mozzarella cheese.

Combine parmesan and cottage cheese in a bowl. Take the baking dish and put one layer of vaguely cooked lasagne noodles. Add the half spinach evenly over the noodles while pressing it softly. Again put one more layer of lasagne noodles. This time you need to top the noodles with cottage cheese mixture along with the remaining spinach. Add the last layer of lasagne noodles on top of the spinach. Spread pasta evenly over the top and add mozzarella cheese.

Cover the baking dish with tin foil and bake the dish for nearly one hour and thirty minutes.

Although the dish is full with cheese, it gives nourishment also. One serving of lasagne offers 373 calories, 35g protein and 3 g fiber along with 110 mg cholesterol and 671 mg sodium.

Vegetarian Starter Recipes For Dinner Parties

Cooking for vegetarians can be a bit of a challenge if you are used to cooking meat, poultry and fish but it is possible to make delicious vegetarian starter recipes. You might like to make a vegetarian pate, using mushrooms, cheese or other ingredients instead of meat. Another option is to make baked eggs or mini quiches.

Cheesy Vegetarian Pate

To make an easy pear and stilton pate, beat 225g cream cheese and 170g grated stilton cheese with a tablespoon of dry white wine and some salt and black pepper.

Shape this mixture into a roll and wrap it in plastic wrap. Chill it in the fridge for a couple of hours. Slice three ripe pears and dip them in the juice of one lemon to stop them turning brown.

Arrange the pear slices and pate on a platter and garnish with walnut halves and watercress. You can serve any kind of crackers you like with this.

Baked Eggs with Tarragon

What about making tarragon baked eggs? Tarragon is often used in chicken recipes but its aniseed-like flavour is also good with egg dishes. You can serve this with crusty bread or garlic bread.

Grease four ramekins with melted butter and stir together a tablespoon of finely chopped tarragon, four tablespoons of cream and a little salt and black pepper. Break an egg into each ramekin and spoon the tarragon mixture over the top. Bake for seven minutes (or until the eggs are set) at 180 degrees C.

Quick Leek Nicoise

This is a great starter recipe idea for a dinner party. Cut eight leeks into five centimetre lengths and put them in a pan. Add 120ml olive oil, 300ml water, a teaspoon of white sugar and a tablespoon of tomato puree.

Season with salt and black pepper and cook covered for fifteen minutes or until the leeks are soft. Add some lemon juice and serve the leeks hot with some chopped fresh parsley and a handful of small black olives.

Vegetarian soups are just as simple. If you cook some lentils, carrots and onions for about 15 minutes you can whizz the whole thing in a food processor to make soup. Season to taste and stir a spoonful of yogurt or creme fraiche into each dish as you serve it. A sprinkling of chopped coriander or parsley adds a special touch.

A pea soup is even easier. Cook some frozen peas in boiling water with a sprig of mint. When they are cooked put them in the food processor. Season to taste and serve. A slice of wholemeal bread makes a satisfying vegetarian lunch.

Another one pot stand by is risotto. A mushroom risotto makes a quick and easy vegetarian supper. Arborio rice cooks in about 10 minutes and it will take about the same to chop up some onions, garlic and mushrooms.

Stir fry is a great vegetarian stand by. The great advantage of this kind of cooking is that you can adapt it to whatever vegetables you have available. If you have some tofu in the store cupboard it is easy to make a vegetarian stir fry. Mushrooms also make a good vegetarian stir fry.

A stir fry is not quite a one pot dish because you will need to cook some rice or noodles to go with it. But noodles are very easy and only take about 10 minutes or less.

Cooking brown rice can be a slow business which puts many people off using it. But the best way to make this essential vegetarian food easy is to invest in an electric rice. cooker. Your rice will be done perfectly every time and become the basis of many easy vegetarian meals.

Thanksgiving Vegetarian Cooking

Don't panic! There's plenty of time before thanksgiving, seven days to be exact. It's just a dinner for, you know the whole lot: parents, grand parents, in-laws, picky toddlers and the teenagers who live on French-fries and insist that they do eat vegetables. I brought this upon myself.

You know how it is yearly, during the holidays when the table is divided into categories and sub-categories? Oh no. I'm not talking about appetizer, soup and the main course. I'm talking about the likes of: no dairy for such and such, no sugar for the diabetics, no vegetables for the teenage punks, no gluten for the allergic and no meat for us, the vegetarians. You see, throughout the year during family get-togethers we're all sitting on the same table but eating something completely different from each other. So I said, "Okay. I'm hosting Thanksgiving dinner this year and I'm going to make sure we all eat the same thing."

I'm determined to take on this task with an upbeat optimism. Oh Google show me some love!

It really isn't hard to prepare healthy dinners or vegetarian meals. The World Wide Web is full of answers. Thanksgiving vegetarian recipes are available. The beauty of preparing a vegetarian menu is that it caters to the allergic (think wheat allergy), to the diabetic (sugar free sweet potato pie, oh yeah it's possible with coconut sugar!) These healthy recipes will surprise you because they do measure up with standard recipes. They taste as sweet and flavorful and the texture won't give it away that what you're eating is the healthy version.

Pumpkins, potatoes, sweet potatoes abound during this month thus the pilgrims also prepared dishes out of these. Of course, nothing beats a dish that is made from fresh and organic vegetables! Choose recipes with simple steps and easy to follow instructions so that you will not be distracted, going to and fro YouTube and Google as to how exactly it is done (chiffonade anyone?). I am happy to share quick and easy recipes in case you fall out of time with the other dishes, I can whip something up to help fill up the menu. Try to stay away from canned vegetables. After all, Thanksgiving is a celebration of bountiful fresh produce from Mother Earth.

In looking for these thanksgiving vegetarian recipes, I've kept in mind the aging loved ones, low-cholesterol dishes. I've also included a high protein healthy meal for the general crowd, finger foods that can be healthy snacks for kids and vegan pumpkin pies for everyone and no one has to know. Sssshhh!

I'm going to make sure that this healthy dinner will be a memorable family Thanksgiving. Bring the goodness of Mother Earth to your table with your Thanksgiving vegetarian dishes and let this be a beginning of a new tradition. Making tradition out of healthy eating.

Sitar Indian Cuisine - Traditional Yet Modern

"Traditional Indian cuisine with a modern touch," is an apt motto for Sitar Indian Cuisine on Colorado Boulevard in the Playhouse District.

"It's just simple, natural cooking, with traditional values," says owner/general manager Aman Kamboj. The modern touches come from the zen-like music played throughout the restaurant, the warm decor and their full bar complete with mango martinis, Indian wines and beers.

Vegetarian Dishes

Their menu is derived from Punjab cuisine with influences from Southern India. Tandoori, lamb, chicken and seafood specialties share space on the menu with many vegetarian dishes.

I chose the Sitar Special with samosas, tandoori chicken, lamb boti kabab, chicken korma,vegetable aloo gobhi, basmati rice, garlic naan and rice pudding. My companion indulged in his favorite dish of lamb biryani.

A word about spice. It is a common misconception that all Indian food is hot-spicy. This is not so. The heat comes from a few ingredients that make up the whole and can be controlled in the final cooking of the dish. Since Sitar makes all their food when ordered they can control the amount of spiciness to your taste.

"So our food might take a little longer to come out, but at the end of the day it's fairly gourmet. And so we have the luxury, depending on the guest's palette, to make it mild, medium or spicy," adds Aman.

I opted for medium, my spice-impaired companion had it mild.

The tandoori chicken was tender with the smoky taste of the tandoori oven that mingled with the yogurt-spice marinade. Lamb morsels also cooked in the tandoori oven, were touched by a marinade of herbs and spices.

The chicken korma which is a creamy sauce garnished with almonds and cashews, was light and delicate.

Fresh vegetables studded the aloo gobhi which was sautéed with ginger, tomatoes and spices. I'll eat my vegetables anytime they are cooked like this.

The lamb biryani, which is a Mogul dish, had tender pieces of marinated lamb in bastmati rice that was flavored with saffron and studded with nuts, raisins, onions and bell peppers. A hint of heat added to the appeal of this dish.

Sitar also has banquet facilities for 250 people next door to the restaurant, conference rooms above the restaurant and their very own parking. Currently they provide conference support for many of the larger companies around town. And if it's a celebration you're after, Sitar can provide it at a lower cost than the hotels. That's because they have so many services available to them like the lighting, DJs, live music, and florists. "I want you to come happy and leave happier," says Aman.
